'Twas good... I always add a bit of roasted sesame oil to my fried rice and today I added a bit of Pad Thai sauce. The recipe in the Recipe Room was very easy to follow.thanks for the idea as I've been meaning to try it.

MaryMary, here's the one I used:

Chinese Fried Rice

4 cups raw cauliflower, riced
1/3 cup onion
1 clove garlic
2 TBS coconut oil
3 TBS soy sauce
2 TBS flat leaf parsley
1/8 tsp. pepper
1 egg, lightly beaten

Saute onion and garlic in coconut oil until tender. Stir in the cauliflower rice, soy, parsley and pepper. Cook over medium low heat for 5 min. stirring occasionally. Add egg; cook and stir until egg is completely set. About 3 mins.

4 servings

I used leftover chicken breast instead of egg. It was just as good.

Saturday's food DD

Feeling good, energetic even tho' didn't get much done today...the former owner of my new little buddy came by today to check on him. He was excited to see her but couldn't keep his eyes off me and wound up wetting on her...he couldn't wait to get back in the house and with his sisters. I couldn't tell her that I'm thinking of finding a new home for the puppy. It doesn't seem right to him to not be able to play and train him they way a puppy should....still torn.

B. coffee/ff half and a hb egg

s. a bit of veggies, a few snowpeas, celery, baby carrot, turnip slices and raw cauliflower

S. remembered I had a cube steak growing hair in the back of the fridge, so had the steak, grilled onions and FF cheese, lemonade to drink

s. apple

lotsa water today...trying to drop a pound or so by Thursday for doctor's appt.

600 kcals...gotta do better Monday
