I want to brine a turkey this year but all the recipes I am running across use sugar as well as salt.  I was thinking about substituting the  <a href='http://www.netrition.com/cgi/goto.cgi?aid=281&url=splenda_brown_sugar.html' target="_BLANK" class='DEF' title=''>Splenda brown sugar</a> blend but not sure if it would affect the overall turn out of the turkey or even give it a funny after taste.  Or I'm thinking about eliminating the sugar all together. Since the turkey is a big part of dinner,  I don't want to mess it up.<br />
<br />
I am so excited for Thanksgiving to get here, there are so many decadent, low carb options I want to try out.   <br />
<br />
Here is the recipe I plan on using---Would you substitute the sugar or take it out all together?<br />
<br />
<br />
<br />
<br />
<b>Brined Herb-Roasted Turkey<br />
</b><br />
Ingredients:<br />
<br />
Turkey<br />
1 12-pound turkey (preferably organic and free-range)<br />
<u><br />
Brine</u><br />
1 cup sugar<br />
1 cup kosher salt<br />
1 bunch fresh sage<br />
1 bunch fresh thyme<br />
3 tablespoons cracked black pepper<br />
<u><br />
Turkey Stock</u> <br />
Turkey giblets, neck, and other trimmings<br />
1 onion, sliced <br />
1 stalk celery, sliced<br />
1 carrot, sliced <br />
2 cloves garlic, sliced<br />
Coarse salt and freshly ground pepper <br />
4 cups chicken stock <br />
<br />
<br />
<u>Herb Butter</u> (Make Day of Roasting)<br />
8 tablespoons (one stick) softened unsalted butter<br />
1/4 cup extra-virgin olive oil<br />
1 tablespoon lemon juice<br />
1 tablespoon chopped shallot<br />
1 teaspoon chopped garlic<br />
1/4 cup chopped parsley<br />
1 tablespoon chopped chives<br />
1 tablespoon chopped sage<br />
1 tablespoon chopped thyme<br />
1 teaspoon chopped tarragon<br />
<br />
<u><br />
Roasting the Turkey</u><br />
1 onion, sliced<br />
4 stalks celery, sliced<br />
2 carrots, sliced<br />
Coarse salt and freshly ground pepper<br />
4 to 5 cups turkey stock<br />
1 cup dry white wine<br />
3 tablespoons butter<br />
3 tablespoons flour<br />
Instructions<br />
<br />
<u>Brine</u><br />
One to two days before serving, place 1 gallon of water in a large stock pot with the sugar, salt, sage, thyme, and pepper. Bring to a boil, and simmer for 10 minutes. Strain and chill.<br />
<br />
Place the turkey in a deep casserole or roasting pan that is large enough to allow most (preferably all) of the turkey to be submerged in the brine. Cover the casserole with plastic wrap and refrigerate. Turn the turkey in the brine every few hours if it is not totally submerged. (You can also place the turkey and brine in a large plastic bag placed in a bowl for support, if you do not have a large enough container.) Let steep for 24 to 36 hours.<br />
<br />
<br />
<u>Stock</u> <br />
Preheat the oven to 400 degrees. Cut the last two joints off each turkey wing, leaving the wing drumstick on the bird, and put them in a small roasting pan. Roast until the skin is well browned, 45 minutes to an hour. Put the roasted wings in a soup pot with the giblets and the neck, setting the liver aside. Add the vegetables, 1 teaspoon salt, several grinds of pepper, chicken stock, and 3 cups cold water. Bring to a boil and simmer over medium-low heat, partially covered, for 2 to 3 hours, until the meat is falling from the bones and the turkey gizzard is very tender. Poach the turkey liver in the stock for 6 to 7 minutes; remove, cover, and refrigerate. Strain the stock into a bowl or jug, reserving the giblets, and refrigerate. There should be 5 to 6 cups. <br />

