I LOVE LC cheese in an omelette. Just the cheese, nothing else. It's really good with eggs. Topped with a bit of salsa it's pretty darn good, too.

That's good sounding too Tril. I usually put grated parmasan on my egg substitute with the veggies for my breakfast, so I use my LC cheese on my lunch sandwich, I love the 35 calories for one thing. I will try the LC in my breakfast one of these days, I think my dh would enjoy that too. I also like the Kraft fat free sharp cheddar slices, those are also 35 calories and they melt nicely. Have you tried the LC in a 50 calorie wheat tortilla roll up??

Can't say I have... but then, I don't eat grains! Just meat, eggs, veggies (non starchy), limited dairy (cheese once a week at most and cream), natural PNB or a few almonds (once or twice a week) and fats like butter, EVOO and avocado. I haven't had that chicken roll up thing in ages... although I love it... because I don't eat bacon now (can't find it w/o nitrates).

Jezzie, I'm still around. Just don't post much. Yummy Chicken Stuff is my favorite too, and I was going to say that, and then saw your post. It's something I make for company too, as it looks like I know my way around the kitchen.

It's going well. This is the end of my fourth year doing it, and I'm finally feeling seasoned. I know the judges and attorneys, and the routine is down pat. I am grateful every day that I don't punch a time clock. That was my whole reason for going into the field -- to choose when I wanted to work, and doing the bulk of it at home. That, and have time to write the great American novel.

Mary, that is my career path as well with computer consulting...no time clock..just fun with what I love to do. Nice for us at this age, huh? Sure good to hear from you and know you are doing well.

Well, I strayed from low carb, and put on a few pounds. Have seen the error of my ways. Gee, now the AMA is saying that low carb is the preferred plan for a diabetic. LOL I went on insulin, and they told me I HAD to eat carbs. But my blood sugar was a roller-coaster. Now I am eating "lower" carb and feeling so much better. I am going to follow my body -- not what someone else tells me, from now on. Common sense is a good thing.
