Morning!
Beautiful day here in TX, love our falls. And springs, and winters, just not July and August ![]() Got my order from Netrition, that was fun. I am like a kid when I get stuff in the mail, as good as Christmas!!! Wow, I am on day 16 of my new WOE. Seems now like it has flown by. DD didn't call last night, I hope she did good. On my tanita scale my BF % was down a little, hope to see that stick and continue downward slowly. |

Good Morning Ladies!
Fall is my favorite time of year also. I love the fall colors and that crisp chilly feeling where you just need a little something on your arms. We're thinking before it gets to much like winter we need a new wall heater. That looks like the major buy for us this year. Our heater is doing some funky stuff and it's the original so it's time to update the poor thing. It's grocery shopping day for us and it's discount for the old folks at our natural food store. If I can get Dh interested maybe Costco too as it's in the same area. Scale is still the same today. I'm so impatient. I want to see some new numbers! LOL! Check back with everyone later.

Judy, after 2 weeks on this WOE I now totally am getting your thing about not really wanting to eat. I am not hungry at all! Just in the evening if I am home and watching tv and we all know that isn't hunger, it is HABIT!

Did any of you see Kirstie Alley on Dr. Oz yesterday. I have her problem. I just love to eat. Even if I'm not hungry I can eat. Not eating is always a struggle for me and I'm afraid it always will be. On good days I can talk myself out of it and reason with myself but other times I just have that urge to eat. And I'm a big eater too, like she said she is. I think I eat more than my DH!! I love food!!! That's why I have to be so cautious and watch my weight so closely. It can get away from me pretty fast.

I didn't see that Sandy, I don't watch Dr. Oz. Yes, I think Kristie has the same problem so many of us have and I applaud her for being so public and open about it.
I also love food and love to eat, just the pleasure of it. Like someone on the main board said one day, I miss my binges!!! I understood completely. Used to do that when DH went out of town, went to the store, got all the goodies I could think of and came home and ate, ate, ate! Glad to have that monkey off my back, at least most of the time.

I just knew it.
As soon as Carolyn takes a few days off, we're talking about binges. Sweet, sweet binges. (turning my head away) NO! My blood ketone reading was 2.2 a couple of days ago! Must resist! Pork rinds! (kinda the desperate non-binge food, right? Because....ew) Heavy Whipped Cream! Artificial Sweetener!!! ![]() Oooh! I'm going to post a recipe my mother made for us yesterday. These are absolutely delicious. |

Pumpkin Muffins (or pumpkin BREAD) (My mother made these 9-18-12; made 9 regular-sized muffins)
(Maria Emmerich) 1 ˝ cups blanched almond flour Ľ tsp Celtic sea salt ˝ tsp baking soda 1 tsp ground cinnamon ˝ tsp ground nutmeg Ľ tsp ground ginger 1/8 tsp ground cloves 2 TBS Butter or Coconut Oil ˝ cup Swerve (OR 1/3 cup Erythritol and ˝ tsp stevia glycerite) 3 large eggs 1 cup fresh OR canned pumpkin In a mixing bowl combine almond flour, baking soda, salt, and spices. Mix butter, sweetener, eggs and pumpkin until smooth. Stir wet ingredients into dry. Grease or place paper liners in muffin tins. Spoon batter into the pan. Bake at 325° for 30-40 minutes. Cool and top with cream cheese frosting! Makes 6 servings. (ours made 9 regular-sized muffins) FROSTING: 4 oz cream cheese or coconut cream 2 TBS unsweetened almond milk (I would use HWC) 3 TBS Confectioners Swerve OR a touch of stevia glycerite (to taste) Mix together and place a dollop on top of muffins. For 9 servings, MasterCook says: Cals: 220; Fat: 19; Carb: 7; Fiber: 3; Protein: 7 So - a little high on protein for our plan, but absolutely worth it, IMO.

Judy, we must be on the same wavelength, I've had muffins on the brain lately. Those sound good but I'm really anti-pumpkin, terrified of eating the stuff but there aren't a lot of subs for it that work like it does. I found a almond flour muffin over in the recipe boards. I think Buffy commented that she liked them.
Almond Meal Muffins (From Melisa82) 1.5c Almond Meal 3Lg Eggs 1.5tsp Baking Powder 1/3c Sour Cream 2tbs HWC 3tbs Melted Butter Sweetener to your liking Mix everything in a bowl and scoop into a muffin pan. Bake at 350* for 16-18 minutes. Makes 10. Breakdown per Muffin: Calories 191 Fat 17.3g Carbs 3.42g Fiber 2g Protein 4.3g How did they turn out Buffy? I was thinking of giving them a go and maybe adding some bacon. I used to love bread and bacon together. I really like that the high fat low carb is taking off, there are some really great sounding recipes that have been showing up on the boards.

Yes, like Judy predicted, Carolyn is gone and here we all are, running with scissors!!! The almond muffins were kind of bland but I can see all kinds of possibilities with them. What I liked is that they weren't sponging like you get with flax types of breads. The texture reminded me very much of cornbread. They were great right out of the oven with butter on them. The next morning I sliced one into 4 little slices and toasted them and put butter on, good also. Next time I will add some type of flavoring or spices. Judy, the pumpkin muffins sound very good, will try that one as well. Could easily be worked into a meal where you keep your other protein low. Jess, wow on the pumpkin thing! Another nice day, just doing the usual around here. Need to reorganize some of the cupboards in the kitchen to accomodate my new LC cooking and baking products. I like to have things close and handy where I can see and find them but hate having too many things on my counters, well, I don't hate it, would actually live like that if it didn't look so messy. |

I don't think I like flax meal AT ALL.
The couple of things I tried were not good to me. They smelled a little fishy. I haven't thrown out my flax meal (it's in the freezer), because I can see using it in small quantities for some recipes here and there. Over all, I prefer almond flour and coconut flour. We should get together and purchase some coconut-growing enterprise! ![]() Buffy I'll post that recipe. They are really good. |
