Made my own diabetic ice cream
I bought an ice cream maker last week because I got so tired of not having any...used to have sf fudgesicles, especially with the heat this summer. So...I splurged. I was never the kind to want to make my own just to have homemade ice cream. I made some yesterday. It was pretty good. I just used the recipe that it came with but used unsweetened coconut milk instead of regular milk and Splenda in place of sugar. So, it's in my freezer and for what it's worth, when I want a little ice cream now, it's there for me.

Sounds delicious. I have an icecream maker but never use it. I should dig that baby out and give it a try. Usually I just have a small scoop of carbsmart but the coconut milk sounds so appealing.

Yes...it was my first one. An experiment. Came out pretty good. I may try all cream next time, too, to see which one I like most. I'd just sub half water, half cream for the cup of milk.

I ordered an ice cream maker that does soft serve ice cream and I make it sometimes with heavy cream, or half and half, a little vanilla and some xylitol. It's great, although it has lots of calories due to the heavy cream. I added coconut milk once and it was good. A different texture. I've also added chocolate and I've added fruit.
The reason I got a soft serve maker was to avoid needing ice and rock salt, LOL. Right now I'm watching calories too.....to see if it makes a difference....I need to give it a month, so have given up some things.

Mine doesn't use ice and salt. You just freeze the containers to make it in and the container itself turns, and a mixer you insert stays still! I LOVE it!
Never used xylitol before. Maybe one day...good luck on the last 10 lbs. |