<u><br />
Herb Butter</u><br />
On serving day, place all the ingredients for the herb butter in a food processor and blend. Transfer to a small pastry bag or Baggie, and set aside.<br />
<u><br />
<br />
<br />
Cooking the Turkey</u><br />
About 5 hours before serving time, remove the turkey from the refrigerator. Lift it out of the brine, and rinse off under fresh cold water. Dry the bird with paper towels.<br />
<br />
Slide a small rubber spatula between the skin and the breast meat to separate them. Pipe half of the herb butter under the skin of both breasts from the cavity opening, spreading the butter evenly over the whole breast area with the fingertips. Rub the remaining herb butter all over the outside of the bird.<br />
<br />
Fill the body cavity and the neck cavity loosely with stuffing. Truss the bird loosely with butcher's twine and season with salt and pepper. Spread the sliced vegetables over the bottom of a large roasting pan and lay the turkey on top. Add a cup of stock to the pan.<br />
<br />
About 4 hours before serving time, preheat the oven to 375 degrees, and position the rack in the lower half of the oven.<br />
<br />
Put the turkey in the oven and roast for 1 1/2 hours. Check to see if the turkey is browning evenly, and turn the pan, adding more stock if it gets low. If the turkey is browning too fast, fold a 30-inch length of aluminum foil in half, then fold it loosely again and set it lightly over the turkey breast for the remainder of the roasting time. Reduce the temperature to 325 degrees. Roast the turkey for another 1 1/2 hours or until the internal temperature of the thigh is 165 degrees on an instant-read thermometer (5) and the juices run clear yellow with no tinge of pink when the thigh meat is pierced. If the turkey is not too brown, remove the foil for the last 1/2 hour of cooking. Take the bird out of the oven, and let it rest in a warm place for about 30 minutes while making the gravy.<br />

Frosting:<br />
1/2-cup butter – 1 stick – room temp<br />
1 large egg – room temp <br />
1/3 cup  <a href='http://www.netrition.com/cgi/goto.cgi?aid=281&url=sensato_erythritol.html' target="_BLANK" class='DEF' title=''>granular Erythritol</a> – powdered – I use my coffee bean grinder  <br />
1/3 cup Splenda<br />
2 packets  <a href='http://www.netrition.com/cgi/goto.cgi?aid=281&url=sweetleaf_stevia_page.html' target="_BLANK" class='DEF' title=''>Stevia</a> Plus<br />
8 ounces cream cheese – room temp <br />
1 teaspoons vanilla<br />
<br />
<br />
Preheat oven to 350° Spray a 9x13-inch cake pan with cooking spray.<br />
<br />
In a large bowl combine dry ingredients and stir well.<br />
<br />
Beat the eggs with the oil and the vanilla…add to the dry ingredients along with the sour cream and mix well. Pour into prepared pan and bake at 350° for 25 to 30 minutes or until toothpick inserted in the middle comes out mostly clean and cake is firm to the touch. Do not over cook…cake should still be moist. <br />
<br />
Remove from the oven to a wire rack and cool completely. <br />
<br />
To Make Frosting:<br />
Beat butter with electric mixer until light and fluffy. Add sweeteners and beat well scraping sides of bowl as needed. <br />
<br />
Add the egg and beat until very fluffy…beat in vanilla. <br />
<br />
Add softened cream cheese a little bit at a time beating until fluffy after each addition. <br />
<br />
Frost cake...store in frig.<br />

1/3 cup Splenda<br />
4 teaspoons baking powder<br />
1/2 teaspoon salt<br />
4 eggs<br />
1/4 cup oil<br />
1 cup…homemade LC milk<br />

Put a cast iron skillet into the oven and preheat the oven and the skillet to 425°<br />
	<br />
Mix the dry ingredients together, make a well in the middle. Add oil, eggs, and milk in the well and mix with a wire whisk. Allow to stand for 5 minutes to give the ingredients time to hydrate. <br />
<br />
Take the hot skillet out of the oven and place it on the stove over high heat. Put just enough oil in the skillet to swish it around good and heat the oil.<br />
<br />
Pour the batter into the hot pan and place it in the oven and bake at 425° for 25 minutes or until golden brown and toothpick inserted into the center comes out clean. <br />

Just to get it started, a little oil, and toward the end of the cooking, some butter ad lib.  How does that sound?  How would u improve it w/o added pork rinds or low carb bread? What do you like to do with it?  I'm so excited!  At one net carb with no sweetners added, it's a much better deal than my flax tortillas.<br />

I have browsed many many pages in the recipe section, but nothing really struck me as a comparatively quick and easy alternative to eggs for breakfast!<br />

