OMG, I just took the pumpkin muffins out of the oven, I made them into 12 muffin tops and added 1/2 cup chopped walnuts. Let's just say that the one I had in my menu for dinner didn't make it to dinner, got gobbled up along the way!!! I also didn't frost them. Will put in my recipe builder and see what making 12, adding nuts and no frosting does to nutr counts so that I can log it. Winner!

I made some PB fat bombs tonight..LOL..1/3 cup of pbutter, 1/3 pack of cream cheese/ 1/3 cup of butter. I did have to add some sweetener..

![]() Pumpkin Muffins (or pumpkin BREAD) (My mother made these 9-18-12; made 9 regular-sized muffins) (Maria Emmerich) 1 ½ cups blanched almond flour ¼ tsp Celtic sea salt ½ tsp baking soda 1 tsp ground cinnamon ½ tsp ground nutmeg ¼ tsp ground ginger 1/8 tsp ground cloves 2 TBS Butter or Coconut Oil ½ cup Swerve (OR 1/3 cup Erythritol and ½ tsp stevia glycerite) 3 large eggs 1 cup fresh OR canned pumpkin In a mixing bowl combine almond flour, baking soda, salt, and spices. Mix butter, sweetener, eggs and pumpkin until smooth. Stir wet ingredients into dry. Grease or place paper liners in muffin tins. Spoon batter into the pan. Bake at 325° for 30-40 minutes. Cool and top with cream cheese frosting! Makes 6 servings. (ours made 9 regular-sized muffins) FROSTING: 4 oz cream cheese or coconut cream 2 TBS unsweetened almond milk (I would use HWC) 3 TBS Confectioners Swerve OR a touch of stevia glycerite (to taste) Mix together and place a dollop on top of muffins. For 9 servings, MasterCook says: Cals: 220; Fat: 19; Carb: 7; Fiber: 3; Protein: 7 So - a little high on protein for our plan, but absolutely worth it, IMO.

For any of you who have made both the Almond butter bread and Widget's hamburger buns, which do you think would taste best with chicken salad? I want to make one or the other for lunch and they both sound good.
Busy week since I am going out of town over the weekend. And, we have roofers here so sounds like a herd of elephants running around on my roof. Should be finished by the end of today though. DD #2 is coming on board with the LC/MP/HF to try to lose 10 lbs before she has her tummy tuck and boobie job in mid-Oct. She had the 2 kids just a little over a year apart and needs some repair work done and is fortunate enough to be able to afford it. She got a good start the last few days but leaves tomorrow to take the kids to Iowa to see her dad and stepmom and they don't know LC from green grass. She isn't sure if she is just going to go with the flow and start again when she gets back or try to do it there. DD #3 is in her 2nd week now and really excited about it and plans on continuing, yay! I had her come by and get some of the pumpkin muffins yesterday and made her some of that chicken salad on Sunday. She lives close enough she can run by. She just sent me a text, she is down 4.4 lbs and so excited!

The soup recipe looks so good. I just had to make a copy of it.
As of this morning I'm down 10#'s. I'm so relieved to have those pounds gone! I like to think just 10#'s at a time. LOL. Have a great day ladies. |

Still staying below 200 but just a little above the 10 lb loss I saw 2 days. Soon, very soon I hope for another little drop.

In fact I haven't really found a good bread substitute that doesn't have too much protein. Obviously you have to go over protein sometimes - as long as it doesn't knock you out of ketosis I don't think it matters as much. Taste-wise I liked Widget's hburger buns fine - but it didn't knock me down. I'm always searching.... |

I decided to just skip the bun idea and just ate the chicken salad. Don't want to get into trying to make too many things with the nut flours, etc., I really think I should strive more right now to kiss. Fat, protein/ carbs. With that, I changed my menu from what I had planned today.

I could be wrong, but I started thinking that it would be very possible for me to make a whole bunch of things and they would taste great and probably even fit them into my numbers....and then wonder why I wasn't losing weight.

Swerve is expensive, but it sure is convenient. I think, though, it's mostly erythritol anyway, so.... I have a bunch of erythritol I'll be using as well as Swerve.
Carolyn, on a separate note, I want to get my thyroid tested. I've gone on that stop the thyroid madness site. To start, should I get all these tested? Reverse T3 TSH free T3 free T4 Or is the Reverse T3 overkill for a starting point? I think there are some docs here who will be willing to pay attention to these things, but I need a starting place. Should I ask for a saliva test to test adrenal function? Or Debby feel free to chime in if you are able. Or since I'm just starting - which tests to get to start? |

Morning!
Off to see my endocrinologist this morning, it has been 4 months since last visit. Will be interesting to see what this past 3 weeks eating does to all the tests, etc. Will be more interesting at the next visit I am sure. I know today that my fasting BS will be the lowest it has been and my weight the lowest it has been. And, I get to tell them that I, on my own, started back on LC and lowered my meds a teeny bit, they may or may not be happy about me doing that on my own. Than a not so fun errand, DH and I are going to see a customer who is not paying and won't take or return my phone calls. Finding out that they didn't have the money in their budget when they hired us, that just makes my blood boil, why do people do that to other people, and, it is a substantial amount! Next step is a lawyer. |

Hi all,
Buffy I am excited for your doctor appointment and I pray the non-payer sees the correct way out of his original poor choice. There's an answer to everything. Debby I pray the same for you and your dh!Working working working. I made that ranch dressing last night I posted earlier from Jennifer Eloff. I bet it tastes even better today, but it made a LOT and it tasted good. I would really like to make my own mayonnaise because I don't want the soy oil. A couple of recipes I've seen need whey added and they sit out for 9 hours? Not sure. Kind of wanted something small and simple. Hope all have a good day today. |

Hi ladies..
Down to 153 from my cruise high of 157 on Monday..I think that was mostly water cuz my legs looked bigger..hmmm..now they are slightly thinner..LOL.. Yup, Judy, what Cindy said is perfect..This is what I did..I travelled to Wichita to have those numbers done and then found a PA in the next town over who actually "got it".. In fact, she is in Coffeyville, KS, which is 85 minutes from you, Judy..She also gives my bioidenticals.. Oh, Buffy..bad customers are the worse..Good luck to you and your dh.. Hey, on the pumpkin muffins..I realized that I had bought an acorn squash the other day and I'm microwaving it for the "pumpkin" part in the muffins..We will see how they turn out.

Ladies...You must listen to Jimmy's latest podcast with Jenny Ruhle..the blood sugar expert. On her site she has a calculator to figure out how many calories we should take in to lose weight..
I'm going to check it out..Her "deal" is that if you are in your 40's and up and are a woman, you can't eat a lot of food.. and lose.Just checked and it makes sense..Blood Sugar 101 is the name of her site..Then you look at the top of the page and hit Diet, then the nutritional calculator will pop up..
