Did you all read this??? She is "pretending" to be friends with us, all the while having stalked us for a long time before showing up one mysterious night, in that cemetary MK talks of. Me thinks she may be a spy from the land of High Carb, just watching and waiting for us to make a slip up so that we can be arrested and jailed, and, kicked off the board. Oh, the evil girl, that Judy

MK, can you let us know what is going on with your DH, sounds like he is going through some very involved testing, or, just point me to a post where you have talked about it. Wish him the very best. I am now peeking in on the Koffee Klatch thread, but lost so far.

I'm down 2 pounds this morning! WooHoo! I found my Natural Health & Wellness book this morning. Thought it was time for a refresher course.

I've been having a protein bun made with almond flour and flax meal. It last me well after the lunch hour. This morning I put half an avocado and cheddar cheese for a nice breakfast sandwich. So satisfying as it has coconut oil in it and a little cream.

Have a great day ladies! The weekend is just around the corner.

I'm making this for our Thanksgiving feast.

Cranberry-Orange Compote

2 cups fresh cranberries
1 tablespoon orange zest
1 pinch cinnamon, ground
1/2 cup sugar substitute

Instructions:

Make Ahead: Compote can be made up to 1 week in advance and refrigerated in a covered container. Bring to room temperature before serving.

Place cranberries, zest, cinnamon, and 1 cup of water in a medium saucepan over medium heat, stir to combine. Bring to a simmer and cook, stirring occasionally, until berries have popped and compote has thickened, about 10 mins.

Remove from heat and stir in sugar substitute to taste. Serve at room temperature.

I keep forgetting to tell you all, I made the cheese & wine bread from Ginny's Low Carb Kitchen and WOW. I think it's the best LC bread I've ever eaten!! I've only had it toasted but that was enough for me. DD was here at lunch and she had a piece toasted too and she gave it rave reviews also. I just used the cheese and wine pizza crust recipe which is the bread recipe tripled and made it in a loaf pan. I baked it for 25 minutes and got 8 slices out of it. I also subbed half & half with a tsp of vinegar mixed in it for the buttermilk. It's a keeper for sure!!!

Had a fabulous lunch today. A LC tortilla spread with peppercorn dressing topped with roasted chicken and an entire avocado! I love avocados and have been trying to work in 1 per day. They are roughly 250 calories each so I have to be mindful of that but oh, they are good! Been getting them at Costco.

I love avocados too Cindy. I've been getting them at Aldi for 29-39 cents each!! Today they only had 3 left, lol. And to answer your ?, yes I got a few jokes about Hurricane Sandy but all in fun. Maybe someday you can be a hurricane too, lol. Seriously though, my heart goes out to all those people who are still struggling with the aftermath of that storm and the new ones since. I really can not imagine how awful that would be to go through. My prayers are with them.

Carolyn, I take 500 mg in the am and 500 mg in the pm. Before I was back on LC I was taking 1000 am and 1000 pm. Not sure what to say on upping yours?

Sandy, running to find that recipe, hope I have everything for it. I have been wanting a good bread to toast sooo bad. And yes, Aldi's and my sprouts have great prices on avocados. Cindy, I love them too.

Shoot, I don't have the yeast flakes or the psyllium seed husk powder, I just yesterday order them online. Did you have them when you made it Sandy? I don't want to make it and leave them out, sounds like it is a part of making it so good.

I bought both items at Whole Foods Saturday. They have the yeast flakes in bulk so I only bought the teensiest little amount, just in case it didn't turn out good. I had to buy a $10 bottle of the P. Husks though, ugh. But all is well b/c it's really good!! I guess I should change the name to just cheese bread b/c I doubt I ever add wine to it. Except for me whining of course lol. Or wining maybe, just not pouring it in the bread dough, lol.

Hi Y'all!
Congrats everyone who's losing wt. that's super
I'm feeling better, getting things equalized. Just spent the last hour charting my temp., heart rate, & thyroid dosages... running out of my prescription & have to go in a week early, so I thought I'd better have the proof of my "tweaking" when I go see the MD to get a refill. He'll probably think I'm OCD oh well.

Taking the pup for a walk in the freezing cold seems to make for a better night sleep... bummer! So, will have to dawn all the clothes & do that before my work-out. Trying out my boot-supply, good to know what's what. Its looking like I will still have to buy the new ones, so far.

Funny conversations... Judy's not a stalker! You're a full time friend here, from what I see. I feel kind of like that when I have nothing to say, but I like all of you!

Hi Carolyn,
Thanks It is good to feel better!~
Yep, in Canada, a little more then half way up British Columbia... almost the same longitude as Siberia!
We had our walk... this time I used my leather-lined boots with the cleats attached. They stayed on! And it was good walking... feet weren't cold. However, they're just short-boots, just above the ankle... fine for plowed road... Note to self... take a neck warmer! My face froze! But Shelby had a blast.

Carolyn, you have your turkey ready? A bit early, isn't it? I cooked another turkey (for me) 2 weeks ago... still enjoying it!

DH has an abscessed wisdom tooth on the same side he had radiation 5 years ago. They're afraid when they pull it, the gums won't heal because the radiation has killed the tissue. The Hyperbaric Oxygen treatments (HBO's) are to (hopefully) aid in the healing process. He'll do 20 treatments before they pull the tooth and 10 afterward.

They're kind of a pain since he has to lie in a Snow White coffin for 2 hours every day. You can watch TV but can't read or have an iPod.

So, now I think you're caught up! Thanks for asking!

Sandy - I don't think I'll ever have a hurricane named after me!
Enjoy!!

A friend (named Sandy) went as a hurricane to a Halloween party!

I'm tired and cranky so off to bed!

After the hurricane Sandy was imminent, Buffy innocently spoke about our dear Sandy and I thought she was talking about the hurricane...

But you can see how I loved them even though I hadn't "talked" with them!

They're kind of a pain since he has to lie in a Snow White coffin for 2 hours every day. You can watch TV but can't read or have an iPod.

So, now I think you're caught up! Thanks for asking!
Well that's not funny in the least. In this age of constant entertainment in one form or another, 2 hours is FOREVER. Bless his heart and bless his tooth!! Seriously.... Edited to add - well at least he can watch TV. Although WHO just watches TV anymore? Don't we all do 10 things at once? Poor dh!
