Thanks that's something I can definitely do. I have been eating a ton of cheese, and using a ton of cream. More meat than usual, too.

That pumpkin custard sounds awesome.. do you use soft or hard tofu for that ?

Have you all tried the Silk Almond Milk Products Unsweetened? They have Vanilla, Coconut, Almond/Coconut Blend etc... they are between 30-45 kcals and <1 or 1 carb per 8 oz (1 cup)?

They are amazing!!! Blue Diamond Almond Breeze have the same stuff... same nutrient count. I use them when I'm making my fo fo café au Almond/Coconut Blend Lait a la Da Vinci SF Caramel -- I feel like I've been to Starbucks... (never been to one, the nearest one is almost 100 miles away).

Joanne - I have used both. Today I used silken tofu and it was very pudding like, when I use firm or eztra firm, it is more custardy like pie. Nice to warm up. But I have put both in the freezer to chill for 30 min and make like frozen custard. If you run through a small ice cream maker you can use soy milk and pumpkin with pp spice and stevia. After the accident I had no desire for it. Today was the first day I made it. And it was good. I am not going to go over board and will just use it for a dessert type, like 6 oz or so.

Cindy- My foot is getting better quicker this time. Probably because I went to doc sooner. Steroids say they make you gain weight and I was 255 yesterday and today with no change in diet!! Depressing!!

MaryMary- I'm eating more turkey and chicken. DH baked a whole turkey yesterday. Maybe I should take your advice and eat more eggs and try to eat fish. I like fish in restaurants but it's never as good at home. Lol

JustJo- What's your recipe? I use unsweetened almond milk also! It's amazing!!! Would love a new coffee drink. I have the sf caramel syrup too!

At the courthouse today, two clerks remarked about my weight loss - glad people are starting to notice! It made it much easier to avoid the cream-filled donuts at work! I've lost 18.5 lbs since May 10!

Went to the Animal Shelter today to check out a dog I had my eye on. It said he was a schnauzer mix but he wasn't and he was deathly afraid of men. He was onky 6 months old and would have been huge when full grown. But there was the cutest poodle mix who was not up for adoption because he was on antibiotics due to having four teeth pulled. He had a heart murmur,nhad a good dispositiom and was not a barker. God willing we will adopt Binzi. Once he is up for adoption, we have to both get to the shelter and have a hold placed on him while my husband shows up after work. If I have to I will take a cab to the shelter to make it official or get a ride with my neighbor to have a hold put in place. He should be ready next thursday or Friday. Please say a prayer.

Hey JJ...I think I am going to try it...the HWC is just a little thick for me...liked the half & half...what is the fat content in the Silk Almond??

Huge on the weight loss you are really rockin' this WOE!! And AWESOME job avoiding the toxic filled crappy carbs aka donuts!!

About people commenting on our weight loss: I got a weird reaction from people at school when they could clearly see I had lost a lot of weight. I think people don't want to comment on it for fear they will offend us, like wow you lost weight -- you really needed to huh? (did that make sense?). I had some parents talking to each other about my weight loss and they thought I had a terrible disease (cancer). One of my parents finally came up to me and asked if I was okay... People also say things like wow you look great and then say well, not that you didn't look great before...AWKWARD for them!!!

Bottom line -- we KNOW we've lost weight and we look awesome and we're healthier and seriously that's all that matters!!

Fat = 3.5 g per 8 oz. It's not a dairy product.

I love all the different "unsweetened" flavors I've tried so far, I'd love to try the Coconut Milk Unsweetened by either Blue Diamond Almond Breeze or Silk, but can't find it in my teeny tiny burg!

I measure 1 cup of the "milk" product and add 1/2 c. of SF caramel - mix it together and pour to taste in my coffee mug. When it's all gone, I'm done! I probably use 1/4 c per cup of coffee. It's my version of a foo foo café au lait a la LC WOE!!!

Well I blew my 4th of July Challenge, in a way. I lost another pound! I was hoping I wouldn't lose any more. Oh well...

Good job, everyone! It's so good that we motivate one another. In-law here this weekend and they got a bit defensive when I kindly declined to eat ice cream and drink some wine. 'Just this once won't hurt' didn't work on me and I dug in my heels. At least right now I'm in a zone of not veering off course, but that can change at any time, which is why I need you guys! See you tomorrow.

OMG ladies, can you imagine I have NEVER ever been concerned that I've lost TOO much weight... that never happens in MY UNIVERSE.... Holy Hannah...

Patience -- Maintenance is a huge challenge, cause I thought I had it all figured out... but apparently not... so back to the drawing board.

I really didn't do much to get to this "maintenance" portion of the program. I just stopped losing the weight so I figured I'm done -- "touch down" (not done with the WOE, but done with increasing kcals/carbs and the experimentation) cause I'm in this to the grave...

Oh well...

Wow only 15 lbs to go... that is terrific!!! So when you lose your last 15 lbs, how many pounds would you have lost total, cause your stats don't say...

Good job warding off the in-laws and their killer carbs... They mean well.

You know what works well and I've done this hundreds of times because I didn't want to take the time to explain my WOE -- I say "Ohh sounds [smells, looks] yummy, I'll have some in a little while!" I've never ever had anybody come back and ask if I've tried some...interesting huh?

Mary - just whipped up some pumpkin and tofu, I did get the firm. It's chilling now, I always liked my pumpkin pie cold, not warm. Weird, I know. I was a little heavy handed on the spices, will tone it down next time. Also put some in a popsicle mold, will see if that works. Thanks again for the idea !

Any more news on Binzi ?
