P3 Lunch Ideas for BUSY Work days

Hey everyone,

I start P3 on Tuesday (can't wait shave with shaving cream, slather myself up in coconut oil and do my finger & toe nails) and believe I will be heading back to work Saturday. I work in healthcare, usually a critical care area. Twelve hour shifts with a 45 minute drive each way......there are many days I don't have time for even a bathroom break but others maybe 15-20 minutes broken up through out the day as I chart that I could sit and maybe eat?

I'm looking for ideas for lunches or something I could quickly shove in my mouth and go......I know people say its important to keep fat high and so far the only thing I'm coming up with is maybe making up and freezing some omelettes to take and maybe eat here and there through out the day?

Previous to this I would use work days (three a week) as intermittent fasting days and wouldn't eat until I got home from work about 8pm and then start over the next day......I'm not sure how well I would stabilize doing this so I'm looking for ideas......I do plan to eat something on my drive as my breakfast but lunch I'm feeling stumped since time is a major issue usually!

Funny, my daughter and I were just talking about this. She's starting Atkins and needed lunch ideas. Just a few ideas
Deviled Eggs
Egg Salad
Beef Jerky
Lunch Meat Wrapped Around Thin Slices of Cheese

Good luck on P3! Can't wait to hear how you stabilize!!

When I have to take my lunch/dinner to work I usually bring:

egg salad
tuna fish salad
chicken salad--love this with bacon, pickles, and Duke's mayo!!! yummy!
Fage with strawberries
lettuce salad with chicken, real dressing, and pecan pieces for crunch!!
Larabar--not the best option, but when you have a real busy morning it eats nothing! and can be kept in my pocket for biting when between drink making.

P3 is much more portable and more flavorful than P2 ever was!! Enjoy!!

I pack DH's lunch everyday. There are so many P3 options.

Grilled chicken or steak strips (both are good cold)
Veggies with dip (sour cream, ranch or make your own veggie cream cheese dip) I like broccoli, cucumber, cauliflower, cherry tomatoes, and celery)
boiled eggs
string cheese
Greek yogurt with blueberries, strawberries, peachs, etc...
fruit with cream cheese dip (sweetened with stevia of course)
unsweetened apple sauce
chicken/tuna/egg salad (you can bring lettuce leaves to wrap it in)
cut up cantaloupe
Wrap up bacon and tomato in lettuce leaves and wrap in foil for a breadless BLT
cream cheese muffins

The possibilities are endless!

Veggie cream cheese dip:
Put veggies of your choice into food processor with 1 block of cream cheese and seasoning and process. That's it. I like cream cheese, 1 cucumber, 1 red bell pepper, 1 jalapeno pepper, italian seasonings, garlic and onion powder, and cayenne(if I want it spicier) Yum! I always keep this in the fridge. It's great for dipping all veggies as well as hamburger patties and grilled chicken and helps to up the fat.
