I'm R1P2VLCD25 and here's todays menu:

1 egg, 3 whites, spinach with garlic, sliced apple
Grilled steak in marinade, chopped cucumber in vinegar, strawberries

Plenty of water, iced tea and 2 club sodas

I put mine in a pan with a little bit of water. Just enough so it wouldn't stick. Then I added Franks Hot Sauce. YUMMM!

This will be my first time making eggs. CTG got me interested in them the other day so I bought some to add into my menu. I'm thinking of just sauteeing my spinach in water and garlic first, then just as the water is about evaporated, add in the whisked up eggs and make it like a frittata. CTR, I'll be serving this on an oval diner looking plate

I buy mock filet mignons that are made of chuck steak? it's super lean and inexpensive (like 4.19 a pound so a buck a steak is pretty cheap!) and once they are marinaded they melt in my mouth. I swear they are every bit as tasty as any steak I've eaten. They will be a staple in my house from now on. I ate them for a week last week Steaks are served on a pewter platter, naturally

Check out the recipe thread. THere is a recipe for deviled eggs in there that looks good. It's on one of the first couple of pages (or just search the thread)

What's everyone's take on mustard? Safe?

Ingredients are: Distilled vinegar, water, #1 grade mustard seed, salt, tumeric, paprika, spice, natural flavors (hmm) and garlic powder.

It's the little Frech's brand packets.

Nice choice of dinnerware. I approve!

I'm going to have to find those steaks today. All of a sudden I am really tired of my meals.

Franks has not hindered my loss at all, neither has mustard. Vinegar and spices are fine. Just no sugar.

Yeah, I love the franks and mustard too.

If any of you have a microwave omlette pan, it's perfect for the eggs! I remembered I had one and it's perfect. You just mix your egg mixture, nuke for 30 secs, mix it up, add your filling and finish nuking and voila, omlette. No oils necessary and it looks pretty too If you don't have one they cost under 3 bucks at Target, Wally or the grocery store.

WW.. can you post a picture of the pan because I'm getting a blank in my head when I try to picture what it looks like?

I'm also interested in hearing your marinade recipe..please share!

I made scrambled eggs today because I only like my eggs scrambled or deviled and an omlette would be great. Getting a little bored with my food but plan to try and mix it up a bit next week.

It looks like this but I just thought of something else. I remember people posting about Ziploc omlettes. I bet that would work even better and I wonder if you could steam fresh spinach in the bag?

I had the most delicious chicken salad for dinner!!!

chicken,spinach, apple, kavli crackers
1 ginger tea bag and Bragg's amino acids

I cooked the chicken in ginger tea and Bragg's amino acids (tastes like soy)
Shredded the chicken over a bed of spinach and chopped apples and then poured the reduced "soy ginger sauce" over it and crumbled garlic Kavli crackers over the top like croutons. YUM! Seriously tasty and filling!

Sounds delish, Kristina!

I made a hamburger tonight and it was so good.

Took my ground beef, mixed in 1 crushed garlic grissini..dried onion flakes.. garlic powder (not that evil sugar salt I mistakenly used the last two days)..cumin and S&P. Mixed it all together really well and then patted it into a thin, large, patty.

Fried it in a non-stick pan with a tiny amount of water in the bottom. Kept putting water as it evaporated until each side was cooked - let the water burn off and gave the patty a slight grilled brown texture on each side. Served on a bun of lettuce with one spoon of mustard mixed with a sprinkle of Splenda. It was great.

Diana, that sounds delicious! My Safeway has 93 percent ground beef on sale this week for 1.99 a pound so I plan on picking some up and making some burgers. That idea sounds particularly tasty to me this morning. Thanks

I'm having my usual steak, steamed spinach with garlic and a sliced apple
Fajita marinaded chicken breast with sauteed onions, strawberries and a sf af margarita. Ole!

I made 4 bowls of the chili last night and put them in my freezer for future meals. It sure is handy having things on hand for if you're just not in the mood to cook or to mess up your kitchen. I'd suggest the chili in the freezer idea to everyone here. It's super tasty, easy to make and it freezes great. I bought some freezer containers at the 99 cents store and they are the perfect size.

LOL..ok, so I'm a little freaky about my portions. I weighed the meat and divided it up into 4 servings. Then cooked each piece of meat alone with chorizo seasoning I mentioned I think it was in the big thread? or maybe this one. Dunno. Anyway, the seasoning pack is for 1.25 pound but I only wanted to make 4 portions, so I just eyeballed the seasoning and added it to my beef. Then I took a full can of the firs roasted (Safeway brand saves calories!) for each ground beef and chorizo combo, and put them in my freezer bowls. I did have to make 4 batches of meat but that was fine by me. I guess I could have made it all together and then weighed it. LOL..duh! didn't even occur to me Anyway, love the chorizo as my seasoning, no mixing stuff up, simple, cheap! and just added some seasalt after I nuked each bowl. Ok, that's my final word on my chili. I've still got 3 bowls to use up so I'm good for a little while and I have a boatload of my steaks since it's been priced so well and it will easily be used in P3 and 4!

Thanks for that, because the chili I made was.....

I'm headed to the store tomorrow for that seasoning. I'm SOO tired of these meals the last few days. I probably should pick up a steak too.

I did venture from my beef and chicken today and had shrimp for lunch that I cooked in Franks and served over spinach. It was yummy. But then I read on here shrimp stalls some people.

WW, which recipe do you use for your chili? I was thinking I could take frozen bags with me on the airplane and heat it up in the microwave in my hotel room.

The chorizo seasoning I use is made by Mojave and is in the mexican seasoning area in the baggies. I thought it was really tasty. I'm going to enjoy the chili a few times this week myself. I'm loving the tomatoes as a change of pace too and at 70 calories for the whole can of tomatoes, pretty good deal! Plus, I've found the can of tomatoes really bulks up the meal and I like one meal of my day to be bulkier and the other light. Just my preference but it seems to be working. Keeping my fingers crossed to have a nice whoosh tonight and to getting closer to my P3 plans!

The chili sounds so good, I need to make some too! I couldn't find the chorizo seasoning but I might try to make up something myself with what I have on hand. I forgot to buy canned tomatoes and instead bought tomato sauce Oh well, I may have to cook real tomatoes instead.

Today I was a little boring.

For lunch I made ground chicken breast meatballs and then threw some shredded cabbage in the pan after the chicken was cooked, until the cabbage was done. It was very tasty.

For dinner I just had a burger again because it was easy and filling.

I did make my version of a chocolate covered strawberry milk slushie this afternoon and it was SO good. I picked up some SF Torani's Chocolate Syrup - put chopped up strawberries, 1 tbsp milk, 1 1/2 tbsp. Torani's + ice and water into a deep cup and used my hand wand to mix it all up. I felt like I was having something naughty. I hope the Torani's doesn't stall me or cause problems because I loved it. I would love to toss my fresh strawberries in the syrup and just eat them like that too. I need to figure out how to make hot chocolate with this stuff.
