Thursday's Breakfast - Sausage and l/c pancakes w/strawberries and whipped cream.
Lunch - BBQ ribs, fauxtato salad, and l/c baked beans.
Dinner- Romaine lettuce salad , grilled steak, assorted l/c friendly grilled veggies, and strawberries & blackberries w/cream for dessert.

Friday's funky foods
B: 1 zucchini, 2 large mushrooms, onion flakes in PAM. 1/2 cup egg subs added. Morton's Hot Salt shaken in. 2 tblsp. crumbled FETA reduced fat cheese on top coffee, yum yums
Snack: nothing, was sittin' pretty in the car, lol
L: fish sandwich at the casino, not very good, but had tomato, romaine and pickles that were cold and fresh in it. Several cups of black coffee
Snack: na da
D: 2 eggs cooked in PAM coffee

Snack: 1 cup blueberries and s/f Suisse Mocha hot beverage later in evening

V-8 juice with Tobasco

Lunch:
Healthy Harvest rotini in Classico hot sauce, parmesan

Pre-Dinner:
organic plain yogurt with mashed banana

rice and beans with a side of zucchini

I have been eating somewhat off plan without having a real routine here yet. Will get back on course shortly.

Saturday's lf & lc menu
  • 1/2 decaf black coffee, 4 cups all day
    Brunch: rf ricotta cheese pancakes w sf syrup
    12:30: out for lunch for Mom's Day. Going with Dh, his wife and her family.
    6:00: left over pizza
    2 cups mixed greens, fresh veggies, bacon bits, 2 T lc ranch drsg
    6 oz wine
    Snack: 2 slices 40% less fat bacon, CF diet soda few soy nuts
50 oz water

Saturday's Breakfast - Sausage & l/c pancakes.
Lunch - Smoked turkey and fauxtato salad.
Dinner - "Breaded" chicken breast parmasean, Dreamfields linguini w/marinara sauce, and asparagus.

Sheila, here is the recipe I developed using black soy beans. I cook the beans first in a pressure cooker to soften them. The canned beans always seem too al dente for me and I was never able to cook them long enough to soften them. The pressure cooker solved that problem.
I took 4 strips of bacon and cut them into 1/2" pieces. I started cooking the bacon in an open pressure cooker to which I then added 1 diced medium onion and 2 cans of drained and rinsed black soy beans. I then added 2 cups of water, put the lid on and cooked the beans under pressure for 8 minutes. The beans were then nice and soft, like canned pork & beans that I used to use. I then prepared my tomato mixture. In a small bowl I combined 1/2 cup low carb ketchup, 1/4 cup cider vinegar, 1 Tbls dried mustard, 1/2 cup l/c maple syrup, 2 Tbls Natures Flavor brown suger flavored splenda syrup, and 1 tsp xanthan gum and mixed with a stick blender. I then combined this mixture with the drained beans and added 1 small onion, diced and baked uncovered at 375 for 1 hour.

Henry, you could get a job in a health food restaurant with those recipes you come up with!!! There are more and more of those restaurants popping up, the "times" have caught of with them finally.

Janie, do you or your dh make that pimento cheese??? I've seen folks on the Food Network make their own cheese, but I'm too lazy to try, and I'm the only one who would eat it anyway.

Saturday's menu

D: leftover chicken breast pieces, 2 1/2 cups steamed veggies, asparagus from a can, green beans, carrots and some corn too.

sounds yummy Henry. Thanks for the recipe. I copied it and will try that as soon as I find the ingredients. My walmart stinks and that is the only area food store except the piggly wiggly and they have even less. Not even carries the crackers that Doris eats. Wasa. They looked at me like I was nuts. LOL. No nut butters either.
