Yeah...Sandy..I will have to check the water level tonight. I really don't want her in there, but she needed to cool off..

Methinks this turnip tater recipe is a winner. I'm baking it now and will post the original recipe with the taters and just tell you to sub cooked turnips. You can serve it hot or cold (after you cook it). My friends have made this in the crockpot to take somewhere.

Doctor gave me a 10 day antibiotic and the good prescription cough syrup. I feel worse tonight but expect to feel much better by morning. Thanks for all the good vibes!

Carolyn, how was the falafela? I have to do that!

How did you like the sour cream in your German salad? I'm thinking you could not add the water or sour cream and stop right there if you wanted to but I may be wrong.

We had meatloaf for dinner (bison) and summer squash from the farmers market. My BF also had a baked sweet potato. I made a version of Lauren's chocolate cake over on the recipe threads. I made a vanilla version with cannaloni beans instead of black beans. It turned out more like a blondie than cake. I used Truvia and honey and a lot of vanilla. No beanie taste. The chocolate cake was fabulous! A keeper.

Good morning all. Hot and humid again but to break this Sunday. I'm typing with 1 hand as DC14 has taken up residence on my lap. DHOR 27 is fat and sassy. Vet comes out Tuesday to evaluate whether we need another months treatment. My tomato plants are loaded with green baby tomatoes.

Boy, a lot of star deaths yesterday. Very sad.

Hi kids,

Cindy, well, you could skip the flour/water/sour cream part and have a regular
German tater salad dressing..The sour cream makes it really rich tasting..

MaryK: Yup, I understand about having experts in theater in your family.. But my dd is very gracious to "other" actors unless they are really bad..LOL..

The falalfel was good. I might have cooked it a tad too long and held it in the oven until dh got home. Next time, I won't do that. The recipe said to fry it for 5 minutes, but 3 minutes was about right.

Buffy: Those antibiotics take a while to kick in, but we are so glad that you went to the doctor..Get better, friend..

Morning! It's another hot and sticky day here!

Hi gang,

Did a bit of treadmill, then Dianne and I did 3 WWagon calls..It is hot..Dh is on his way home from working on Saturday..We might go to Lowes and look at deck books to get an idea of what railings we would want.

Hugs to you, MKay..She will be home for big holidays, no? I'm hoping that she really enjoys it..and has a great experience..

Cindy: You are getting very techno, girl. So glad that Pumpkin is her old self.. Hope she and her son can cool off in this hot weather.

How's our Buffy today? I hope those meds kicked in.

Sandy: Beth was cooking lamb chops for the "girls" last night..Shawn is in Wisconsin..
She loves it..not like her mother.

Busy busy day here. DGS came to spend the night and after he got up we went over to other DGS's house and hung out at the pool for about 4 hours. Then oldest DGD came over and we all went down to The Plaza to Fogo de Chao for dinner for their good grades. It was wonderful.....again. Then we drove through the local park with the dog and looked at all the deer before they let the sharp shooters loose on them. There's a real overcrowding problem and they're going to feed the poor with the surplus I guess. I don't want to go watch that event for sure!
We had some lamb at the restaurant tonight and liked it too. Maybe we just like lamb period now, lol. I still wouldn't order it for my only entree though. Not yet.

We've cooled off very nicely this evening after another blistering day. I'm ready for some cool weather for awhile.

I'm sorry about Michael Jackson's death, but yes, I do think they're overdoing it a bit on the TV coverage myself. And poor Farrah's death has been terribly overshadowed by MJ's death. I heard one of the reasons she let that whole documentary be made in the first place was to try to further the cause of cancer research and treatment so I really wish it wasn't getting lost in the media circus that seems to be going on right now. May they both rest in peace.

Morning chicks and rooster.
Wow, just woke up at 9:45 this AM, the first night I have slept this well since getting sick. Except for a brief bout of coughing, I slept well and it felt sooo good. I guess it is getting older but I really thought that I would pop back quicker than I am, and the fact that I went in after being sick only 3 days instead of waiting a week or more. But, it is coming so I can't complain. We are leaving Thurs. to drive back to Iowa for Dave's 50th class reunion next week end so I am hoping to feel totally back to normal by then.

And, I have to figure out what I am going to wear, they actually have 3 times that they get together. My clothes are getting baggy again, they had gotten that way last fall, then I started slowly gaining back, so I will have to go through and find things that fit pretty well. I have lost a little over 11 lbs now since starting Byetta. Except for my week in almost zero carb land when I got down to 206, the lowest I got last fall was 209 I think, so I am within 4 lbs of getting back down to that, then hope I keep on moving towards onderland.
MK, I can tell you are really feeling pain with your DD leaving the nest. Bless you, it will be ok but I know it is hard. Glad you are enjoying this time with her.

Yes, the deer in the midwest have become a huge problem. When I lived there 30 years ago we had deer but didn't see them that often, now I don't know anyone from the midwest who hasn't hit one with their car. Most of my family back there live in or near small towns/farms so they drive a lot on the country roads.

DD#3 and DSIL, DGS9 just bought a house about 3 blocks from us and it has a pool! Yippee! I can go over and use it whenever I like. Of course, the inspection, all that has to go through first but they hope to be moved in by the first of Aug. Right now they live about 15 minutes from my house. Now I can be like Sandy and go enjoy the big pool, or like Carolyn, and have my wittle pool in my backyard.

Yes, Michael Jackson sure did get a lot more press than Farrah. Guess scandal sells. I hadn't remembered thought that she was from Corpus Christi, TX until they started telling about her life. She seems like a good person from all accounts and was so brave though all the cancer.

Well, off to get a little office work done today.

