Chocolate Mocha Brownies..
Ingredients: 8 ounces unsweetened baking chocolate (100% chocolate) 4 tablespoons coconut oil or butter, melted 2 large eggs, separated ½ cup coconut milk (or sour cream) 2 teaspoons vanilla extract 2 cups ground almonds 2 tablespoons coconut flour 1 cup chopped walnuts ¼ cup unsweetened cocoa powder 2 teaspoons instant espresso powder (or plain dried instant coffee) Sweetener equivalent to 1 cup sugar or to taste (e.g., liquid stevia, Truvía, erythritol) (Me: be sure to taste the batter before you bake it to make sure it is sweet enough) Preheat oven to 350º F. Melt chocolate using double boiler method or in 15-second increments in microwave. Stir in melted coconut oil or butter. In small bowl, beat egg whites until frothy. Add egg whites, egg yolks, coconut milk, and vanilla extract to chocolate mixture and mix thoroughly by hand. In separate bowl, combine ground almonds, coconut flour, walnuts, cocoa powder, espresso, and sweetener. Mix thoroughly. Add dry mix to chocolate mix and mix together thoroughly. If dough is too stiff, add additional coconut milk, one tablespoon at a time. Place mixture in 9-inch square baking pan and bake for 25 -30 minutes or until toothpick withdraws dry.

I walked this morning, hit the grocery store and then the carpet store to pick up some carpet samples.
I NEED to get the LR etc finished!!! The owner is coming on Wednesday to measure, we'll order and hopefully it'll magically appear soon. Thanks Carolyn!!! |

Hi..
Let me figure out that nutritional information, Sandy..The only real carbs are the ones in the almond flour..I'll do that this afternoon. New carpet????? How fun, how fun...I am so boring with carpet..I always go with beige..LOL.. 154 this morning...salty stuff yesterday..I got some bratwurst patties (frozen) from Wallie..They were fine..I think I like the hotdog shaped bratwurst better..LOL. Nice hot day today.. |

Bobby is 4 already? Have fun at the party...
I made a 3 bean salad for tonight's group. I forgot how easy it was..subbed Splenda for the sugar in the dressing..used one can of green beans, one of wax beans, can of kidney beans, all drained and rinsed..1/2 red pepper cut up and some green onion..Dressing was oil/vinegar/splenda/salt/pepper.. |

Carolyn, you don't have to figure the info, I can do it. I just thought if you already had it from the Wheat Belly book.....
No problem. We spent the day at the lake with DDs whole family including the baby. I know I'm biased BUT he's got to be the cutest, sweetest baby boy in the whole world!! Lol. My whole world anyway. It was too windy to get on the lake but we had a wonderful day just sitting under a shade tree enjoying the breezes off the water. Very relaxing. Then we stopped for a slab of ribs for dinner and are settling down for the evening and are going to watch a movie. We also took the dogs for a long walk when we got home. They were ready for that. We've got the grand-dog this weekend too. Yesterday we went to Ft Leavenworth to the National Cemetery there. That was a very solemn, moving experience. Neither one of us had ever been there! I think it said the oldest grave was from 1843! I'm not positive about that but I do know there were a lot from the Spanish American war which I thought was amazing. It's a huge cemetery. May they all rest in peace.

LOL..on celebrating Mother's Day and enjoying the day..
Cemeteries are so interesting, I think. That would be an interesting trip to Ft. Leavenworth, Sandy. So glad your ggrandson is so sweet..I work in the church nursery once in a while and I think we have some baby boys your ggrandson's age..(all around one). Two of them are sooooo darling and good natured, then there is Kolton, who was a premmie last August and never developed much body fat..He is a little more owly..LOL.. Tonight we are grilling a WalMart steak..(the ones on tv..lol). Hope it is good. Have a good day. |

DH grilled hotdogs, hamburgers and brats, I made a few salads and brownies. We also bought stuff for s'mores, but we were too full. Just us + DS19 and his GF, but we had a good time! |

Such busy weekends! It looks like everyone had nice holidays
![]() This has been a very stressful past two weeks for me. My uncle who had been placed in hospice passed away late last week. It was almost a relief for the family, he was just in so much pain and on so many meds, but he fought all the way to the end. I’ve only been to a handful of funerals in my life but I’ve just had two in one week. My BF still isn’t used to my big and rather affectionate family, after leaving the viewing he told me he didn’t think he’d ever been hugged and kissed by so many people in an hour before. I think it can be a little overwhelming for him at times. Hopefully things will start to calm down now. It’s been so hot and humid here the past few days. I gave up the fight and turned on the AC yesterday. I just can’t sleep when I’m hot. My BF and I bought our first grill yesterday. It was one of the cheapy kinds but since we don’t know just how much we may like grilling and it’s just the two of us we didn’t want to get some big expensive thing and not use it enough. Unfortunately we bought the wrong hose to connect the propane tank to the grill and I had to order the right one as our local store was sold out. So we will have to wait a few days to try it out for the first time.

Morning!
Woke up yesterday with yet another UTI, Dr. is talking about sending me to a urilogist, not sure if I spelled that right. I am waiting to hear back from my doctor on whether he wants me to come in or what. I had some old antibiotics and took a couple of those which will mess up the culture, but I couldn't stand it yesterday. DS called this morning and he sprained his ankle really badly yesterday and might want me to come down to help with Oliver. Hopefully, things will start looking up here in a while, LOL

Hi gals..
Sorry about your uncle, Jess..but the poor guy suffered enough. Good idea to buy a cheap grill to see if you use it....We never buy really expensive ones, but love the gas thing..Get a cover for your grill..It really saves on the wear and tear for little money. Our AC has been on for months.... Oh, Buffy..sorry about your ds..I feel his pain. There is nothing worse than a UTI.. Hope you are feeling better soon.Our WalMart steak was the "thin" kind..It was okay..and served the 3 of us nicely. I gave Brett the Slow Burn book by Fred Hahn and he took his 10 pound and 25 pound weights to use..I told him to read the book first..LOL.. We had rain, too..but still is a bit hot...such is summer. I am making spaghetti with the No Oodles tonight. Like shirataki, but not so rubbery.. I was 153 today...I had a NO taco chip Mexican experience on Sunday..LOL |

I've had my AC on for many weeks already. I dread the electric bills this summer. DH works out in the heat all day and when he comes home he wants COOL. I can't say I blame him.
It's supposed to cool off a little bit in the next few days. I hope it does. |

Cindy, love the pictures! DS said ankle felt better today and xrays showed no fracture which was great news. Dr. called in another antibiotic for UTI and I am to go in in 2 weeks to make sure it is completely gone. Still so tired, is it the infection I am fighting? Geez, I am so tired of being so tired. Rain, thunder here, we need the rain, just hope it doesn't come to fast and cause flooding. Some people getting hail, most people in our neighborhood have new roofs, we are one of the last to be replacing ours since the last bad storm, we haven't hired a roofer yet, maybe it is just as well. Office work today plus a couple of loads of laundry. Need to go to grocery store but will wait until rain is over. Afraid my AC has been running for weeks as well, can't sleep when it is too warm and if I try to sleep with windows open I get sore throat, and the bills in the summer are horrid. |

Hi ladies..
Oh..Victor is adorable..and turned out to be so gorgeous... Buffy: I do think infections tire us out..Hopefully, that UTI will be GONE soon..Glad your ds is better, but a "twist" is still painful. I've decided to exercise in shorts this year..LOL..but not those shortie shorties..I found some nice length Wallie ones for $10 and they fit great..(not the size I want to be, but they feel good).. Down to 153 today..I am hoping that my new hormone creams will help with weightloss... |
