MaryKay, remember at the KinderCare kids Christmas party when I was walking out with Alyssa and my foot caught the sidewalk wrong and it twisted my ankle, it's hasn't been the same since. It's very weak. So, when I'm not straight on my foot, if it's twisted just a little, it throws me. That's what happened at Kim's, my foot caught the driveway just right and my ankle twisted and down I went. And all Alyssa was worried about was the sippy cup of milk that I dropped. LOL. NEVER MIND that mammaw was down on the ground with a skinned knee and torn pants, "mammaw mammaw, my milk." Grrr, just wait til she gets older and I remind her of THIS.

Well... I had a good day today, didn't do too bad food wise, not perfect, but good. Tomorrow will be even better. I was craving the chicken salad and tuna salad from Jenny Craig that I use to get there, so I went and bought 2 of each. Don't think they liked it that I came out with only 25.50 worth of food (got 2 potato soups too) but that's ALL I wanted. I can work it into my diabetes diet, I think. Oh well... going to have it for lunch all next week, I'm taking my lunch so that I'm not eating the high carb from the daycare.

It's raining here too girls. Hoping that it greens the grass up.

Rebecca: Poor maamaw.. hugs to you. Hey, have you looked into an ankle brace that might help while you heal a bit. I think Walgreens sells them..You certainly don't want to
re-re-injure that ankle..

Well, MK, he's 16 you know and right now he's positive HE knows more than the Dr. Lol. Plus being male gender too. My DH always thinks he knows more than the Dr. Lol.

I finally get to see my DGD today. Before you know it spring break will be over. This year it was like "take a number" with her. Busy girl!!

Rebecca, It probably wouldn't be a bad idea to see your Dr concerning your ankle. Probably brace at first, then strengthening exercises. If you fall and break something, that is going to be a long time healing, not worth it. We are going into spring. Too much fun stuff to do. Carolyn, welcome back. I know what you mean. I like trees too! I had my cooking class on Tuesday and I refuse to get on the scale till Sunday!

Going home later today, it has been a blast but Cristians mommy can't wait to get home to him, of course daddy too is anxious to get home. And, I am ready to get back to my own home too. Great bonding time with the 9 month old and as always fun with the 9 year old.
Rebecca, sorry about your fall and sure hope the milk is safe, LOL. Yes, get the brace, or you will keep doing it and really injure it worse.

Hi ladies and Gord..

Well, I was down one pound..to 153..(yikes). Honestly, in Arizona, you can get dehydrated so easily..The air just sucks the water out of ya...

Well, good old KState won a close one with Illinois State last night in the NIT. Brett will go back to Manhattan tomorrow, so hopefully, he can see the next game if they play there.

Time to play "kitty cat roundup". Alex needs his shots today..He won't be pleased, but
between Brett (who is 5 11 and 190 lbs) and little old me, we can manage to wrangle 14 pound Alex into the cat carrier. Luckily, he doesn't have claws..just teeth..

Cindy: Cooking class?????????? What was the most wonderful thing you made?

Carolyn, nothing that would work on this diet!! haha But the 2 most scrumptious things were coconut pound cake and Dulce De Leche bars. I'm getting ready to put the coconut pound cake in the oven. I have a little left over batter and am going to run a ribbon of seedless raspberry jam through the middle and let BF try it to see if he likes the change. We also made a salad dressing that I'm going to convert to LC and see how it goes:

1/4 cup mayo
1/4 maple syrup (I'll use SF)
3T white wine vinager
1/2 cup canola oil
S&P to taste
Wisk mayo, syrup and vinegar until blended, Slowly wisk in oil until thickened. Salt/pepper to taste. It was very good and hope the change to SF syrup will work. It will have to!!
She also made maple glazed walnuts where you just toss walnuts and maple syrup (pure) together and bake at 350 for 20 minutes, tossing every 10. When done, sit on the counter to cool and they crisp up. I'm going to make these also for work, esp. around the holidays. The ratio is 4 cups walnuts to 2/3 cup pure maple syrup. You can use pecans and add a little cinnamon.
I love to bake and it is very therapeutic, even if I can't eat it! The main course was chicken enchiladas and mexican rice.
The Dulce De Leche bars were new and she didn't have a recipe available but would print one up. They were insane!! I found a simple recipe on Recipezaar.com that looked about the same and will make next week for work.
I know about catching the cats!! I vaccinated mine the first 5 years but since they never go out or around other cats, I quit. I gave the shots myself.

