Good morning, all:

I had a clean day of P2 yesterday, and it paid off. I am down 1.1 today after a day of no loss. I am losing inches, though. This makes me happy!

another good recipe i found looking for that vinegrette recipe

Kung Pao Chicken

# 100g chicken - cut into chunks
# chopped onion (allowed amount)
# 1-2 t sambal oelek
# red pepper flakes (optional)

Marinade
# 1 part liquid aminos
# 1 part apple cider vinegar

Seasoning
Mash together in small bowl:
# 3 cloves minced garlic
# 1-2 t fresh minced ginger root

Sauce
Stir together in small bowl:
# 1/2 c broth
# 1-2 t liquid aminos
# 1 t rice vinegar


1. In small dish, combine marinade & chicken.
2. Refrigerate 30 mins - 1 hour.
3. Preheat non-stick pan over MED-HI heat.
4. Cook chicken 5-7 mins, browning on all sides.
5. Add sambal oelek. Cook 1-3 additional mins.
6. Remove chicken from pan and set aside.
7. Add onion to pan and cook until tender.
8. Stir seasoning mixture in with onions. Cook 1-3 mins.
9. Add sauce mixture to pan. Cook 1-3 mins.
10. Re-add chicken to pan. Stir. Cook 1-3 mins.
11. Top with a few dashes of red pepper flakes (optional).
12. Serve.


TIP: This dish is also delicious with shrimp.

Enough chicken broth to cover the bottom of the small skillet and I use Weber roasted herb and garlic seasoning(or you could just use 2-3 minced garlic cloves). Quick, easy, and yummy. Oh and a couple of big handfuls of spinach.

Chouter, great release. Very rarely will I release a pound or more overnight.

CTG! Nice loss girlfriend! I only lost 0.4 pounds last night, but I am 129.6 so I am calling GOAL! Stopped my drops after my dose this morning. SO STINKIN' EXCITED!


DONE DONE DONE and I can't believe how fast this worked.

I notice that the majority of you seem to lose about 20-30 pounds each round. That means that I will need to ATLEAST 3 rounds. :blush: Will I be pushing my limits with immunity?

BTW...I ordered my drops (Thanks Mindfulness)!!!

I had my fave P2 lunch today. I use a bag of shredded cabbage and saute it in water...YES...water! I brown my portion of ground chicken and mix that in with the cabbage. Add spices and hot sauce and voila! YUM! Filling and delish! My co-workers wanted the recipe...

Isn't that always the way?!

I get tickled because we have all sorts of yummy snacks in my house right now that my DD (she's 2 1/2) could snack on....bananas, puddings, yogurt, Nilla wafers, Pop Tarts, Doritos... You name it. What does she want to eat? My grissini, of all things!!!! I had to go buy another box the other day because she has eaten as many as I have!

I do the same but with extra lean ground beef. I brown the hamburger, and the cabbage and water and simmer til cabbage is soft and water is absorbed. I use garlic and hot sauce for flavor.

I havent ever seen shredded cabbage. Is this with the lettuce in a bag? Any particular store carry this? How many cups of cabbage in a bag. I would love to make this.

Well, the way I look at it, she has the rest of her life to worry about weight and sugar and what's good and what's bad for her. You're only little once, so she should be able to enjoy some of the tasty treats now without having all the worries associated with them. I make sure my daughter eats healthy, so the occasional treat isn't going to hurt her.

Yes, I think I used Jimmy Dean breakfast sausage. It is sooooo good, M will love, love, love it!!! You should make the pumpkin bake too

We just finished off a pumpkin pie from another thread. I will have to check out the pumpkin bake and compare ingrediants, M made the pie and it was awesome.

Believe me I wasn't attacking. I have poptarts sitting in my kitchen right now, my 28 year old loves them, but I'd still be tickled if he chose the grissini over the poptart.

That happened to me last Thanksgiving AND Christmas when I brought Atkins friendly casserole and a pumpkin bake. They went FIRST. I was like...HEY...you guys can eat all the other crap...I am trying to stay on plan here.

Thanks for the recipe. I will make this to take with me this year. I get requests for my low carb dishes all the time. Cracks me up.

This is beyond good. I double it and bake it in a round spring form pan and then frost with REAL whipped cream. Definitely a P3 approved dessert. YUM!
I hate that I am in P2 and talking about P3 foods ALREADY.

JODY'S PUMPKIN BAKE
8 ounces cream cheese, softened
5 eggs
1/2 cup granular Splenda or equivalent liquid Splenda
15 ounce can pumpkin
1/2 tablespoon pumpkin pie spice
1 teaspoon cinnamon

Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.

Makes 4-6 servings
