Supper in the oven...white fish with veggies...baking it in foil with the cut veggies, summer squash, yellow and red peppers, green onion, tomato...I am not doing induction...so I use a small amt...of onion and tomato...using some Greek seasonings with my butter and lemon juice...add salt and close that foil...and cook...

Christmas Salad
1 small cottage cheese
1 small can crushed pineapple (drained, I use only 1/2 for lower carbs)
1 box sf gelatin ( I use strawberry )
1 8oz container whipped topping ( make your own)
Can put in chopped pecans ( more carbs)

I have this as a dessert and a treat.

Sorry, I don't post much on the weekends. That is our family time, so I spend a minimal amount of time of the internet.
This weekend went well. I'm feeling well. The books I ordered from Amazon finally came in so I've been reading The Art and Science of Low Carbohydrate Living. I haven't decided if I am going to get a blood ketone meter and start tracking my ketone level that way. Does anyone here do that?

Fixed my lunch as I got home from shopping for afew groceries..
I don't buy Atkins products much at all...I bought the chili dinner and added alittle Jimmy Deans ready cooked Turkey to it...then I made Cheese crisps in the micro for my crackers....
So now only grilled chicken for supper....and no snacks ....

I did buy 2 different Atkins bars that might help my DH on his way to work for breakfast...he is trying to lose with me..yea....so I thought this might help him some...

Joining in on the May challenge, I am currently day 2 on the Atkins 72 induction. By May 1 I would like to be down 10-15 pounds, I used to come to century club last year...well you know how it goes, my starting weight 333.2, I won't be weighing everyday, as long as I can keep myself from doing it!! Trying to change some habits and that is one of them! I drive myself crazy with the scale and number.

Monday Check In ~ OMG, today was not the best Monday ever. But Toastmaster meeting was good and now I am home getting a few things done before bed.

My pork roast dinner last night was .... I just need to better plan my life with more time for cooking (not sure how that is going to happen).

Still struggling with water when I have a busy day. Hate using the bathroom every place I go

Lady ~ Only Atkins products I have found is the shakes, which I use everyday for breakfast and bars, which I like but find that I always want to eat more than one.

Oncloud ~ Christmas Salad sounds Thanks for sharing recipe.

Thanks Joanne0 ~ I'm really trying to create walking as a new habit (not working yet).

Jess ~ Sorry, I hadn't even heard of a blood ketone meter but I have used the sticks.

Well I am up early and making my list of stuff I want to make to take on our road trip this week...We will be having a couple of fun days with a lot of walking and I want to keep to our LC as best we can...It does help with my DH on board with me...I did give myself permission for a free meal if needed but will be careful....

I did try one bite of an atkins chocolate coconut bar last night for the first time and that was the first snack I have had in 7weeks...and I still don't eat after 5:30 pm...it tasted like a mounds bar ...not as good but not bad...Sweets are not my down fall so I can skip thoses but give me that bread or potato and I am a happy person lol....

I haven't tried the coconut bars but they sound yummy! I do eat the bars sometimes.
Lady- I guess we all have our struggles. Sweets!! Wish I didn't love them so much! Bars help and so does my Christmas Salad. I've been making the Muffin in a Mug. Made with flax meal. Pretty good and very easy.

May Day Challenge

Hello all,

I am interested in this thread because it hits home. I have been working on me since this time last year. I hit a plateau wall since the holidays and have been having trouble ever since. I started back to doing "Atkins" or Lowcarb eating while this time incorporating exercise into my plan. I feel better than I have in weeks. Fluid buildup, lack of energy etc... I have lost a few pounds since mid-March from 343lbs to 336lbs. So I keep striving towards my first goal of getting down under the 300lbs mark. Most days I go home and don't feel like doing much after a long day at work. but I like seeing the results it brings from working out daily at least 30min each day.

