Talk about using up fresh veggies, here is a recipe for Fresh Vegable Salad. It makes a bit but keeps well.
3 carrots,1 head of cauliflower, 1 lg green pepper, 1 head of broccoli,1 bunch green onions, 3 ribs of celery CUT IN BITE SIZE PIECES. Dressing: 1/2 cup splenda, 1/2 cup vinegar, 1/2 cup canola oil, 2 tsp dry mustard, 1 tsp salt, 2 tsp poppy seeds. Mix the veggies and dressing. Add the poppyseeds. Let set about 3 hours before serving. I would imagine you could make a smaller batch. My company ate all up and I didn't get to enjoy the leftovers. Wednesday's lf & lc menu
