Yes, MK - My DH and I were working in Independence about 5 years ago. We came home on the weekends.

Oh Sandy and Carolyn I must confess - I have a whole "wardrobe" of DaVinci sweeteners! I like them very much, but honestly don't use them that often. I have to come up with a use for them, actually. I bought them all at once when I started eating this way, and was worried I would fall off the wagon without something sweet. I also probably thought I'd be making endless cream cheese clouds and I have never made a cream cheese cloud. Not sure why... It's perfect for this WOE.

I want to see The Lone Ranger!! I am positive it won't be for a few days, though.

Took my mother to a gastro this morning, hoping to find a way for her to not have pancreatitis again... LOVED the guy. He was quick, sharp, picked up on my mom's otherwise perfect health and independent lifestyle, asked all the right questions, LISTENED and she will be having a little scoping (endoscopy) and an MRI.

Something she hasn't told my SS and me is that she is having daily stomach pain, even though she is taking omeprazole. She also takes some high-fallutin' arthritis prescription that is probably eating a hole in her stomach.

Doctor said the ulcer-ish condition could cause pancreatitis. The MRI is rule out some other reason about two ducts which should be connected possibly not being connected. Nice guy, and we are hopeful for finding a reason for this happening.

I guiltily confessed that my SS and I were eating a high fat diet and that my mother had possibly fallen in with our bad crowd and could her higher-fat diet contribute to this? He was unimpressed with my admission and also recommended no special diet for my mom. He was very thin himself, come to think of it... My mom has lost 10 pounds in a month since her pancreatitis - stomach pain.

Friend Buffy I am so happy to "see" you again and sorry you lost your long post.
I am DOUBLY sorry to hear little Ollie was diagnosed with epilepsy. I do hope this is something he can grow out of.... You have had a hard year of your own, and then for your grandkids.

Oh, so sorry to hear about little Ollie. I do hope it's the type he outgrows. You really have had a tough year. How is your grandson with the diabetes doing?

I used to have practically every flavor of Davinci's made and like you, Judy, hardly ever used it. I finally tossed them all as they took up way too much space.

I'm making some strawberry cheesecake popsicles today too. I had to go to 4 stores to find popsicle molds!! I sure hope they're good.

Hmmm, Carolyn, I must've done something wrong. My mixture was never clear? I did use my immersion blender to mix it but I made sure I didn't over mix it and make meringue, lol. I'll try again. I think maybe my skillet just wasn't large enough.

Judy, isn't it great when you meet a Dr who you actually like? Few and far between in my experience. I hope they get to the bottom of all this soon for your mom's sake.

Oh boy! Let me know how your popsicles turn out. I need to get more cream and fresh strawberries before I can try it. I found my pop molds at the dollar store.

Buffy I'm so sorry to hear your little Ollie is going through so much right now. Like everyone I pray that he outgrows it.

Jim how are doing? We miss you.

Dh smoked some sockeye salmon this morning and I had some for lunch. It's now my favorite way to eat salmon. Oh my! that will be added to our camping list. Love my new toy! We've done whole chickens in it and it's fab too.

We're still going through a heat wave. We've been in the 90's-100's for about a week now. Looking forward to cooler temps.

Have a lovely 4th everyone. I'm going to watch the fireworks show on TV. Our little furbabies get wig'ed out with the noise so hopefully there won't be any explosions in the neighborhood this year.

Hi everyone.

Judy, that arthritis med can do a job on your tummy. My min law couldn't take anything but Tylenol because her tummy hurt every time she tried something new. Let's hope your mom's pain can be resolved. An endoscopy will let the dr see what is happening.

My cute smart mother is bringing her potato salad and I will have one or two bites, but that's enough. Plus it's cold potatoes!

Hi ladies..

Went to our free zoo, which is fun to walk around..The animals were out and about so you could see them. We have a Cougar that was found in a tree in Tulsa last year.. He says hi to Judy.

I love potato salad..alot.

I'm making a hot cauliflower ranch dish tonight..Let you know if it is good..Got some expensive WalMart steaks..LOL..and a chopped salad..which is really good.

I do hope they will find a cause for your mom's pain, Judy..Not fun...at all..

I know we talk about B-12 a lot, but I tried the sublingual kind and it really wakes you up.
Dr. recommended it..I know you gals take it..I was getting the 3 o'clock slump, but this works great..Over and out.

And your body will dump the excess so you really can't get toxic on it. I use Costco's.