I am starting to feel the need for some variety, as I have been eating under 30g carbs on the Anabolic Diet for 3-4 months now.<br />
<br />
I only have 10-15 minutes to spare for the cooking in the mornings, but I can do some prior preparation/freezing of portions if need be.<br />
<br />
As it stands, once every three weeks I dice up a selection of veggies and mix them all up then portion them so that I defrost one bag the night before and then come the morning I whip a couple of eggs with some cream and make myself a mini omelette..<br />
<br />
To mix it up a bit, I try different herbs and spices and veggies, sometimes I go with scrambled eggs, but it's always eggs!<br />
<br />
How do you people who eat under 30g carbs a day and are short for time in the morning go with alternatives? Cheers!</div>

Since I was going to make LC pumpkin muffins for Thanksgiving anyways, got me thinking.  I'm posting it as she has written, but I'm personally planning on decreasing the amount of apples and onions, leaving out the  <a href='http://www.netrition.com/now_pumpkin_seeds_page.html' target="_BLANK" class='DEF' title=''>pumpkin seeds</a>, but adding some of kevinpa's LC dried cranberries.  I'm really excited about this one, hope it turns out good!<br />
<br />
Harvest Muffin Stuffin'<br />
<br />
Ingredients:<br />
1 stick (4 ounces) butter <br />
2 to 3 McIntosh apples (about 1 pound), cored and chopped <br />
2 onions, chopped <br />
1 zucchini, chopped <br />
6 small ribs celery from the heart, leafy greens attached, chopped <br />
1 fresh or dried bay leaf <br />
Salt and freshly ground pepper <br />
6 store-bought pumpkin muffins <br />
1/2 cup shelled pumpkin seeds or  <a href='http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_sunflower_seeds_page.html' target="_BLANK" class='DEF' title=''>sunflower seeds</a>, toasted <br />
2 tablespoons poultry seasoning <br />
1 1/2 - 2 cups chicken broth <br />

Directions:<br />
1.In a large, deep skillet, melt 5 tablespoons butter over medium heat. Add the apples, three quarters of the onions, the zucchini, celery and bay leaf. Season with salt and pepper and cook until softened, 10 minutes. <br />
<br />
2.Preheat the broiler. Crumble the muffins into the skillet. Add the pumpkin seeds and poultry seasoning, and salt and pepper to taste. Pour in up to 2 cups broth (depending on how moist you like it). Spoon the stuffing into a heatproof dish and broil until crisp, 5 minutes.</div>

			<content:encoded><![CDATA[<div>Ok, so... in the interest of saving $ I'm making much more of an effort to cook good meals from scratch and use all available items. So, right now I'm going to make turkey soup. I have NEVER made soup in my life... I need to start easy and simple. I actually have a turkey carcass ready and sitting in the turkey juice (that it was cooked in) in the crockpot bowl in the fridge that we cooked and ate last night. I googled how to make soup and got some basic instructions but it didn't give good specific directions. It basically said put the bones in the crockpot, put in a bunch of chicken juice (shoot can't remember the name but the stuff you buy in the containers or cans at store I actually have some but to lazy to get name). Throw in a package of frozen veggies, some noodles, season to taste and put on low for 8 hours. Remove bones before serving.<br />
<br />
Ok.. pretty simple.... but I really need help with timing and seasoning.<br />
<br />
I plan to use onions, fresh carrots and a can of green beans and noodles. Here are my questions.<br />
<br />
1. I poured the turkey juice in the crockpot. It fills it up almost halfway. Is this ok? If so do I add more of the canned juice? Water? Or is that good.<br />
<br />
2. when do I put in the carrots, onions and green beans?<br />
<br />
3. When do I add seasonings? And what do I add?<br />
<br />
4. When do I add noodles? <br />

I filled a small saucepan with water and placed 6 eggs in there.I put a very small flame underneath, because i was in the other room watching America's Test Kitchen, and I did not want the water to spill over.  It did not.  exactly 1/2 hour later, i removed saucepan into the sink and ran cold water over it for a minute, and left them to sit for another 1/2.  I then put the 6 eggs in a container in the fridge. cooked all the way through with no green between the yolk and the white. Just finished off two of them.  Great.  How do y'all do it?
