Menus for the week of June 21 - June 27

Reporters interviewing a 104-year-old woman: 'And what do you think is the best thing about being 104?' the reporter asked. She simply replied,
'No peer pressure.'

Have a great week folks. Enjoy your food selections.

Breakfast - Maggie's cereal w/strawberries.
Lunch - My latest creation, which is something I have decided to call Asian Fusion Tuna Salad because of the combination of Thai and Chinese flavors and some hot & sour soup.
Dinner - Lettuce salad and 1/2 of a chicken roll (flattened chicken breast coated with a mixture of ricotta, parmesean, and mozzerella cheeses, and sliced green onion, then stuffed with sliced chicken andouille sausage and rolled up.) served on Dreamfield's linguini w/marinara sauce.

Henry, that sounds delic. And Loretta, spagetti sauce on cabbage noodles sounds good too. How do you fix your cabbage if you dont mind me asking. Just cut it and cook? boil? steam? tia.

b eggs, two blenderized with ice, a dab of vanilla, splenda. i was out of cream or i would have put a dash of that in too.

l tuna salad with one whole can of tuna, lettuce, olives, egg, mayo. seasonings I was out of spinach.
dinner, hamburger broiled with salsa on top, three quarter cup of green beans with a little butter.
snack pork rind with egg

Tuesday rush day

B: 2 eggs over easy

L: smoked turkey deli sandwich, with tomato and lettuce and large glass of fat free milk at one of those Panera Bread places, we had never been before.

D: roast chicken from Costco and strawberries on the side, cold coffee

Evening snack: strawberries

Oh Amber, I saw those Fullbars at Costco, so I bought myself a carton on the cocoa chips flavor, will try them out after I get my routine going again here at home. My hubby eats those Detour bars, the low sugar kind, for in between meals or when we travel, because of his diabetes.

Sheila, have you had a dietician help you plan your meals? Did they give you a list of what to eat and what to avoid. I know diabetics that eat a varied diet that includes fruits and sometimes a sweet.

I have been testing myself since the end of Febr. March, I ate a balanced diet of fruits, veggies, good carbs. My sugars ran into the 200s. So that is when the dr put me on this med from he!! It made me drop into the high 40s every day. So then he told me to take just at supper, same thing. Drops too low. So I quit the gibizide and just take metformin, and eat low carb. I do have good carbs, just cant have a lot of fruit. I did have blueberries and cream several times in the beginning of June. Sugars shot up. I just didnt have a bunch. Yes, went to nutrition meeting, got a big folder of foods and how to count. same thing tho. Yes, I can eat all that, but my numbers will be high. OR super low of that med. I really dont want to ever have to go on insulin. So I choose this way of eating. I feel ok and although I miss my sweets, they really arent that good for me anyhow. So I trudge along , I had tomatoes today and homemade sauce, bg level great. So i guess i just dont eat a lot of carbs at one time. spaced out during the day and I do great. just got to be good ones. thanks Loretta Oh.. dr and nutritionist says 50 to 60 carbs per meal. HAHHA. I try to eat about 20 to 30 a day for good sugar readings.

I bought one carton of the Fullbars, 15 bars in the carton. I'll let you know how they are, at least just to me, when I start them. They remind me of the old days in the 1950's, remember that "Hollywood" bread, you bought the loaves in the grocery store? You ate two slices of the bread at least half an hour before eating. I don't know if they still make the bread anymore though. It contained cellulouse, made from wood fiber, doesn't hurt you, it just goes through your system is all. But it helps people who have trouble with hunger pangs. The old grapefruit plan wouldn't work so well now, especially on we "Golden age" people, because so many of our daily meds don't allow us to eat or drink anything from grapefruit anymore. My dh is sad, he used to love grapefruits, had some every day in fact.

Wednesday

B: 1 zucchini, 3 crimini mushrooms, garlic minced, sauteed in PAM. 1/2 cup egg whites (still have to finish that carton before starting the regular egg substitute). Grated cheese (parmasan) on top.
lotsa coffee, black

L: 2 slices 45 cal. Sara Lee Wheat bread, f/f swiss slice and shaved mesquite turkey sandwich. 2 H/B eggs 1 medium cut up plain old red tomato in a bowl. coffee

Snack: one 20 calorie Creamsicle and coffee

D: cauliflower and Dover Sole Fish and 1/2 cup little tiny potatoes from a mixed bag from Costco.
coffee

Evening snack: 2 peaches cut up
