B: cauliflower, garlic, brown mushrooms, green onions, 1/2 cup egg subs. flaxmeal. grated parmesan on top. lots of black coffee sips

L: 2 H/B eggs, Colby jack cheese and black coffee

Snack: mandarin orange segments

D: roasted game hen, brussel sprouts with onions, some lime and (gasp) Cilantro rice, dh loved it so much at lunch at Fuzzy's last week, I'm making some at home for him, have to taste it, at least.

Added a little TVP to my cheesy cauliflower tonight and it was a winner. Tossed it into the water as I was blanching the cauli to cook it a bit...don't know if just heating in the cheese sauce would have done it.

Even had breakfast at what most people consider normal...wow!

B. coffee, 2 eggs, 3 bacon, and a small chunk o'cheese, crystal light for the pills

S. mock mac 'n cheese, lo sam tom (green papaya salad), added some cabbage to it, lo spare rib and chicken wing, dessert 2 chocolate covered cherries and a bit of mixed nuts, pero

Coffee and a Jimmy Dean lite breakfast muffin before leaving house with Crystal light for the pills.

Deli chicken breast, a couple of hi-fiber, lo-carb tortillas, Mexican blend cheese, diet soda

560 kcals...only a few more days to the month, folks, where do the time go? Doesn't look as tho' I'll come even close to my goal for the month....sigh!

haha, Babette asked me at lunch time today if I like Mexican food...what I didn't say when it comes to food, I'm half Mexican, half Italian and half Jewish.

B. (yes I again had breakfast before noon) Jimmy Dean light breakfast muffin, coffee, and water for the pills.

s. half a bag of radishes on my way to the desert

L. cheese enchilada, chili relleno, beans, chips/salsa and a flan, water again.

s. 2 strawberries and a decaf

s/S. Don't know whether to call it a snack or a meal. Made a pot of my famous hot bean dip to take to the mountains tomorrow and had a bit of it with some chips...more Mexican food.

The bean dip was a specialty of a friend in Japan and she wouldn't give me the recipe until she was leaving the country as she brought it to all our potlucks. Hope she's not lurking on this site...sigh! It's really easy and very good...great for the guys at the super bowl stuff, too. Brown some ground beef, add a can of refried beans, some salsa, some herbs & spices, throw some cheese into the mix and some on top when you pop it into the oven and when it's brown and bubbly, pull it out and eat it with chips...id it cools off, throw some more cheese on top, and pop back into the oven. I've also used it as a base for seven-layer dip and it's a winner. I've made it low carb by mashing a can of black soy beans and it came out great. Tonight I had some tomatoes that needed to be used, so I seeded them, chopped and browned them to get some flavor and it added a whole new taste, too. Have fun with this folks I do, it's never the same thing twice, so I guess the original recipe is safe.

anyway, that's about 1500 kcals

Wednesday....UD about 1400 kcals

coffee, a few strawberries and a bit of plain yogurt, another coffee

L. Honey walnut shrimp, green beans with pork, a bit of rice, fortune and an almond cookie

S. a couple slices of toasted french bread and the rest of the shrimp, pinot grigio

Thursday DD 218 kcals, should have something else, but don't know what...maybe a protein shake for another 100 kcals...sigh!

coffee at the cabin, then about one p.m., a mixed green salad with vinegar as dressing...got minestrone, but full..so brought it home. Did have one piece of garlic bread, tho'. just water to drink.
