Dawn's Loading menu

I wanted to post what I loaded with so others can get some ideas for loading. I started my load days for my 5th round yesterday. This is what I ate yesterday:

Breakfast: 2 eggs with 2 TBL cream cheese; 2 slices bacon; 1 almond flour muffin brushed with melted butter and topped with Dark Chocolate spread (from World Market). 2 TBL coconut oil

Lunch: 1 whole container of full fat Fage--46 grams of fat!!! I mixed it with 4 pkts of Splenda, strawberries, and a mixture of Special dark chocolate chips and macadamia nuts.

Snack: 1 Reese's cup after school and then after dinner I had a campfire blast shake from Sonic

Dinner: chicken wing dip served with tortilla chips; Starbucks signature hot chocolate ice cream and 1 Starbucks brownie.

Beverages: 11 oz coconut water, 2 cups coffee with half and half and sweetener and cocoa powder, 1 cup of iced coffee with half and half.

Believe it or not I was so full from this food. The Hhcg works so quickly!!! I will post my 2nd loading days food tomorrow!!

Everything sounds so good! I'm planning lasagna for my next load. It's the one food I truly miss. And garlic bread. And cake and pie. :blush:

Since you started this I'll throw in what I loaded with over the weekend.

B - 2 large slices of homemade zucchini bread with butter., coffee w/ cream.

Sn - Homemade salsa with tortilla chips, watermellon and cantalope

lunch - Grilled cheese sandwich with bacon

Dinner - 16oz rib eye, bake potato w/bttr and SC, corn on the cob with garlic butter

Desert - dump cake with whip cream

Day 2

Breakfast - WW toast with butter and bacon

Lunch - chicken fingers with honey mustard and mac and cheese

Dinner - Ribs, home made SW Beans, summer squash in butter, salad with blue cheese, corn bread

Desert - Dump Cake with Whip Cream

Holy Cow, What a Pig LOL

DUMP CAKE


1 (16-ounce) can crushed pineapple
1 (21-ounce) can cherry pie filling
1 (18.25-ounce) package yellow cake mix

Preheat oven to 350°F. Grease well a 13 x 9 x 2-inch pan.

Dump pineapple (including juice) into the prepared pan; spread evenly.

Dump cherry pie filling over pineapple, spreading evenly.

Dump yellow cake mix over the top, spreading evenly.

Cut cold butter into 1/4-inch slices and arrange over the top. Sprinkle with nuts.

Bake in preheated oven until a toothpick inserted into the center of the cake comes out clean (about 40 minutes).

About 10 servings.

Looks good!! I am jealous

I will be loading again for R2 in mid Sept over my b-day weekend. I am going to go to this new Italian restaurant and have the most decadent pasta dish they have and some kind of Italian dessert (maybe tiramasu or canolli). And I'm hitting the Cheesecake Factory for lunch or dinner that same weekend. And no guilt!!

This may be yuk to some, but to me it was YUMMO! As I prepared my chic breasts for P2 I took the skin off and fried it up in a pan w/ seasoning until crisp! I ate that during loading and portioned out the meat for freezing. No waste and YUM!

Can you share your recipe for the almond flour muffin? Also, what do you do with the coconut oil..? Just eat it by the spoonful?

Here is my second day's menu:

Breakfast #1: Kit Kat bar; 1 VitaMuffin VitaTop deep chocolate muffin top.

Breakfast #2: 2 slices Bacon Swiss quiche--from LindaSue's site

Lunch: 2 almond flour muffins topped with melted butter and macadamia nut butter

Snacks: 1 Klondike double chocolate bar; 5 Oreos after the kids got home from school; throughout the day---handfuls of macadamia nuts and Special Dark chocolate chips; M&Ms.

Dinner: LindaSue's White Castle hamburger pie; Pilsbury lava brownie

Beverages: 2 cups of coffee with cream; 1 venti cup of iced coffee; 11 oz of coconut water.

Exercise: The Firm basics fat burning workout--45 mins of weights; walk the dog for 20 mins

Sure I can find the recipe!! Until then I will share that I just eat coconut oil by the spoon. I have tried the whole eating it in things and I don't like it that way!

P3--almond four muffins
Ingredients:
2 cups almond flour (almond meal)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, melted
4 eggs
1/3 cup water
Sweetener to taste -- about 1/3 cup usually works well -- liquid preferred
Preparation:
1) Preheat oven to 350 F.

2) Butter a muffin tin. You can really do it with any size, but I'm basing the recipe on a 12-muffin tin.

3) Mix dry ingredients together well.

4) Add wet ingredients and mix thoroughly (You don't want strings of egg white in there and you don't have to worry about "tunnels" when you are using almond meal).

5) Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes.

Variations: Add 1 cup fresh or frozen blueberries for blueberry muffins. For apricot muffins, take a teaspoon of sugar-free apricot jam on each muffin and push it in slightly (it will sink more during baking).

Nutritional Information: Each of 12 muffins has 1.5 grams effective carbohydrate plus 2 grams fiber, 6 grams protein, and 185 calories.

After doing this 4 times now--my 5th was yesterday!!--I darn well better know how to load. I really just dread being hungry. After spending an entire round hungry it is not fun, not fun at all.

You guessed right--VLCD #1 today. And my hope is to get this 10 pounds off that I gained while loading (at least it feels like it was 10 pounds!!) in the next 2-3 days. That is not too much to ask for is it????? Hey, I gained it this quick it needs to leave this quick too!!

Just wanted to add....I had all these grandiose ideas for loading. Made cream cheese muffins that I didn't even touch, didn't get in ANY coconut oil yesterday. And at dinner I just wanted a salad as that is what I miss the most on P2--the ability to mix veggies and have regular dressing. I just didn't want to get sick last night and NOT be able to sleep. Last night was rough but it was better than my last round's last load day. While on the Hhcg I just don't sleep through the night anymore. So I wish I could have fit more food in.

I can't imagine eating coconut oil by the spoon though.. I think I'd rather eat butter by the spoon

Man.. I cannot wait for P3. 9 more days.. then I can have bacon and a darn minute muffin that I've been craving for 2 weeks now.

I have liquid splenda that I bought like 9 year ago!! I got it in powder form and I reconstitute it myself. I bought it on clearance as the seller was told to stop selling it by the FDA as it was not allowed to be sold here in the US. But I am sure you can use granular if you have it!

Oh gosh, forgot about how much I adore Vitamuffintops! I so want some of those Costco has them now in the deep chocolate but I love their variety pack. I just saw that Netrition has the mixes. Hmm.. I do like the indy wrapping but the Netrition price sure rocks At the grocery store here they are 6.59 for 4 vitatops and there are only a few flavors to choose from I would understand it if I was getting them from a bakery but in the frozen foods? Costco has the chocolate fudge for under 10 bucks for a dozen Not my favorite flavor but a nice deal. My neighbor buys them all the time and keeps trying to give me some since she's seen my loss and I just tell her that I'm not eating that stuff right now.

The only reason I bought it was for P4 AND they were buy one get one free at the Publix. I never pay full price for much these days!!!

Here goes mine...am including both days:
potato chips and dip
fish fillet/french fries
coc oil treat with choc and raspberries
chips/salsa/queso
crack slaw
pizza
mac-n-cheese & fried mac-n-cheese with dip
WINE

I'm able to eat way more than last time...stomach seems to be healthier. Next time I'll skip the McD's. Tasted like cardboard.

BTW, if you add in frozen raspberries or strawberries one by one to your warm chocolate coconut oil...WOW, it gets a nice hard coat and is so fun to eat!
