KCDuffer's Yummy Cabbage Soup

1 pound ground beef
1/2 onion, sliced
3 stalks celery, chopped, include the leaves
1 pound cabbage, I use the prepackaged slaw mix for convenience.
1 tsp hot sauce
1 tablespoon salt
4 ounces cream cheese
4 ounces grated cheddar cheese (I used Velvetta)
2 cans of beef broth

Brown the ground beef in large pot. Depending on the fat in the beef, drain it.
Add the onion and celery and continue browning. Add the shredded cabbage, half a package at a time. Continue cooking.
Add the hot sauce and salt.
Add the cream cheese and cheese.Stir in the beef broth and cook until
simmering. Lower cooking temperature and cover. Continue stirring frequently so it doesn't stick.

NOTE: I cooked the meat/veggie mixture in a big skillet..Then put the broth in a crockpot..added the cooked ingredients and let it simmer..

It's a good soup, I don't put in the beef and cheese though. I make alot of it and freeze half. The way the weather's goin', better lay in a good supply. It's "that" time of year again.

There's onions and celery in there too. And the hot sauce gives it the "zip" it needs. There are many versions of this soup around, and it counts as a veggie serving or two and won't put any pounds on you at all, but fills you up good. You can have it several times a day, I don't even count it in fact!!! Perfect for your "clean" eating days.

Doris, just looked at the clouds over your way and bought some cabbage today! (Unrelated, really.) I think we're both gonna get it tomorow. I usually put in a little chicken broth. I think I might try the ground beef though and a little hot sauce. Cream cheese too, ummm might work. I used to put a splash of frozen hash brown potatoes in too. (Dolly Parton's cabbage/potatoe soup diet?) Guess maybe I should change to cauliflower instead. Got your snow shovel ready? I think I'm ready for a pot of soup on the stove that you just keep there and keep adding to it. Dorothy

Dorothy, we are already having rain, don't know if it will rain or snow tomorrow for sure yet. The wind is supposed to be bad too. I make the soup with chicken broth too, beef is a good change of pace. I also use that Morton's Hot salt sometimes instead of Tabasco, whatever one has on hand. I feel as long as it's not a "cream" soup, it's ok. Safeway has a big zuchinni sale this week, so I am buying a whole bunch of that too, throw that stuff in there. I keep forgetting to buy green beans too, they are "free" for diabetics, but dh does not care for them by themselves.
