Daughter wants to eat like me!

And it makes me So happy
my daughter is 12 really tall for her age she's about 5'7 right now. She is a bit chubby But Dr says she's pretty proportionate (sp) for her height etc. She has had problems with constipation for a Long time and i've been trying to cut Way down on how much bread she eats etc. Well now she's decided she wants to eat LC. I'm great with that But i'm curious, should we try to count carbs with her Or just eat LC? I'm planning on trading in the HC tortillas with more LC ones. I do use lc ones at times with the family but not always. So any tips or ideas for helping w/ her transition to LC?

I do not count carbs with my son, but this is how he eats.
omlette with cheese and tomato for breakfast or sausages
lunch two LC tortillas with ham and cheese or bacon and tomato
greek yogurt, pepperoni and cheese
dinner is usually steak and a salad

snack are veggies and dip, cheese, tomatoes, salami.

He only drinks water.

Awesome!! Thanks soo much for the example! I think her hardest change is going to be Bread, she Loves peanut butter on toast or nutella sandwiches. But I think if I can add variety to what she eats it'll get easier.

I have been subbing LC items for my son. We use the La Tortilla Factory LC tortillas, Mission has good ones as well. Since she likes bread, try to find the Sara Lee Delightful bread, hamburger buns, and hot dog buns. They have around 8-9 net carbs for a bun or two pieces of bread. I can find them pretty much at any grocery store where I live, including Walmart.

I have two bread options for drew. I make oppsie rolls and I make bread with coconut flour. All a pain to make, but if it keeps him from the store bought bread... Worth the effort.

I second the oopsie rolls! They are really easy to make. I don't do the low carb breads at all... but every time I make oopsie rolls I get a surprise remembering how much I like them! At age 12, you could teach her to make them too.

my kids didn't like oopsie rolls, but they love the one-minute muffin. My littles still use wheat flour in them, but the older kids are trying to sub in nut, seed, crushed pork rind, and coconut flours more now. I wrote the recipe and taped it inside the cabinet with the ramekins and ingredients, so they make their own bread if they really want it. The littles still put peanut butter on them (and strawberry chia jam), but again the older kids use butter or make a scrambled egg patty and sausage patty in the ramekins so they all fit together like a McMuffin!
