Birthdays should revolve around good food!!

Which method - the two hour turkey method?
I was very interested in that (thanks Sandy!) and found something in there that the smoking my DH will do is similar. It's still a high heat, even though it's off to the side. It certainly has always been juicy even in the white parts.

Cindy I blame you, er, credit you with my addiction to:

I used to cook turkeys on our Weber kettle using the indirect method. Also a beautiful bird and very tasty and a shorter cooking time than roasting in the oven. Wow, I sure wish I had some turkey around here right now. I'm hungry, lol.

Cindy, that trip certainly sounds like fun!! Except the part about missing the flight, but all ended well, so still fun.

Hi gals..

Judy, how did you know that Gary got a blueberry muffin and put a candle on it..LOL.
I couldn't resist the muffin and ate it.. But, it was my birthday. In my pre-LC life, I would be scarfing down a muffin a day and wondering why I weighed 190 pounds..

Nice dinner out with Ds and Dh..

Hello everyone!
I don't know what the stomach bug I had was, but, this is the first day my stomach had not hurt! But I am hoping it is gone.
Didn't feel very good yesterday but my oldest DD was here for a few hours. She had a layover in Dallas and it was wonderful to have her here, the other kids came and we just stayed home and visited.
That 2 hour turkey sounds like a great recipe. Not fixing dinner this year but would like to try that, wish there were "little" turkey's.
Enjoyed all your news gals, need to keep up better!

Hi,

Oh no on the stomach bug, Buffy..That bug is the worst of all of them..Hope you are better..So glad you got to see DD..

Back on track today..Lunch out with my friend who is moving and her dh..Dh gets to come, too, but I know I will order a salad..

The Paradise is over for a season...Great last episode..I don't like Katherine..She needs to find another boyfriend.

Wonder how MK's dh is doing?

It sure seems like there are a lot of "bugs" around already this year. I hope we can all avoid them from here on out. I hate being brought to a screeching halt by having one hit me and it's so hard to play catch up after it leaves.

Carolyn, I think that's sweet Gary brought you a muffin. I'm sure since it had fruit in it that he thought it was healthy. And I'm also sure you'll be fine after eating it. In my old days, it probably would've been half a cake!! And some ice cream on top, to boot!! I'm glad you had a nice birthday.

Tonight I have book club at Olive Garden. Ugh! Always a food event, no matter what you're doing or where you're going. I know how to make good choices but sometimes it's just so hard!!

MK's pictures on FB have been a treasure.

I've been to Rome and the Vatican - but I feel like I didn't retain anything. It was nice to see her pictures.

Sandy I am with you in the old days of eating. I'd eat that cake all day (yes - WITH ice cream!) and then pick at it the next day or two until gone.

We are doing a little hand-wringing over my mom's calorie deficit. She's eating a good amount of protein (we are supplementing) and fat (she loves guacamole) but only a few cooked vegetables - she cannot have raw vegetables yet. I made a chocolate bean cake last week? Week before? And SS said she asked for a piece of that before bed every night when SS was with her. We have some Breyer's LC vanilla ice cream and she had a little spoonful of that.

So I'm going to make another cake in the next couple of days. Eggs, cocoa, butter... what's bad about that?

Hey gang!
Toffee time has begun, did first order today. Won't be as busy as last year as I am not going to market it but getting lots of advance inquiries.

dD#2 took on the job of scanning in my boxes and boxes of family photos, they are now finished and on Dropbox for us all to enjoy, what a treasure.

Judy, you know to be careful of tummy upsets with that low carb ice cream, I'm sure.

Beautiful fall days here, loads of leaves though.
Taking Grant out for dinner tomorrow evening so that I can hear all about his band trip. What a trip for a freshman. We have the best talks when we go out to eat, just us two ��

Hmmm..sounds like your mom is eating very well...Maybe her tummy shrunk a bit when she wasn't eating and has to get used to it again..

