I've had it 2-3 times now on P2 and it's a nice change. Once I made it with dried onion flakes and it was awesome - lots of pepper too!

They are yummy - oh but you might want to use a touch of water or chicken broth in the pan first so they don't stick too bad when you are scrambling them because we cannot have oil or butter in P2.
i really want to try eggs, but the water thing really turns me off. lol.

I haven't made them with water. I made them the first 2 times with nothing but a non-stick pan and it wasn't that bad, just kept scraping them with a plastic spatula. The last time I used a tiny bit of chicken broth and it evaporated and absorbed it so well that the eggs were perfect and fluffy. Try it! Mine weren't watery at all and I like my scrambled eggs well done. I think I have a picture of them on my blog in my siggy.

I like using the eggs because it's cheap and I'm poor! lol. Each time I make them I add something new. Today I had them with garlic salt and Italian seasoning and it was very tasty. It just happened that the spice fell out when I reached for the garlic, but I went with it. I've also made it with parsley too. I've been thinking about adding some vegetables to it and make an omelete, but I just haven't yet.

I believe that you can make eggs in the microwave. Then you wouldn't need to worry about the sticking.

Hi wanted to chime in here. I looked through the recipe thread and was very careful about what to try and what not to. Also, I've done the eggs w/water and it is not bad. I have also done Whey pancakes and they are soo good. Got that from another site. I can not wait for P3 to start so I can eat both the pancakes and the eggs together. I want to try some of the other in that thread that are P3 safe as well.

I ate my eggs poached (it's like a single egg yolk with tons of white) topped with Frank's hot sauce. Great if you like a soft yolk.
