Hi everyone..

Well, the prime rib was very nommie..Really on the medium/rare/rare side. My sinlaw and broinlaw like their meat well done, so she panfried hers and his..But the rest of us enjoyed the rest..DD made some nommie horseradish sauce with mayo and sour cream and horseradish/Dijon mustard. It was very good..a nice light flavor of horseradish.

Glad everyone had a good holiday..and glad MKay got home safe and sound and no animals were hurt in the process.

Becky: Prayers for Kim to have good recall for the test..

Buffy: I threw my bones in a bag in the freezer..Will make soup later..Yeah for your loss, my dear!!!

Margot: Hi..Sounds like your dad was quite a great cook.. Mashed potatoes..(what are those?)

Ashland: Next time I will try the beef the restaurant way..The way I did it was: 450 for
25 minutes..then turned it down to 300 for 2 hours..Then let it sit for 30 minutes. I probably should have cooked it for another 20 minutes, I think. However, it was very juicy.

Buffy - you are Suzy Homemaker!

DH is on his way homefrom taking DS19 back to college. The weather was definitely worse the farther north he went!
He was going to take DS19 to the grocery store, but just gave him some money and told him to fend for himself!
I hope he's back here about 6:00.

Laundry is finished, I've watched Pushing Daisies and Private Practice.
Now some reading until I can get the puppy!

That prime rib sounds awesome. I have some beef shank braising in white wine. Not the same, but we will somehow suffer through

Nope, I just stick the raw roast in the au jus (remember to cut the water in half. My daughter forgot to do that last week and she had AU JUS and not gravy and was complaining, "it's not like yours Mom") and I bake it at 325* or 350*. If I use a glass baking dish I do the 325*, if I use my roaster, I do it at 350*. Now if you don't like it, you don't remember who gave you the recipe, right? But DD, DH and DH's whole family goes nuts about it.

Starting P1 again tomorrow, got sidetracked yesterday at Mom's thanksgiving. If I start tomorrow, then I will have the 2 weeks of P1 done and onto P2 by Christmas so that things aren't as strict.

I had a small gain during my trip to Chicago (brrrrr) but I'm more motivated than ever especially after seeing how some people eat. The place we stayed had pretty much no fresh items in the house. They had everything from powdered creamer to white bread and every fake food in between. Unbelieveable.

Since I started low carb last month I have gained several pounds but after reviewing my calorie intake...it's no wonder. Now it's time to figure ways to lower my calories. First off I'm switching from heavy cream to half and half, and switching from pork sausage to turkey sausage. Since I eat both items on a regular basis this will be a change of a couple hundred calories a day. Amazing what a little re-thinking can do.

Any little changes that you have made that you would like to share with me?
