For lunch I am having chicken soup cooked with celery and bay leaves, sea salt. YUM! I also had strawberries topped with a little cinnamon, stevia and a wasa fiber cracker over the top. It was surprisingly good!

Kristina, that sounds yummy. I'm having a 'where did the day go?' day. I just had my first meal and decided to make it steak since it's a little heavier than my eggs I had planned. I may just have my eggs later with some mustard. I'm just not hungry and now that I'm having my meal I'm getting fuller and fuller I am loving grilling too. I haven't grilled this much ever in my lifetime It's great and so easy and it really makes the food taste so good.

I haven't been grilling! Why did I forget that?! I LOVE grilled food!

Actually, eggs are beginning to sound good and filling! I was thinking about making a celery soup...seems like I can eat a lot of celery and it's ok. A soup with a bit of milk and garlic salt...that would be very low in cals and I could still have grilled steak or chicken and an apple crumble (apples, cinnamon butter flavored extract, sea salt melba toast or oatmeal wasa cracker on top). Is it my imagination or does this meal sound HUGE!? I really haven't been very hungry at all, but I think this sounds very tasty. Is anything mentioned here not ok?

I think your meal sounds lovely I bet you could even simmer the soup and then blend it for a thicker type soup? You could also have that with ground beef and doctor up your ground beef with some chopped celery for bulk and add a little of your apple (shredded) to add moisture to the beef. That would make an awesome first day kind of meal. I like the idea of looking at plenty of food whether I want to eat it or not so I tend to go heavy on the veggie side of things and I've done fine. I think if it looks skimpy to me I have a negative response to it so that's why I like it and have been enjoying dressing up my food on pretty plates and glassware. Somehow it makes it more special and upscale to me when I don't feel like I can easily dine out I know that might sound weird but it keeps me going

Not weird at all! I love the same things and it has really made me slow down and enjoy my food more! The idea of blending it so it's thick and "creamy" sounds great!

What do you use as a marinade?

So far mine things are boring, fish with pepper & lemon with boiled radish or steamed asparagus or grilled chicken over romaine or with cucumbers.......

I posted the marinade recipe in the recipe sticky at the top of the page. Let me find it and I'll post it here for you but do go and spend some time on the thread. Lots of fabulous suggestions to mix things up!

Here's todays menu for R1P2VLCD28:
Grilled chicken breast, grilled asparagus and sliced apple
Chili with strawberry faux margarita

My burger was, eh, just ok. I think I put in too much onion powder, but they held together well on the GF grill. I dipped it on Spicy Brown mustard too, which is SO not my favorite.

I marinated some apple slices in lemon juice, cinnamon and Splenda. Mmmm, those were good!

Today will be P2 chili and cucumber for lunch. Not sure about dinner yet.

I bought some cottage cheese to try with cocoa and splenda for tomorrow's lunch. I bought unsweetened Ghiradelli cocoa. Mmmmm...

My favorite cocoa is the Hershey's Special Dark. Sometimes I have to travel to 3 or 4 different stores just to find it, but yum!!! Lunch tomorrow sounds fantastic! Share how much of the splenda and cocoa you put in it, please!!?? I know that when I made Biz's spinach shake/smoothie I used more sweetener than she did. The ratio was 1 TBL of cocoa and 2 pkts sweetener to 3 oz cottage cheese--is that what you will use too? Enjoy today!!

TBF, the George Foreman grill put a nice crisp on both sides (I flipped it because the top browns better than the bottom.

Yeah. It turns the most gross color ever, but not a hint of spinach in the taste. It is amazing!! And the way that Biz writes about it/you tubes it you can have a total of 2 a day AND have another meal besides!!! Loved it while in P2!! Again, something I wish I had found out about BEFORE my 4th round!!

I'd like to see the video too. I MISS my green smoothies. Yes, the color is ugly (now I actually like the color) but no, you cannot taste it.

I make them for my kids everyday. It's the only way for them to get their veggies. They won't eat them otherwise and the smoothies are sooo yummy!

For those of you eating burgers, my first week I ventured into making sliders with cucumber buns. They were fabulous. Just roll your burger meat out super thin, make into rounds and cut your cucumbers to match the shape. I used a little cookie cutter and I got like 10 little mini cucumber burger sliders. I just topped the burgers with some mustard and they were tasty. I had them with cucumber salad and strawberries if my memory serves me right. Try them that way. If nothing else, I was entertained making them and they looked fun.

Today is R1P2VLCD29:
Shrimp sauteed with spinach and strawberries
Grilled steak, cucumber salad and strawberries