Carolyn I cannot wait to hear about your hot cauli dish. And tell your zoo thanks for finding my, er, um someone's cougar some irresponsible exotic pet owner unleashed...

I am always a little afraid to start whipping cream. I had an extra couple of teaspoons of SF vanilla pudding I added, put a kind of smallish stainless steel bowl in the freezer, then measured my hwc and decided to stick that in the freezer for a couple of minutes.
Of course it whipped up perfectly for the flag cake, but I'm always a little afraid it won't happen. It's kind of magic... And my first couple of attempts last year I failed at whipping cream...
I can't wait to eat that cake.

The Flag dessert was a giant hit! I did have trouble getting the cream whipped this morning. It's like my stand mixer is not running at full speed so I had to switch to my immersion blender with the whisk attachment and it whipped right up. Somebody even told me it was divine, lol. And another person told me when I said it was sugar free, gluten free and low carb that she figured it would taste terrible and how shocked she was when it tasted soooo goood!

I had beer and potato salad today too. Not a whole lot of either but I do feel bloated a bit tonight.

No fireworks for us, DH has to work tomorrow.

We're at dd's. Enjoying Molly, she does remember us & knows she's special to me.
I found some good straps & great duffel bag today. I'm feeling good about what we can rig up for carrying her on the bike now. I was a bit worried about "wind" hurting her ears... this should stop most of it. DH took her for a walk on the leash to the park & was impressed at how well trained she is already.
We just went out for Chinese food. Funny lady, was so worried about me ordering an entry & everyone else getting buffet... she practically made me promise not to eat any of "their food"... "no sharing"! So funny. She didn't speak very good English, wanted to say everyone has to have buffet, can't mix at table... Good thing she backed down.
We'll spend one more day here & then take Saturday & Sunday to get the rest of the way home.

Hi everyone...

Sounds like everyone had a nice 4th.. We did..The cauliflower dish was wonderful..No kidding..I think I will add that one to the new cookbook that Jennifer is making. I will change it as I think it needed bacon and post it for you all..

Whipping cream can be "funny" Motherinlaw used a cold bowl and cold beaters and cold cream..But, I love that stuff.

I am going to make Chicken Lady's Carrot Cake for our small group tonight. So many are diabetics and one gal is allergic to nuts and lots of things..so I guess I can't worry about that too much.

Poor dh..We normally love to watch the fireworks way up close (across from the cemetery, Judy), but someone invited us to their house to watch them at their house.
They watched them between the trees..not a good way to watch the works..

I heard The Lone Ranger was a bust...

I have been making peach ice cream..Honestly, I just used the Better Homes' recipe with unflavored gelatin and eggs and used Splenda and it came out great.

People don't realize how delicious our diet is..Real food..

Hi to you all...Better print out the recipe and get some carrots.

Both those dishes sound wonderful Carolyn. I can't wait until you post the recipes. I tried to find the peach ice cream one but am not having any luck? Can you point me in the right direction?

I was right, I'm up a bit today on the scale, which I fully expected. A little too much carb overload yesterday.

Here is the Peach Ice Cream I made..It is based on a vanilla ice cream recipe.

Two fresh ripe peaches, chopped..You can use more if you like, but it needs to be
pureed in your blender so that it won't mess up your ice cream maker..If you are using a 4 to 5 quart freezer, you definitely need to double the peaches.

Ice Cream ( I halved this recipe because I have a 2 quart freezer)
For a 4 to 5 quart freezer:

2 cups artificial sweetener combo
2 envelopes unflavored gelatin
6 cups half and half
6 beaten eggs
2 cups whipping cream
3 Tbs. vanilla

In a large saucepan, combine sweetener and gelatin. Stir in half and half. Cook and stir over medium heat until mixture almost boils and gelatin is dissolved.

Beat the 6 eggs in a medium bowl and add about a cup of the hot liquid and stir..Then return this to the pan. Cook and stir for 2 minutes more. Do not boil...Stir in whipping cream and vanilla and then stir in peach puree..Cool in the fridge.

Freeze in a 4 to 5 quart ice cream freezer..Makes 3 quarts..

Note: I didn't let my ice cream mixture cool very long so when it was "done", it was rather soft serve when I took it out and the next day it was firm after being in the freezer overnight.

KCity gals. Beth said this great movie is at The Tivoli. 20 Feet from Stardom. It's a document about some great backup signers. It was a Sundance film and Beth got to hear them live.