Went to a hospital function for women..250 there..We have another LC doctor in town..Dr. Anne Hogsett. She is very tall and thin and gave a program on how you
should eat LC. One question was what is heart disease caused by: Sugar/Fat/Protein.
I got the answer right..Sugar, of course. Hopefully, the village will heed her advice
and Mercy will appreciate what they have in her. She is a regular doctor so I will
go in Jan. to see her.

Oh..toffee time...Yummmy..

We are excited for him. I think he settled on Broken Arrow thanks to Judy's confirmation. Will look online today and go down next week.

Dh is having two cataracts done this month. There is a new lens they make called the crystalens which is supposed to be super duper but you get to pay for it yourself!!
Anyone hear of it???

That's great news Carolyn!! My sister lives in BA and it is a very nice little suburb of Tulsa. And I just know you and Judy will have a blast meeting each other.
My friend just had cataract surgery and she got some kind of super duper lens that insurance wouldn't cover and had to pay, I think, $1000 extra! I bet it's the same thing. It actually fixed her eyesight where she doesn't have to wear glasses anymore too. That's the main reason she went with it. She does still use readers though.

I refuse to even try Candy Crush. It's too scary for me, lol. I wonder if they have a CC rehab? Haha.

Rainy here too. I have some running around to do this a.m. but then hope I can just come home and relax this afternoon. Probably won't happen. It seems my day grows as it progresses, IYKWIM.

Yup..I think Gary should go with the super duper ones..These are $5,000 for the pair..Yikes, but that is 10 pairs of glasses..And the ability to actually see without glasses is a miracle..Merry Christmas, Gary..

Oh..for Thanksgiving we are eating at Affare..I think it is a German restaurant..We looked at the menu and it looked pretty good..There was some elk on it..Not for me.

I agree - Merry Christmas Gary! (even though I know nothing about those super duper lenses)

I've worn glasses since 2nd grade. I wear contacts during the day now purely for vanity. I have decided lasik has risks I'd not like, so I'm just happy to have my vision that is correctable. But those lenses sound like something I'd really like.

No possibility of ice tomorrow for your trip, Carolyn, I am hoping...

I can't wait for our Tulsa trip.

Sharon, I made your pumpkin pudding. I think I should get some white chia seeds if I make it again, lol. But it tastes good! Thanks!

And I made Sherrielee's Chocolate Muffins this week too. They're a keeper for sure!!

DD and DSIL are coming over for dinner. I made a meatloaf, mashed cauli and a zucchini casserole side dish. And pumpkin pudding for dessert. It is sure smelling good right now.

We are in Topeka. Had Red Lobster and I had a lobster. We should have driven over to Sandy's. Yummy sounding dinner.

Icy weather right now but hope it gets better later on tomorrow.

Glad you enjoyed the pudding. I have made the chocolate pudding with chia that I love as well. I got that one from Maria Emmerich's blog.

Tomorrow I'm making the almond sugar cookies. We just ran out tonight. Ha!

Well Sharon, now you have to share the cookie recipe too! And the chocolate pudding recipe.

And do you use white chia seeds or black? My DD and DSIL couldn't get past the little black specks in the pumpkin lol. But DH and I loved it!

Sharon I third that cookie request and chocolate pudding recipe!

I wonder if I ran my chia through a little coffee grinder if that would be much different?
I wouldn't mind the black seeds - I'd think it was freshly ground nutmeg or cloves or something. (hint: I'm pretty good at fooling myself I guess! ).

Hi there!

The almond cookies came from Honeyville site. I get my almond flour from them and they send a newsletter. This was a video and is so simple. Measure 2 cups blanched almond meal flour in a bowl add 1 cup swerve and 1/4 teas baking powder. Blend together. In a separate bowl or measuring cup crack one or two eggs and add a teas. of vanilla. beat with fork and add to dry mixture. The dough will be slightly dry but sticks together. Use a cookie scoop and place on cookie sheet with parchment or silpat and lightly press down each one Bake at 350 degrees for 15 minutes. Let cool and sprinkle a little Swerve confectioners sweetener over top. That's it.