Wow..that recipe sounds good..I think it would be good with a spinach/mandarin orange salad/apple, etc. Now, could we lowcarb those bars? I think someone once had lowcarbed
a dulce de leche cake..Let me see if I can find it..

One thing you all have heard me whine about on this forum is that I'm still hungry, even though my calories are around 1700 with about 60-65% fat. I just ran across an old thread about ratios. They suggested that the proper ratio for every meal and snack is add grams protein to grams carbs (net, I assume) take that figure and multiply by 1.5 and that is how much fat should be at that meal. Say breakfast is 24 grams protein, 2 grams carbs for a total of 26. My fat for that is 26x1.5= 39grams. I've done that last 2 meals and it does make a differance. I need to keep my protein down so my calories don't get out of hand. This will take some shuffling around on ****** to see what works but I think they may be on to something. I'm left brained and need concrete numbers to understand. Anyone else this obsessive? haha I need to start a new thread, the OCDers club!!

Oh, Carolyn, that sounds good! Unfortunately this starts with a butter cookies crust (could do LC) but the topping is whipping cream (LC), semi sweet choc (could do unsweetened) but you add a can of caramelized sweetened condensed milk. I think there is a LC recipe for Sweetened condensed milk and maybe SF carmel syrup. Humm. Oh, and on the salad dressing, I thought the same. Spinach salad. A little bacon, a little egg. Yeah!

Yep, have had a brace on my ankle since i hurt it in December, but go figure, I didn't have it on when I fell on Monday. that is probably the 3 times since Christmas that I haven't worn it.

Wow, what a day!! Up at 5 this a.m. Waaaay to early but I've been doing that the last couple days. I hope to sleep in tomorrow. I went to the chiro, then Penney's, then to Dad's. Put in his laundry, programmed his new key pad for his garage door, took him to 2 different PetCos, PriceChopper and Applebees. He took me out for an early birthday lunch since he'll be gone then. Then back to his house to fold laundry and then home to meet DGD for a nice long visit. Then we took her out to dinner. I miss her so much. I'll be glad when summer gets here and she's back home.

Cindy, those recipes sound yummy! Is this a company you can hire for these classes or a friend? It sounds like a fun evening. I could never resist all those baked goods you bake. Bravo to you!!

Becky, take care of that ankle girl! That's pretty scary. When's the new grandbaby due? I'm sorry I've forgotten. It's another little girl right? I bet Alyssa will be so excited!!

Sandy, Gracelynn Genelle is due at the end of May. Can't wait to meet her but I want her to stay inside her mommy and grow some more. Kim and Brad asked me over the weekend to be Gracie's Godmother. John is Alyssa's Godfather. Alyssa will have her nose out of join in the beginning, I think but I hope that she adjusts well.

Did some cleaning today for Red Hats to come on Saturday for our Craft Day. We're making no-sew afghans, the kind with the tied edges. I'm making beef veggie soup and everyone is bringing things to add to it. Can't wait to get John's step-aunts Reuben Dip!!!

Oh, Z, those babies are so cute! My Grandma used to do that when we had baby ducks. She would fill the bathtub and they would dive under the water. That brought back a lot of memories! Thanks.

Yes, it will take me awhile to get all rested, it just does these days, but it was so worth it. And it was so nice at DD#2's house, she has a very nice home and the pool time was great, have a little color now instead of my deathly white winter skin. Just in time for sandals, short sleeves and capris. I don't wear shorts in public but do around the house.
Weight was still 210, so I didn't gain anything while gone. Once I get rested up I will try to get in a few days of lower carbs than the moderate I have been on. I feel kind of bloated up just from not being in my regular routine and I didn't drink nearly as much water there as I do at home.
I got to hit 3 different TJ Maxx's lately, there are about 15 in the Dallas/Ft. Worth area, 2 I visit regularly. I did find another pair of Judith Leiber sunglasses for $99, these retailed when new, of course these are past season, for $1100. Is that insanse or what??? What a name does for a product. And, I have bought about 8 swimsuits this week, have to try them all on at home and choose about 3 to take on our trip with us. They have great buys on swimsuits. Trying not to wait until the last minute to get ready for our trip in May so I can get everything at bargain prices.

