I just made the most yummy avocado chicken salad. Wow. Now I have to go make some almond thins to eat it with.

and porch swings shouldn't be too expensive walmart sometimes have the free standing ones Ken bought me one about 10 years ago and i love it i think tractor supply has the ones that hang from the cieling

Ours hangs from the ceiling. My feet don't touch the floor so dh has to swing us. LOL

We used to have an older guy here in town who made them. We bought one for the front porch of a home here in town that we owned. That was 35+ yrs. ago and that house still has that same swing. They were well made.

Chewie......share your recipe for the avocado chicken salad please.

Good morning. I think that's an oxymoron on a Monday. roflol

Dinner was great. The parents were very happy and finally left about 8. Then dh and ds14 played basketball and came in all soaked in sweat. Bleck. DS18 had to work so he missed our family dinner but I saved a plate of his favorites---the poppers.

Sue, here you go. I used regular onion and added a few cloves of garlic, cumin, black pepper and a dash of cayenne. I also served it with lc almond thins. Everyone loved it.

Chicken and Avocado Salad with Lime and Cilantro
(Makes 4 servings)
2 cups cooked chicken, shredded into large pieces
2 medium avocados, diced
1 T + 1 T fresh squeezed lime juice
salt, to taste (I didn't use too much salt because you can always add more at the table.)
1/4 cup thinly sliced green onion
1/2 cup finely chopped fresh cilantro (or chop it more coarsely if you prefer)
2 T mayo or light mayo
Shred the chicken apart until you have 2 cups of chicken shredded into fairly large chunks. Dice the avocados into medium-sized pieces, mix with 1 T of the lime juice, and season avocado with salt to taste. Thinly slice the green onion and finely chop the cilantro. Mix mayo and 1 T lime juice to make the dressing. Put the chicken into a bowl large enough to hold all the salad ingredients. Add the sliced green onions and dressing and toss until all the chicken is coated with dressing. Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken. Then add the chopped cilantro and gently mix into the salad, just until it is barely combined.
Serve right away or chill for a while before serving. This could be served inside pita bread or sandwich bread, but we just ate it as a salad.

Yesterday I didn't feel well at all, had a mild headache on and off all day and my stomach was totally full and bloated. I hardly ate anything---couldn't even finish one scrambled egg for breakfast. Tried to push the water but it was hard. Today I think I will make it a very light eating day but have to stress getting in my protein. I'm going to my fav Chinese place for egg drop soup---my comfort food. Can't wait.

that soup sounds soo good it is so hot here though IDK what to fix all i can think of is maybe tuna salad or something cool(well i keep thinking pasta salad or potato EEK!!)

how hot is it in GA today?/ i am on my last nerve here IDK it isn't Ken's fault he is sick and all the frustrations and worry and i blew up like an idiot and scared everyone to death
no progress made on the fridge either
there just seems to be no hope left anymore no one to talk to the lonliness and worry are going to be the death of me

It was hot. In 80's so not terrible. I just stay inside. I'm not an outdoor person anyway.

Yeah. Nik should have worn a tether. Too scary.

deb- Don't blame yourself. Your whole family is living with stress so they understand. I wish things would get better for you and Ken. My nephew worked his last day last May 12. He still doesn't get money. Physical doctors said he is not able to work and he has been diagnosed with PTS too. Vets haven't payed yet either. It's such a long and frustrating process. Just know there is a better time coming!
