B: 2 pancakes, 2 eggs, black coffee

L: h/b eggs, artichoke hearts and black olives, black coffee

Snack: ice tea at son's place

D: grilled burgers, I think, salad for sure, and don't know what else, if anything. They don't bake, and I won't bake, lol. And they don't have coffee.

Evening snack: skinny cow frozen bar on a stick, and some light cheese stick

Michele, have you been buying those blackberries that are so cheap now, we have been buying lots of containers, while the price is low. In Calif., they are charging twice that much, amazing how the price difference is here in Texas.

Loretta, I just cut the cauliflower up, spray with PAM, smoked paprika, some salt, and put in oven on a cookie sheet sprayed with PAM. Temp 390, 20 min. or so, turn it once if you want. Also put some of that minced garlic on it. Or grated parmesan. Some people cut it into steaks, same as cabbage steaks, big, thick slices, just remember to put some oil on it. I don't do it often, because it's only for me, so easier to just steam it.

I'm not sure what Michele does, but I reheat stuff, either in the frying pan quickly or in the toaster oven, if it needs more browning, otherwise just nuke it. And, if it's too dry, I add beef broth, always keep a container of beef broth and chicken broth in the fridge, so stuff can be reheated without adding fat to it............dietitian told me about doing that. Some people don't mind fat, but I notice that it helps me, if I'm in the zone at that time. Meaning dieting purposefully rather than just maintaining along.....

I've roasted a head of cauliflower (cut up in bite size chunks) and a sack of brussel sprouts (sliced in half). I put it all in a large baggie with a tablespoon of lite olive oil, salt, pepper, grated parmesan, paprika, and small bit of cayenne pepper. Shake the bag thoroughly and pour out onto baking sheet spayed with pam. Bake on 350 for around 15 min - keep an eye on it. Like almost everything else I cook, I divide it up into single portions and freeze. It's still good! I'll take out one of the portions from the freezer in the morning and leave in the refrigerator. By the time I get home in the evening, all I have to do is put the container in the microwave for 1.5 minutes and it's done!

Hope you give it a try and enjoy it!

Yes Michele, it helps a lot to have the veggies already done, otherwise there is the excuse of not fixing any. I guy frozen broccoli in a bag, then let it thaw, put it into a container with a good lid, and I toss some into the frying pan in the morning or evening, or just eat it cold, because my dh can't stand the smell of it cooking, nor the sight of it on a plate.

Wow, just realized I haven't posted this week...may have to add Sunday's later as off-hand I can't remember that far back....sigh!

Today's eat....

B. eggs o'brien (potatoes o'brien with a couple of poached eggs on top, or you could call it hash and eggs as I tossed in a couple slice of bacon....just water for the pills.

s. a few mixed nuts

S. lo jambalaya, rice, parched corn with a small piece of roast pork which was also leftover from Nancy

s. Greek yogurt with some tart cherry juice

Yesterday's (Monday) food

B.L, a breakfast platter from Jack in the Box....sausage patty, strip of bacon, scrambled eggs?, six half-dollar sized pancakes, and a potato patty...just water again

L/D,,,six small oatmeal cookies given to my by the sister missionaries (it was all I had at the ER and were very filling)

Sunday's food

B/L,,,sausage patty, hash browns, eggs, and an English Muffin

Just checked food diary and it's no wonder I can't remember what else I ate, as I had nothing else...kinda strange but I do remember I was full, so maybe I didn't...

You guys are doing so good. It's inspiring to read your menus. I've got to get creative on veggies. Right now I'm eating raw red peppers for at least one or two meals a day and that is going to get old.

Tues:

B: 2 eggs scrambled in olive oil spray, 3 mini red peppers

L: 6 oz hamburger patty, bunch of steamed brussel sprouts

D: Sauteed onion and peppers, 2 chicken tenders, large spoon full of black beans, dab of sour cream, tbs of red salsa, tbs spoon of green salsa, dash of green habanaro sauce, 2 tbs of melted Mexican cheese, topped with 3 crumbled blue corn chips.

Snack: 1 oz sharp cheddar and 6 whole almonds, no salt.

Soluble Fiber: 6 tsp

After checking my blood sugar after a meal on Monday, I found that fresh strawberries spiked my blood sugar up to 118, so I won't be eating much fruit for the time being.
