I take tons of supplements too and just lately have been thinking about stopping them. Maybe I will now and see what happens. I'll still probably take a baby aspirin everyday just b/c heart disease runs in my family.

I've started a new multi and I'm trying to stop my folic acid. I take Maximum D3 and potassium too. That's it for the supplements.

Though since the doc prescribed the D3 that might have to go in the category with my Pravachol, Zetia and hydrochlothiazide.

Sandy, baby aspirin is a good one. At first, the medical community thought that it was the anti-platlet function that made asprin effective. However, there is strong evidence that that may be superseded by aspirins anti-inflammatory profile. Inflammation is a big thing and causes the lining of the vessels to become roughed up and hold onto plaque so keeping that lining smooth by decreasing systemic inflammation is one of the best things we can do. And the cheapest!!

MK, Vit D is a must. I know I wear so much sunscreen, the only vit D I get is if it radiates off my computer!!

I was warming up the lamb and my cat woke from a dead sleep and started following me around. Yes, we will both be finishing that leg!!

Bought a bunch of flowers today but it's chilly and rainey so may wait till tomorrow to plant. I love spring!

Hi gals...and Gord.

I was down to 153.8 this morning..I think it was because I ate lunch later and waited until I was hungry..ya think????????

Still going through books..even old cookbooks that are of the "no fat" variety...Ditch those babies..

We are having a thunderstorm now. No tornadoes today...

I need to get back on my vitamins/supplements. I should take them at dinner time as my thyroid meds can't be taken with calcium or iron.

AWWWWW...the smell of roasting lamb..I'm glad you and your kitty enjoy it..Cindy.

Hugs all around..I found a "better" recipe for hot chicken salad. So, I'm trying that for our luncheon tomorrow. It has more cream of chicken soup in it than the other one..

Today was good Woke up to 1 egg in a bit of butter with bleu cheese crumbles and fresh basil (made more for my kiddo's who loved it once they figured out the dark green wasn't nasty LOL) and a bit of avocado, then took the dog on a 3.5 mile jog. I wasn't hungry and forced myself to eat lunch (weird for me) picked up a salad from safeway and concentrated on eating the egg, meat, cheese with a little lettuce and half the salad dressing then had an ounce of Brie to up the fat factor. I"m going to make chicken curry tonight, super yummy-I put the chicken in to boil in the coconut milk and add curry paste to taste, then I like to put in savoy cabbage (a whole head), a bit of bell pepper, carrot, green onion, and some pineapple chunks. I already entered it into ****** for today and the carb content when taken with what I ate already is good, I think Im sitting at 10%. I slurp up the coconut milk sauce when I'm done eating the chicken and veggies out of it My kiddo's enjoy it too. ( I mix green and yellow curry paste to make it milder for them) anyways, I think I'm going to try my hand at these cheese biscuits I have a recipe for when I was going through my coconut phase-it's eggs, a small bit of coconut flour, some butter or CO, a bunch of cheese, spices and baking powder-I have yet to enter it into ******-if I do and the ratios are good and it tastes good I'll share it with all of you! See you all later, have to take the kids to karate then my work week starts tomorrow night. (I work 12 hour shifts and try to stick them all in one week so I get 7 days off every 2 weeks) It'll be challenging, thus the cheese biscuits-hope they turn out!

Becky, I like Brie and Blue Cheese also. Your chicken curry sounds good also. Good luck on the biscuits. I'd like to know how they turn out.

Carolyn, your cat should come over and have dinner with my cat! I bet your cat would like lamb. We are having weather also. Pooter and I actually had to turn on the fireplace and take a nap today. I bought 6 small rosemary plants, an oregano, 2 tomatoes (1 yellow and on old variety called Black Krim), 6 hot pink dianthus, 3 foxglove, 6 astilbe and a bunch of small purple flowering plants to plant around the base of my rose trees. Tomorrow is supposed to be sunny and warmer so I will get them all in the ground.

Well, the cheese biscuits were super yummy! I divided the batter into 9 muffin cups so here's the breakdown for one
188 calories
13gms fat
10gms carbs
6.2gms fiber
8 gms protein
it does taste "fibrous" for texture, but not bad and the flavor is wonderful-anyways, here's the recipe if you're interested

1/4 cup CO or butter, softened or melted
1/3 cup sifted coconut flour
4 eggs
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp baking powder
2/3 cup shredded cheddar cheese
Blend together eggs, butter, salt and onion powder. Combine coconut flour with baking powder and whisk into batter until there are no lumps (I sifted mine through a wire sifter and got lumpless batter). Fold in cheese. Drop onto greased cookie sheet (I used a muffin tin). Bake at 400 degrees farenheight for 15 minutes.
A bit carby but ok if you net your carbs from the fiber and/or if you work it in right with the rest of the day's menu. I'm thinking of doing a "sandwich" with it tomorrow, spreading it with cream cheese and putting a slice of ham in the middle. Yum! Or maybe Brie and ham......

