Coconut Bark

Hello, my name is Bobbie and I am addicted to Coconut Bark :)

I can easily go though a batch of this in one day. Do you think it would hurt to do this daily or even 2 batches on some days??

One batch is
4T Extra Virgin CO
2T Cocoa powder (Think I might lower that to 1T)
2 packs of Splenda (Also might lower to 1 pack)
2T of Flax meal

OMG, this stuff is soooo good...

Yes. Too much of anything is bad.

What does it taste like?

CarolynF 01-22-2009 07:00 PM

Bobbie: Right there is close to 400 plus calories. Barry has mentioned that when we combine fat with sweet, it is hard to control the amount of food we eat..

If you are losing like crazy, then keep eating it. However, the BFLife girls were making this like crazy a few years back and gained weight..

All things in moderation..:)

Bobbie...I have made CO bark a part of my eating plan...here is my concoction:

3T CO
1T peanut butter
2 sq 85% chocolate

I put it all into a glass measuring cup and nuke until melted then I get a little 6 cup silicone muffin tray and divide either 1 oz of unsweetened coconut flakes or 1 oz of chopped natural almonds into each cup and divide the melted mixture into the 6 cups and pop it into the freezer...

This gives me 6 little PB CO cups at about 110 cals each....the problem is that the numbers don't fit Barry's proportions...they are 90 % fat, 4 % carb and 6% protein...so you need to combine it with other foods to bring the fat down and protein and carbs up so in other words they make a nice dessert to finish a meal....I will often have 1 while I am cooking dinner since one of my issues is munching while cooking...these little tidbits are very filling and tasty and I eat them close enough to dinner to be a part of that meal...

Good luck in your journey
Lise

Thanks ladies. I will go ahead and stick with my one batch per day which is 4T :)

i like the PB/coconut type but haven't make it for a while. i use stevia, though, and use plastic ice cube trays so i can just pop 'em out into a container.

Oooh.....I have to try! When I'm done w/ induction, that is the first thing I'm gonna make!

CindyCRNA 03-01-2009 11:13 AM

Jen, maybe they aren't allowed on induction but CO (coconut oil) is the only thing that got me into ketosis. My very fav is 1/4 cup CO, 1/4 cup Carb Not Beanit Butter ( a no carb roasted soybean butter that is great IMO) 4-5 drops liquid Splenda, dash of vanilla. This makes 4 good sized ones that i put in a silicon muffin pan (so easy to get them out). These suckers pack 200 calories a peice so I limit to 1 a day but I eat 4-5T a day. I also make plain with 1T unsweetened coconut and 2T sliced almonds. OMG!! You just have to remember to add the calories in (thank God for ******!) because it will add up. Love the CO mayo recipe too. Another way to get your CO in.

Just made this. Thank You Ladies. I just bought my first jar of CO tonight after work.

I can't believe how easy this was to make and chilled off really quick too.

I did only take a tiny portion to see how my weight is tomorrow.

Thanks for the various recipes.

Susan