Hi onclud9, yes sounds like a plan... I am so ready. I just did 25 min. of exercise. I cooked a nice dinner but once I finished working out I wasn't hungry, so I will have an atkins shake and call it a night.

oncloud...I think the coconut bar might be ok if it was kept in the ice box...It is not the real mounds or almond joy but just a very little bite does great for me...lol

Well I made some turkey,ham&cheese roll ups with mayo, deviled eggs, some sliced cucumbers and small dill pickles to take on the road for our trip...I also make some cheese crisps and salami chips...(never made those before...but they are good) LC fruit and a couple of atkins bars for DH....We will be eating out too but this will help us stay on track ...With my DH is doing this with me that does help....

Hope all have a great week losing

Tuesday Check In ~ Another busy day and I didn't plan food which has me reaching for Atkins bars and other things that I shouldn't. I need to work less or have a chef

Actually I need to stop making excuses and get my S*$T together.

Missed my elliptical over the past two days. Still trying to make it a habit.
Did good eating on plan so far. Yesterday made tacos with low carb tortillas and afterwards felt extremely full and uncomfortable. I haven't had any "low carb products" up to this point except for the tortillas.

Cindy- Lol- a chef would be a dream!

Cindy - I agree that planning meals is key. If I don't plan my meals in advance, that is when I end up eating things I shouldn't. Not "cheating," just things like peanuts, which I am trying to avoid, that aren't the best for me.

Lady - Have fun on your road trip! Sweets are so hard for me. I am like an addict when it comes to ice cream. I would eat ice cream everyday if it didn't make me gain weight! I wish sweets weren't the problem for me.

I did pretty well yesterday. My day should be pretty uneventful until this evening when I have a meeting I have to go to. There will be plenty of sugary snacks, but I plan to just drink my water and skip the refreshment table.

Wednesday Check In ~ Just finished walking tape for second time tonight. Had a good day. Trying really hard to get organized for the weekend away but so far, I've been consumed with work.

Still not drinking enough water. The new store is about an hour and 15 minutes from home and I really don't like having to stop every time I turn around to go to bathroom or even worse, every place I go for a meeting, I have to use the bathroom

Jo ~ Seems good habits are so much harder to create. I love tortillas but where I am, there are no low carb tortillas and I ordered some on line but I didn't like them very much and with shipping, the were ridiculously expensive.

Jess - How did your meeting go?

JoanneO ~ We will miss you.

Jesika ~ I agree, Lady should open a low carb restaurant For me, I love to cook but never seem to have any time.

Cindy, I was having a hard time with water, but I've been able to increase my water when I'm commuting (about 90 min each way). You're body will adjust and not need to go as frequently. Just increase by a couple of ounces at a time and bathroom visits shouldn't increase by much. I know you can do it! You're doing great with your dedication and commitment to exercise. :-) I'm all about timing when I drink so needing the bathroom doesn't interfere with meetings or when driving.

I am so excited that the last couple of days when the scale is adjusting I keep seeing the 200s. I am so close!!

Thursday Check In ~ Good day. Someone brought in a huge box of donuts which sat in the lunch room all day. I didn't cave but boy were they calling me.

Really looking forward to a relaxing weekend away. I don't have a lap top anymore so I may not be able to check in until Sunday when I get back. I have a tablet but I really don't like it .... need to look for a new lap top.

Kathy ~ How exciting that you are so close to the 200's. Thanks for the tips about water.

Wednesday went really well. I didn't have any snacks at my meeting. Yesterday I hardly ate anything because of a debilitating migraine. Today has been awesome so far! I think the hubby and I will go out for dinner.

Goodevening everyone.....We are back home...having fun time always goes by fast...I have to say...I am so proud of myself ...I did not...I repeat...yea...I did not get off track while I was away having fun...now DH we will not talk about lol....I just had my menu made to what I could eat everywhere ...grilled not fried...mmmm no snacks or sweets. I made deviled eggs and ham and turkey with hot pepper cheese roll ups for the road...up and back....so that took care of that part...I just had a great time with my DH ...loved walking down the beach and then a fun day at the Universal Studios walking and it was not busy..yea!...the lines were short, short....

Jo...will be praying for you..hope all is well

Cindy...hope you weekend is great and relaxing....

Kath...you are doing greaattttt!

Have a great weekend allllllll!