I read somewhere that unless you live Alabama or south of it, you can't get enough D from the sun - especially as we age, our skin doesn't absorb it as well! I feel better getting it from a pill, though I love the sun!

I'm hoping it clears up here by tomorrow so I can buy some plants!

Carolyn - eat when hungry - good tip! Wish I could follow it. I just keep eating!!

Becky - the biscuits sound really good! Did you use muffin cups?

Why that coffee tastes so good!

Mc D's Vanilla Iced Coffee

1/4 cup Torani vanilla syrup
1/4 cup 1/2 and 1/2
1 cup cold coffee

Fill a 16 oz cup with ice
Pour vanilla syrup over ice followed by the 1/2 & 1/2 and cold coffee.

MK, I'll take one of each, thank you. Actually, I'll take a rain check for both. I had a great day yesterday and am going to have another one today too. I really need to only eat when hungry but the problem there is I'm never hungry in the morning at all and even sometimes not even hungry by lunch either. But then when I do get hungry I'm really hungry and eat all the wrong things or way too much of the right things. So, I try to eat B & L so I don't overeat later. That's the plan anyway.

Those biscuits do sound good. I doubt I could have good portion control with them though.

It's sunny here this a.m. Still a bit chilly but at least it's not raining. I plan on taking a very long walk later with my poor pup who I'm sure has cabin fever from the last few rainy days.

Eb, they sound very much like the cheddar buscuits on the Carbquick thread except you use coconut flour. I will have to look at coconut flour. They sound good.

MK, that coffee sounds good! It is finally getting warm enough for iced coffee.

Going to plant today as soon as it warms up here. Still a little chilly. Cat is in front of the fireplace. Poor baby is always cold. One time I found her inside the fireplace! She had crawled through the screen and was stretched out in front of the logs. Good thing it was off. We had to wire the front closure together!

Speaking of hungry...I have to go to a luncheon now..I made a hot chicken salad, which I believe can be lowcarbed very easily (without the tater chips...) Then I made a lemon jello/pineapple/yogurt/celery/pecan salad..The jury is still out on that one.

Morning friends.
Well, I have a big enough hiney but after slipping, losing my balance and falling from a stepladder Sunday, one half of my hiney is much bigger than the other, black and blue and swollen like crazy! I do the dumbest things I swear. Anyway, here is the reason for the fall...

I was taking the kittens back to the attic of the shed when I fell trying to get the last one up there. Crazy thing is that it really made me nauseated and dizzy for about 24 hours. I spent all of yesterday in bed on a ice pack and trying to get back to normal. Today I feel ok and dizziness is gone.
But, it was worth it, DGS 9 loved seeing the kittens, bad thing is, mommy cat has moved them to where I can't get my hands on them.
Needless to say, feeling sorry for myself yesterday and being down I was bored and ate mindlessly. Scale is back up today of course.
Will try to do better today, supposed to leave on trip next Tuesday and now that awful swine flu scare makes us wonder about traveling.

I made coconut flour pancakes for me and the family today, the jury says WAY GOOD MOM!! DH loved them too! So I'll give the recipe and then reply
3 eggs
3 tbsp butter
3 tbsp heavy whipping cream (organic)
1/4 tsp sea salt
nutmeg, cinnamon, vanilla to taste
3 tbsp coconut flour, sifted in
1/2 tsp baking powder

whisk eggs, softened butter, cream, sea salt and spices, add baking powder and sifted coconut flour. Cook in griddle greased with CO or butter

These made 7 for us, so per pancake the breakdown is
120 calories
10g Fat
4g Carb
3g Fiber
3.6g protein

Buffy, sounds painful, be careful! The kittens are WAY cute!
Mmmm that coffee sounds good!
I sympathize with all of you that are hungry all the time, I do tend to stress eat in the evening or when I am at work (I work 7pm to 7 am so am up all night) this WOE definitely makes the cravings less intense I have noticed. And the tummy fat is gone after a week!

Buffy............glad you are okay..but ladders and Buffy don't mix. I LOVE those kitties..
yellow is my favorite "kitty" color.

I need to try those coconut pancakes. I think if I make up a "batch" of 7, I can freeze the leftovers for other meals.

Well, June made her white cake from scratch cake with cream cheese frosting made with lime juice...........OMgoodness..I had a sliver. I think we could make this LCarb for sure.

