hmmm.... NE diabetic cookbook?!
Ok I just had to share my sister called and told me NE HHS sent her a cook book for diabetics. Here's one of their recipes! (I told her they must be trying to keep her as a patient forever ...argh. craziness.)
The recipe
Cinnamon-Raisin Biscuits
2 cups flour
3t baking powder
1/2 c raisins
2T sugar
1t cinnamon
3/4 c skim milk
2T cooking oil
1/2 c sifted powdered sugar
1 1/2 t vanilla

I think my head exploded! I was like what!? I thought she was just trying to get my goat .. so I looked it up .. sure enough it's in there. I guess the fact that it makes 18 servings (which is questionable) helps but I'm like ugh sure give a carb addict more carbs and all simple carbs! Not even bowing to alt. sweetner or whole wheat flour. For snacks they recommended plain popcorn, making fruit pops with FRUIT JUICE argh. etc etc ...Even though some of the stuff wasn't that bad I told my sister to ditch that book. crazy.

OMG! I'm not even diabetic (but in pre territory), and would never eat that.

I try not to read any publication that claims all the recipes (or even some) are diabetic. They give me a migraine.

In a thrift store I found some gourmet cooking school recipe books from the late 60's. Full fat, butter & lard everywhere, starchy foods usually segregated in a way they can easily be removed from the recipe ... and those people had tiny waists and believed diabetes was an unusual disease that hardly ever happened!

Yes we still get a giggle out of it when we start talking recipes lol. Although she's not on the low carb bandwagon smh and she really needs to be. sigh.
