It makes such a large serving, but DD saw it and said she would be glad to try it (I'm DYING to nag her into this WOE but am aware the good nagging does. ). She loved it. She loved the texture and how it broke apart a little bit. DH's regular wheat bun broke apart a little too.That flour mixture is a miracle. I wish Ouizoid could market it - I'd be a major purchaser.

Morning!
I woke up at 4:00 raring to go too Sharon, but stayed in bed and fell back to sleep. Just got up now and once I got up found out my mind had been messing with me at 4:00, I am not quite as raring to go as I thought. But, hopefully will get something done today and move a little more than I did yesterday. Just did not feel well yesterday, very weak. Cindy, that thread is what Judy and I have been talking about when we talk about the little cakes. Very good mixture and people have experimented a lot with it. What is nice, it is quick, simple and makes 1 small container, although, it is so filling that I think most of us use that as 2 servings. MK, so glad to hear Copper is bettter but ouch, poor DH. Glad you went to the ER so avoid infection, etc. Very very slight headache this AM which is progress, but, BP higher than it was yesterday AM. 1 step forward, 3/4's a step back. ![]() Need cottage cheese so think I will have DH take me to Braum's to get that and that will give me an outing. Carolyn, I made the jello SF cook and serve pudding in the microwave yesterday, using 1 cup cream to 1 cup almond milk. Worked great, so will keep cutting back on the cream and upping the almond milk until it won't set anymore. It might set with all almond milk but I never had any luck with Hood's low carb milk doing that. I have upped my carbs just a little since coming home from the hospital, adding more berries and things like the pudding yesterday. I am not logging but right now my goal is to get better, not lose weight. Of course I don't want to gain weight either. And, I did lose another lb so will trudge along. Figured the extra carbs might make me feel just a little better and make things a little easier in choices of food.

Well Debby, that reminded me, the Dr. put me back on diuretics, which probably explains the lb loss, but, that was a week ago, so not sure.

Carolyn or anyone who has a better memory than me,
I've just been back through our own thread for the last 5 or 6 days. I had some phantom memory (maybe) of Carolyn talking about chocolate cupcakes but she couldn't cut & paste from her phone. I found a chocolate cupcake recipe but want to see if it was the same. Carolyn am I making all this up?? Believe me, it would not be the first time... LC Chocolate Cupcakes For the Win (LiterateGriffin - LCF) Ingredients • 4 eggs • Sweetener, equiv to ½ cup sugar (I used stevia, with a touch of honey, since it was for school-kids… When I do it for me, I’ll just use stevia) • 1 tsp vanilla • 1 tsp baking powder • 1/4 Cup unsweetened cocoa powder (The best you can get – we use Ghirardelli) • ¼ Cup coconut flour • ¼ Cup coconut oil, softened • ¼ Cup water • ½ TBS apple cider vinegar Directions 1. Preheat oven to 350 degrees F 2. Add eggs, sweetener, and vanilla to mixing bowl. Blend well. 3. Add baking powder, cocoa, and flour, stirring well. 4. Add oil, water, vinegar. 5. Pour batter evenly into cupcake/muffin pan. If not using paper liners, grease pan well. 6. Bake on 350 degrees F for 25-30 minutes or until tooth comes out clean in center of cupcake Nutrition Facts 6 Servings Amount Per Serving Calories 159.8 Total Fat 13.4 g Total Carbohydrate 5.8 g Dietary Fiber 3.2 g Protein 5.5 g And the frosting (not included in the nutrition-label) was just a melted stick of butter stirred in with a cup of the cocoa, and enough sweetener to make it taste good. Pour it on while it's still all melted and runny, and let it cool -- comes out all pretty and smooth, like a commercially-frosted cake, but tastes WAY better! - - - - - edited to add: Carolyn I think this might be the right recipe - I just saw you posted on that thread a few days ago. That is the one for sure... I'm making the dumplings again with my leftover roast beef/beef broth/gravy/ I found that my electric skillet works best.. Yeah for you, Buffy..... I take back my good news about the fat % results. I have DH and I in the memory of the scale. I accidentally chose his profile and THAT'S why I got that wonderful result. I used his profile instead of mine, lololol. So not as good as I was wishing for. Ugh. Back to the drawing board.