There is a reason why we call June..Martha Stewart of the Midwest. And, she always does our desserts for our Bible Study luncheons cuz she always makes things from scratch..Too bad she is moving to Springfield, MO.. But, she is getting back with her ex-dh, so that's a good thing.

Buffy, those kitties are so cute. And I'm not even a cat person. But I like kitties. Stay away from the ladders!!!! You don't want to go to the wedding in a cast. I feel for you having to decide whether to travel or not. This is one of the few times I'm actually GLAD that I don't have a trip planned b/c I'm be very unhappy if I had to cancel one. What are the bride and groom saying? It is a scary situation. Are any little kids going? That would really scare me.

All your foods sounded yummy Carolyn. I love lime anything!! Except Kool Aid and Jello, lol. I'd like your hot chicken salad recipe. I wonder if you already gave it to me???

The pancakes sound good too. But again, I'm afraid I'd eat all 7 in one sitting!!

Okay..

Here is the hot chicken salad recipe. This makes enough for 4-5..

Hot Chicken Salad

2 + cups of cooked chicken (you can use part of a rotisserie chicken)
1 cup chopped celery
1/2 cup diced onion
1/2 cup slivered almonds
chopped water chestnuts (I didn't add them)
1 can of cream of chicken soup (undiluted)
1/2 cup of mayonnaise

Topping: LC breadcrumbs that are mixed with butter, almond flour with Parmesan, or anything that would make a good topping..OR just some shredded cheese added at the last 10 minutes.

Mix this all up in a bowl and then spread in a Pammed 8 x 8 inch baking pan. The recipe said to keep it covered in the fridge overnight and cook for 40 minutes at 350 the next day. I don't really think you have to refrigerate it. Put on topping and cover with foil.
Uncover about 10 minutes from being done.

Note:
Well, there was one part I left out..and that was the tater chips that were crushed and added to the raw casserole..and some on the top. I don't think they are necessary in the casserole..however, maybe some LC buttered breadcrumbs or shredded cheese or
Parmesan cheese with almond flour would make for a nice topping and a crunch.

Buffy, from that angle those kittens look like fat babies!

MK, I'll let you in on a secret. I had to up my protein because I was too hungry on the EFGT guidelines. What is working best for me is 100 grams protein, 100 grams fat and a net carb of 20-30. Works much better for me. Comes out to be 60/30/10.

Ok, Carolyn that chicken stuff sounds good, I'm going to have to try that!

I decided since I"m in a coconut flour kick I'd make my DS who is gluten free for his skin some coconut flour bread. THEN, since I had it and it is an eggy, slightly sweetish tasting thick, dense, moist bread with 1 net carb per slice, I'd top it with a few sliced strawberries and drench that in organic heavy whipping cream-I think I died and went to heaven-and then I had to come back down again but seriously, this is way good bread-and no, it's not something you eat too much of for fear of-well-stomach pain (very fibrous!)
anyways, I also discovered guylian 70% dark chocolate truffles at fred meyer, with 1 gram net carbs per truffle and no AS. I am a happy woman! I do have to go to work tonight, I think I"m going to still let ****** roll over at midnight and go from there (I stay up 24 hours my first day back to work) my ratios look good today, 1350 calories with 67% fat, 19% protein (64 grams-kinda lowish but I"ll eat a protein boost before midnight), 14% carbs but if you net them it's only 23grams for the day. I think the reason you lose weight on this WOE is because you can only eat when you're away from ****** entering what you ate for the day seriously, I think it's starting to annoy my DH-but oh well!

EB, are you a nurse? When I was an ICU nurse, I used to do 12's. Loved them until I started doing 2-20 hour shifts. Now I LOVE them!! That bread with coconut flour sounds good as I am a coconut fiend! Do you have the recipe?

Hey, Cindy..whatever works for you is the plan you should follow..Each of us has different protein requirements. You have a stressful job that requires lots of energy for long periods of time,so you may need the extra protein.

Well, no loss in the weight. But it doesn't really bother me much, I've been exercising like a fiend this last week and a half, and I know that I'm slimmer through the abdomen/upper waist. My DH commented on it too. So I'll keep plugging away! I feel great eating like this, I really like it

The kittens are very healthy and chubby, she is a good little mommy but she is wild, we can't get near her but we feed her so now she has kittens here. If we could catch her we would get her fixed but she will have none of that. There is also a white kitten with one black ear that we saw but couldn't reach.

No more ladders for me, my balance is not good anymore. Geez!

Yes, the coconut bread sounds divine. REcipe please.
