Ok Judy, how did you end up with corn fiber and where did you get it and what do you use it for?
Did you see that I can grind popcorn in my vitamix, if I should choose to do so. That corn bread of chicken lady's does look good. I have always loved cornbread and chili and other soups. |

You are about to end up with some corn fiber because it's in the mail today. So we'd better start finding what in the world I was thinking of when I bought it 6 months ago! ![]() I am afraid to grind up popcorn. There. I said it. I love each and every one of my far too many grinding devices and would hate to lose them to popcorn meal. After posting in that thread a couple of days ago it sent me on a mission for cornbread, and I think I got a couple of good ones, but I am about to decide to just use Maria's sub, made in my muffin top pan, tear it and toast it and freeze it for stuffing/dressing Thanksgiving morning. I always end up buying some weird turkey pieces separate from my actual turkey. In the past I've used it for pieces in my dressing and to make gravy a little early.

Mary Kay! *whispering* she's probably already lost the two pounds she wanted to lose! ![]() Buffy, someone on the official best stuffing recipe thread suggested Maria Emmerich's site for her Baby Corn Bread recipe. She uses a 15 oz can of baby corn, well-drained and chopped fine. drjlocarb said it added a lot of corn flavor. Might be a way to substitute baby corn for popcorn meal. Maybe? |

My pecan pie and pie crust turned out good. DH says it's a keeper. I'm now overloaded with SF LC desserts. I wish they'd all keep until T-giving so I wouldn't have to re-make them.

Hi!Looks like you're all cooking up a storm. I had a good day. Decided to walk Shelby with a leash, to train her not to run so far ahead of me. She's getting a bit too brave. She put up quite the dance trying to get rid of it. I guess I need to learn how to teach her too.I'm getting ready to buy a Flex Force. Looks like it would be good. Have any of you used one? Apparently strength training is the way to go as we "mature" ![]() I added an apple to my daily diet, cutting back on my prunes... have to make a concentrated effort to eat all my vege's & fruit now. A new project. Have a good evening!

Just got back from the dinner club outing. This month we got together with some other gals and went to Painting with a twist, where they walk you through painting a picture. It actually turned out to be a lot of fun and I am kind of proud of my result, didn't think I would even keep it.
I have heard the baby corn recipe before, that sounds better to me than trying to grind popcorn. I paid way too much for that vitamix to chance breaking it on something like that. Good, cant' wait to get the corn fiber, now tell me what to make with it, LOL. Hi MK! Debby, you have entered an entirely new phase, we will all learn from you.

the filling is from Peter Reinhart's The Joy of Sugar Free, Gluten Free Baking cookbook, pg 197. I'd still love to make Kevinpa's recipe from this site but haven't found the isomalt yet or the resistant wheat starch. If I can't find them somewhere local I think it's too late to order for T-giving. Maybe for Xmas. I'm not sure what the protocol is for sharing a published recipe? I got his cookbook from the library to check out his recipes and this one caught my eye.

Oh dear - I've been posting recipes that are definitely not my own, but hopefully with proper attribution.
I have both of the Low Carbing Among Friends cookbooks. Let me know if I shouldn't post recipes - you're right, there could be a copyright infringement. I am almost positive I bought resistant wheat starch from netrition - they must have it because the words are a hyperlink. I've never used it because by the time I started actually eating this way, I'd cut out wheat. Maybe I didn't need to cut this out, I don't know. |

Morning everyone.
Sandy, I don't think we can share a published recipe, but I am not sure. My weight is bouncing a little this week, no additional loss since Tues. but the bounce is now no higher than 194.4 so that makes me happy. I have trouble getting all those calories in when I go somewhere in the evening, like the painting party last night. We had snacks but just a couple that I could eat, so I didn't eat much and didn't want to eat when I got home at 10 or so. I left mid-afternoon to get some errands ran before the party so my calories were a little low yesterday. Today I go back to the urologist for a follow up on my UTI infections. Only had 1 since started back on LC so I am pretty happy with that, compared to getting one after another back before I changed WOE. |

Lots of the Low Carbing sites do publish their recipes on facebook or on their blogs. Which doesn't necessarily mean it's OK to reprint? Not sure. |

Yes Carolyn, the LC helped in so many ways, as I knew it would, just had been stubborn and lazy.
Bet Gary is so excited to get his giant new toy!!! I have mainly been talking about cooking too, more than actually doing it, but by gum, I have every ingredient now that is known to LC land ![]() Just found out that DS does not get the day after Thanksgiving off, so they won't be coming up from Austin. He feels bad but I don't want them and Ollie on the road most of the day just to be together for a couple of hours. So, looks like DD#3, DSIL and Grant, Dave and I. |

I looked EVERYWHERE today and resistant wheat starch is NOT to be found in this town! I did find isomalt though, which surprised me. And only about a mile from my house! I also can't find true, pure lard. I told them at the HFS that there really wasn't much more natural than plain old lard, lol.
I really wanted to make that pie crust of Kevinpa's. I'd like to find a wonderful, regular type pie crust but that might just be too much to hope for or expect. My DH is going to be so jealous of your DH Carolyn. He thinks he wants a big, new snowblower too. |

You know, Sandy, I didn't think to check at the library.
I think I'll do that - thanks! Buffy I'm sorry your DS won't be able to come up. Sounds like a cozy group. And I HEAR YOU on having every single LC product available to all Christendom (so close to Christmas ). We nearly need to build on a new wing to house all this weird stuff.I bet it is easier going LC now that you feel happy and full - and these newer sweeteners are the bomb! MK thank you - it makes sense to be able to post a recipe I got from the web. Carolyn perhaps you should ask for ear muffs for Christmas - to go with the new snow blowers? |

I bought some oat bran today, thinking it was the oat fiber. So I wonder what I can do with the oat bran, lol. I also bought some more almond flour, (great buy!!) some more yeast flakes, and some vital wheat gluten. Just in case a need arises, lol.
MK, I finally found some ear muffs like those you got last year. Now I just have to wait for the cold weather to wear them and enjoy my podcasts thru them! I better get those organized so I'm prepared. I agree, if a recipe has been posted I think it's fine to repost it. I just couldn't find the pecan pie recipe anywhere that was in this new book. Buffy, this pkg of isomalt does say something about making hard candy with it! I instantly thought of your toffee. I think it can have sugar alcohol effects though if you eat too much. But that little side effect always made me limit myself quite well with other SF candies. We have another beautiful pink sunset here tonight. Red sky at night, sailor's delight! |

Judy Dh's Brother is having us both to there gathering. I'm in charge of a green salad. That I can do with my eyes closed. I plan on bring some things for myself as I know there will be full sugar/wheat/grain at the table. She knows I will provide for myself so there isn't a problem. Funny though everybody wants some too so I make more than I need.
Sandy I have both low carb friends cookbooks too. I'll be sure to look for that crust for the pie I want to make. Fixing foods this new way is a whole new experience. I'm so glad for the cookbooks! We took the dogs out in the woods today to meet up with Dh's brother's new little girl. We had fun hiking around and our boys like there new girl. They now have 3 dogs. It will be a lot of fun next year when we get together for our camping trip. Waving to everyone. See ya' later.