My question about those dumplings.....I don't care for dumplings but I love noodles! If you made these very small would they be like homemade noodles at all????

Oh, Sandy..they are dumplingy..But, some peeps have rolled them out and cut them for noodles with some luck. I think you need a dryer dough for that and might have to add

DH found a really nice, like new treadmill in the paper and got it for $300, so now, MUST USE IT. |

Sharon that thread Carolyn mentioned - the Dumplings thread- is the one.
We managed to finish our giant amount of chicken soup I'd made before our trip. It's just so darn good and I was too lazy to try the dumplings. I may just make some in canned broth just to try them. I think someone tried making noodles and it might have been a fluke, but she thought they were quite good. I bought a noodler and someday intend to make noodles from that glucomannan powder. I'm a little scared to try it but now that I'm not working every day it's probably time to get my courage up! Sandy - your body fat % - LOL! We all know you are thin and fit. I think those scales are not so accurate anyway.... at least not so accurate I should run out and buy one. Buffy you mean I should dust my dear old perfectly-working treadmill? That seems like a lot of work... I wish MK would check in and tell us how Copper and DH are doing. |

Gosh I'm glad you got your flu shot Debby. That's a lot of germs to be around.
Good for you for taking a nap! I think rest/sleep is so restorative. My DH is sick with a cold. I don't think it's the flu because he is not achey. I'm singing in an ensemble at church this Sunday and I'm not THAT good in the first place, so I sure would like to avoid this. He is miserable. ![]() I KNOW! I had all my big workout plans around the removing the plastic of the DVDs then revealed I have a dust-covered clothes-needing-to-be-ironed treadmill!! ![]() |

I don't like tread mills. I have have the tv sky high to hear over the sound of the tread mill and I always feel out of balance on them so I can't walk unless I hold on. I wish I did like them. I prefer walking outside or even in the mall.
I would like to hear Judy's review on Slow Burn though as I think she and I have a similar exercise philosophy. Lol. Oh and Judy, I had that terrible bad cold. That's the one that turned into sinus infection, which I'm still struggling with. Anyhow, my DH didn't get so much as a sniffle from me so hopefully you'll escape it too. My fun lunch with friends stuck around a little longer than they did. I jumped up a couple pounds but I know it's water so I'm not too worried. I cooked Buffys chicken broth yesterday. I love that stuff! I took part of it, added a can of rotel and some sliced cabbage along with some of the chicken and made a soup. We squeezed a little lime in it right before eating it. It was yummy! I added some spices too.

Just have a feeling that I am going to have a little more energy today. That would be great. And, the neuralgia headache is getting better and with my BP down, that BP headache is gone. I am getting BETTER!!!! What a drama queen I have been ![]() Carolyn, I am so excited for you, your new Dr., the metformin and all your hard work is paying off for you. Sandy, my first treadmill was very noisy, we had it in our bedroom and I would try to walk on it first thing in the morning while the kids were getting ready for school, I would have to turn the tv up so loud to hear it, that it all was driving the kids crazy. That didn't last long. That was the first thing I told DH to check on this one, and it is very quiet. I also prefer to walk outside and look around but this gets rid of all the excuses I have if it is cold, rainy, hot, yada yada. ![]() My DH is coughing too. 3 days now. The flu came on for my DD and DGS very quickly, so I don't think DH has it either. But, with being weak from a cold already, it could sneak up on them at any time. Hopefully, I will get the 2 guest rooms made back up today, sheets washed and put back on, etc. I have done other laundry each day till I am now caught up. |