I'm trying to type this with a cat that has a severe case of feline anoyance syndrome. Buffy, I saw something on the morning show a couple of days ago. It was called the Sleep Diet. You know what you have to do? SLEEP! People were losing weight by just increasing the amount of sleep they got. The goal is 8 hours. I definently know I eat way more when I'm tired. We are trying to get to bed no later than 10pm. My BF has to be up at 5:20 and he often gets to bed after 11:00 so that is not enough. They said no coffee after 2:30 and no upsetting TV before bed. If the news gets you riled, watch it at 5:00 but not at 9:00. I'm not a big news watcher. It' hard to live in my Polyanna world watching the news. I get depressed. I only watch happy stuff. I know thats dumb but I'm too sensitive. Neither my BF or I can watch Emergency Vets on Animal Planet!

Well, our cable modem burned out our router..didn't know it, so got another router, which it burned out..Then we were told by the tech guys that our modem was doing this, got a new modem and a new router..Brett just finished hitching everything up.. Glad he was home...I don't understand tech stuff..

Look at our grandbaby ducks..JJ and Bungie..Now is JJ drinking his bathwater OR looking for fish? Thanks soo much for sharing all those darling pictures, Zilla.

Buffy: You are the bestest shopper of us all I do believe. It's a good thing we only have
2 clothing stores in town..I love TJ's..but the closest one is in Owasso, OK..90 minutes away.

the AZ time change of 2 hours..plus, Mr. Sun came up really early there.

KU won KState plays San Diego State in the NIT tonight. We will listen on the radio.

Last night before bed, I watched Big Medicine..I love those fat people shows (as my dh calls them). I love it when peeps lose weight (especially the Barry gang)..

Just out of curiosity, Carolyn, what ISP do you have? I am with Everest or SureWest as it's called now and have had quite a deal with them this week concerning routers, modems and internet service. Come to find out I didn't need anything new at all. This was after I ended up spending $103 at their suggestion. Needless to say I'm very angry right now and will probably end up finding a new ISP company.

Yes, I'm so glad our KS boys are winning. Now if they can keep it up!!

I went to Penney's Outlet today and got 6 new tops, 2 pairs of jeans for DH, 5 pairs of shoes and DH a new belt. It was only $94 for everything!!! I love that place on the days I actually find stuff there. It's pretty hit or miss but I hit the jackpot today.

I wish I was doing that well with my dieting. But I'm still just holding steady. Which is good I guess. I just feel like I need to "get with it" and quit messing around. I get so mad at myself sometimes but then I turn around and do the same thing again. Isn't that called insanity??

It was called the Sleep Diet. You know what you have to do? SLEEP! People were losing weight by just increasing the amount of sleep they got. The goal is 8 hours.
I've read about this too!
I know when I'm tired, I have to eat to keep up my strength - but if I have more sleep, I don't need to snack!

I'm also a Pollyanna - I don't watch TV news just read it in the paper. Then I can skip what I want.

Yes - that's insane!!! I bought a pair of Coach for $59, regularly $120. That's as high as I'm going!

Rebecca, here is the recipe off Epicurious.com. I'm going to make this next week for work. After eating the bars at the class, I bet this is either it or darn close:

Dulce De Leche Bars

For shortbread crust:
1 stick butter, room temp
1/3 cup packed light brown sugar
1/2 t pure vanilla
1/2 t salt
1 cup AP flour

For topping:
1 cup heavy cream
1 cup dulce de leche
4 large egg yolks
5 oz bittersweet chocolate, finely chopped

Preheat oven to 375. Spray a 9x9 pan well with Pam. Line bottom and sides with parchment leaving overhang on 2 ends (to pull the bars out of the pan). Blend butter, brown sugar, vanilla and salt. Add flour and blend until soft dough forms. Spread on bottom of pan evenly and prick with a fork. Bake 15-20 minutes until golden. Cool completely 30 min.
Bring cream and dulce de leche to a simmer in a heavy saucepan, stirring with a wooden spoon until dissolved. Wisk eggs in a bowl, then slowly wisk into hot cream mixture. Return to heat and stir constantly until bottom of pan is visible as you drag the wooden spoon through. Remove from heat and wisk in chocolate. Pour hot chocolate mixture over the shortbread crust. The ones I had were lightly sprinkled with toffee bits. Refrigerate 2 hours or until cold. Run a knife around edge and lift out of pan. Place on cutting board and cut into squares.
Dulce de leche is found either with the Mexican food at the grocery or with the sweetened condensed milk.
If these ar anything like the ones I had (recipe looks like they should be), these are insane!! They melt in your mouth. I could do this LC with a nut or Carbquick sugar cookie crust but I don't know how to substitute the dulce de leche. There is a recipe on the recipe site for a faux sweetened condensed milk and I have some toffee extract so I could come up with something. I may try next week. I'm going to do this recipe next week though.
