what type of fat to cook with?

which type of cooking oil is best to cook with. Which is the most in saturated fat to cook with? i use olive oil for somethings but if i want to fry something I usually use canola oil but i don't think that is good right?
which should I use?

I get the LouAnna brand of coconut oil at Wallie and cook with that. I think olive oil can be used if you are sauteeing, but not high heat frying.

That's fine..Lard..

I don't think crisco is so great to cook with.

I use Spectrum non-hydrogenated palm oil for a solid shortening, macadamia nut oil for a liqiud and butter. Lard is also a good choice. I also have cold expeller pressed coconut oil and the plain stuff coconut oil. Boy, I have a lot of fat!