Well the reunion was super fun. I sat next to a brilliant Professor of Mathematics and on the other side, next to an old friend and opposite my old french professor.
Everyone said I looked fantastic (on the youthfulness front) ..losing over half a stone really helped. I went for the wool viscose dress in the end ..black, to just above the knee, drapy but very figure flattering, cinched in at the waist, scoop front and scoop back, soft short sleeves + satin evening shoes, opaques, larger than life pink and orange glass drop earrings. My hair is shortish ..a short layered bob ,,dark blonde with a warm tint in it. Nars eyeshadow and blusher .... etc etc !!! Lots of trouble taken.

Loads of attention (it's a college with far more men than women) ..ego boost.

I have to confess I comepletely forgot about pics BUT I am attending a friend's post wedding party on August 1st and I know that pictures will be taken and I will send you some. I will sort that out for you ladies.

This chocolate cake is adapted from the black bean brownies Caroline posted and Char tweaked. Thanks you two! There's no trace of beaniness here--just rich chocolate taste! You have to let it sit overnight for the best flavor. With beans so cheap, there no reason not to try it!

Healthy Chocolate Cake
Adapted from a recipe at LowCarbFriends

Makes a single 9" layer cake, which can be halved and stacked for the taller cake you see here!

Preparation:
1-15 ounce can of unseasoned black beans
OR 1 1/4 cup cooked beans, any color
5 large eggs
1 tablespoon pure vanilla extract
1/2 teaspoon sea salt
6 tablespoons unsalted organic butter OR extra virgin coconut oil
3/4 cup erythritol plus 1/2 teaspoon pure stevia extract OR 1/4-1/3 cup honey plus 1 teaspoon stevia
6 tablespoons unsweetened cocoa powder
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1 tablespoon water (omit if using honey)

Preparation:
Preheat oven to 325 degrees Fahrenheit. Spray a 9" cake pan with extra virgin olive oil cooking spray, or just grease it with a thin layer of butter. Dust cocoa all over the inside of the pan, tapping to evenly distribute. Cut a round of parchment paper and line the bottom of the pan, then spray the parchment lightly.

Drain and rinse beans in a strainer or colander. Shake off excess water. Place beans, 3 of the eggs, vanilla, stevia (if using) and salt into blender. Blend on high until beans are completely liquefied. No lumps! Whisk together cocoa powder, baking soda, and baking powder. Beat butter with sweetener (erythritol or honey) until light and fluffy. Add remaining two eggs, beating for a minute after each addition. Pour bean batter into egg mixture and mix. Finally, stir in cocoa powder and water (if using), and beat the batter on high for one minute, until smooth. Scrape batter into pan and smooth the top. Grip pan firmly by the edges and rap it on the counter a few times to pop any air bubbles.

Bake for 325 degrees for 45 minutes. You may need a little longer, as my oven runs hot. Cake is done with the top is rounded and firm to the touch. After 10 minutes, turn out cake from pan, and flip over again on to a cooling rack. Let cool until cake reaches room temperature, then cover in plastic wrap or with cake dome (I use an overturned plastic chip bowl). For BEST flavor, let cake sit over night. I promise this cake will not have a hint of beaniness after letting it sit for eight hours! If you are stacking this cake, level the top with a long serrated knife, shaving off layers until it is flat and even. Frost immediately before serving.

~57.6g net carbs for the whole cake using erythritol/stevia.
~5.7g net carbs per 1/10th
~125.6g net carbs for the whole cake using honey/stevia.
~12.56g net carbs per 1/10th

Healthy Chocolate Buttercream Frosting

Makes enough to thickly cover one layer, or fill and frost a halved stacked layer

Ingredients:
1/2 cup (1 stick) unsalted organic butter, softened, OR 7 tablespoons nonhydrogenated shortening
1/4 cup plus 1 tablespoon erythritol, OR 1/4 cup xylitol, powdered
5 tablespoons unsweetened cocoa powder
2 tablespoons half and half OR coconut milk
1 teaspoon pure vanilla extract
Pinch of sea salt
Good-tasting pure stevia extract, to taste

Optional addition for a glossy finish:
1 fresh organic egg yolk

Preparation:
Cream the butter in a small bowl until fluffy. Powder erythritol or xylitol in a coffee grinder or Magic Bullet for a minute or two, until extremely fine. Let sweetener settle in grinder before opening the top. Stir sweetener into butter with a spatula, then beat until smooth. Slowly blend in the cocoa powder (unless you want to redecorate your kitchen), vanilla, and sea salt. Beat in the half and half and egg yolk, if using. Add stevia, starting with 1/16 teaspoon. You'll probably use less than 1/4 teaspoon. Just keep tasting and adjust sweetness to your liking.

~7g net carbs for the frosting, using erythritol

I did it! But the pic of the cake didn't come out even though I highlighted the cake. Sorry guys. I was practicing! This is a fabulous cake recipe though. I have made it.

I made the cake but not the frosting. It was good but DH said he thought it tasted funny. I think he's "funny", lol. The way I asked him how it was made him think it was something "different" so he was on guard, lol.

I must try that chocolate cake too. There will be time over the summer for baking! Incidentally, I have just re-checked my mortgage insurance and have worked out that with job seekers' allowance (non means tested in the UK for six months) I will be able to leave my redundancy package relatively untouched for six months. Great news.

Carolyn, it's not the old french professors ..it's the science students I used to hang out with you have to watch out for ...lol. They were all re-discovering their 18 year old selves (most of them now around 50) on Saturday. Mind you, I have never been more complimented over a one hour period. One of them, an old flame, is still gorgeous ...he is very active and it shows. All of them are married btw so I had my guard up a little and behaved with decorum ..even a degree of Grace Kelly mystery ... mineral water only after the main meal x
