Back from 2 weeks vacation...nuf said.

Yes, Jezzie that is a part of my walking route. Notice the signs on the left. They tell you which direction to go to find residents.

Sunday's regular menu
  • 1/2 decaf black coffee, 4 cups all day
    Brunch: 2 fried eggs, 1 small sausage, 2 slices rye bread
    12:30: banana w 2 tbs bean-CO-peanut butter
    4:00: diet root beer float w real cream, few dry roasted peanuts
    6:00: Left over fish
    asparagus
    left over cauliflower salad
    2 cups mixed greens, fresh veggies, bacon bits, 2 T lc poppyseed drsg
    6 oz wine
    Snack: Cheddar popcorn, CF diet soda

It's supposed to get really warm next Wednesday and beyond, so I'm making sure we have the diet root beer in the fridge already.

Welcome back Susan!!! It's always a bummer to have to go back to work after a vacation, I don't work, yet when we are gone somewhere, it's like training a monkey to do the kitchen stuff again...............

Sunday
B: zuchinni, peppers, green beans, carrots, 1 mushroom sauteed in PAM, 1/2 cup egg subs added. 2 tblsp. crumbled reduced Fat FETA cheese on top.

Snack: one fudgesicle cause dh needed the stick
L: 2 WASA rye crisps sesame flavor, light laughing cow cheese spread garlic/herb. 2 H/B eggs. cold cooked carrots
black coffee
Snack: s/f Suisse Mocha
D: 2 fried eggs and steamed cauliflower/broccoli mix from frozen bag
black coffee

Evening snack: 1 cup unsweetened applesauce and s/f Suisse Mocha drink

Today is veggie steaming day for the week, I bought those 10 lbs of carrots and I'm gonna use them UP soon friends................. The rest is brocolli and cauliflower in frozen form, gotta use that up too.

Well it is Monday, starting over again today, so started off gently pulling back on the carbs and stuff.

B: 1 12-grain toast w PB n dots of sf syrup, lots of tea w milk

2 cups of coffee w half n half

L: 1 egg, 2 slices of deli thin ham, 1/2 oz of cheddar all fried, lots of tea w milk

D: will be, Tilapia or Salmon w several veggies broccoli being one

dessert: will be, zero fruit yogurt

PM: SF Cocoa

Hope I can keep to this with no cheats first day back at it.

Monday's Breakfast - Maggie's cereal w/strawberries.
Lunch - BBQ ribs, twice baked fauxtatoes, and broccoli & cauliflower salad.
We had a birthday celebration at the office this afternoon. I had blackberries, strawberries, and blue berries w/whipped cream.
Dinner - Lettuce salad, breaded chicken breast parmesean, and Dreamfields linguini w/marinara sauce.

Kept to my Monday menu yesterday first day back on it. I did however have a LC choc bar in the evening.

Got the LC headache this morning or dehydration headache but lost 2.4# so glad about that.

Will have to recall what I used to eat before I went off track.
Just had a fried egg for breakie hope it keeps me going for a while yet.

Hope I can keep with it again today.

Well my menu from yesterday was scrapped for the supper part. DSD and DGSD came by and we went out for fast food. Don't these guys eat at home. I offered my sauerkraut and sausage but no takers.
Had a fish sandwich without the top bun. Came home and ate some of my sauerkraut.

Tuesday's lf & lc menu
  • 1/2 decaf black coffee
    Brunch: 1 soft boiled egg, 1 piece of flaxmeal bread
    1:00: shaved smoked turkey, piece of 2% cheese
    4:00: banana w 2 tbs bean-CO-peanut butter
    6:00: sauerkraut w sausage
    2cups mixed greens, fresh veggies, 2 T ranch drsg
    6 oz wine
    Snack: pistaschio nuts, CF diet soda
50 oz water

Great going on the Fish sandwich w no top, at least you compromised. It was nice they came a little company always helps huh?. Hugs dear friend.

Stuck with it again today, lost 2#s overnight but had a headache this morning, probably dehydration.

Snack: one Kaschi granola bar in the car, 140 calories
L: Senior breakfast at IHOP, eggs, hash browns, 2 sausages and pot of coffee all for myself................
D: 2 fried eggs, over easy leftover coffee from breakfast pot

Snack: Don't know yet, probably s/f Suisse Mocha

They didn't have any Pistachios at this Wal Mart, only Pecans and Almonds so I just got that for dh. He needs more protein the doctor says.

Talk about using up fresh veggies, here is a recipe for Fresh Vegable Salad. It makes a bit but keeps well.
3 carrots,1 head of cauliflower, 1 lg green pepper, 1 head of broccoli,1 bunch green onions, 3 ribs of celery CUT IN BITE SIZE PIECES.

Dressing: 1/2 cup splenda, 1/2 cup vinegar, 1/2 cup canola oil, 2 tsp dry mustard, 1 tsp salt, 2 tsp poppy seeds.
Mix the veggies and dressing. Add the poppyseeds. Let set about 3 hours before serving.
I would imagine you could make a smaller batch. My company ate all up and I didn't get to enjoy the leftovers.

Wednesday's lf & lc menu
  • 1/2 decaf black coffee, 6 cups all day
    Brunch: zucchini, onion, Turkey Italian Sausage sauteed in CO
    topped w parm cheese
    12:30: shaved smoked turkey slices on 1 piece of 2% less fat cheese
    4:00: 3 homemade almond flour cookies
    6:00: left over pork roast
    mock mashed pot and a few asparagus pieces
    2 cups mixed greens, fresh veggies, bacon bits, 2 T lc poppyseed drsg
    6 oz wine
    Snack: 2 slices 40% less fat bacon, few soy nuts, CF diet soda
50 oz water
