chris- I feel the same way. I came on here earlier today because I had already had my snack and it wasn't time for dinner. It helped. Hope your back is better soon.

deb- Glad to hear you will have some help. It's just too complicated these days and they hope you will give up.

Chris--hope your back gets better soon. Double shifts are awful especially when trying to eat right, exercise and now you have the back problem. Sending "gentle" hugs. Plus you still have plenty of time to get your stamina up before your August trip.

Deb--I'm glad you got the paperwork and are getting some help. That's great. Good price on the gas too.

thecloud--it's great that you had a good time on vacation. 2 lbs in nothing, that'll be gone in no time at all.

oncloudnow---good job avoiding extra snacks. Coming on here helps me too.

I made Yankee jambalaya last night for dinner. It was the second time I've made it and it's just awesome. Here's the recipe, I highly recommend it. BTW, I add 3X as many peppers and I add a pound of cut up mushrooms too. I need to bulk it up some for my family as shrimp is not a cheap protein. YUM

Yankee Jambalaya from Low Carb Kitty!
5 net carbs per serving, four servings
Bacon, 3 strips, cut into small pieces (aka lardons!)
2 tbsp water
1 tbsp butter
1/2 of an onion, chopped (I used a spring onion I used from my CSA box)
Garlic, 3 – 4 cloves
Bell pepper (I chose yellow), chopped into small pieces
Chicken broth, one cup
Tomato paste, 2 tbsp
12 shrimp, cut in half (mine were frozen and pre cooked/shelled)
3 sausages, cut into slices
Tony Cachere’s original creole seasoning
Smoked paprika red pepper
1. In low-medium heat pan, render down the lardons to release all that yummy bacon fat
2. Add in the water, butter and onions – sautee/simmer until onions become transparenty
–raise to medium high heat–
3. Dump in garlic, bell pepper, broth, and tomato paste and let meld, few dashes of the creole seasoning & smoked paprika (be light handed if you don’t like it too spicy)
4. Add in the shrimp and sausage – let it all simmer for about ten minutes – spice to taste with more creole seasoning (and more smoked paprika if you want more of a kick)
DO NOT SALT, there is plenty of salt in the creole seasoning.

Sounds wonderful chewie! Is the creole seasoning easy to find? Would any do? Dr. Oz says peppers speed up metabolism.

michelle- Did the same thing on my trip, but it was gone in a few days. Water weight. I always swell when riding a long distance.

Down 1/4 lb. today. Right direction at least.

Oh, buying Atkins shakes and bars today. Hope it's not a mistake. Used the free ones from Atkins kit and kept losing. We shall see. They make me feel like I'm having a candy bar. Yummy!

WHEW filling out paperwork today and copying documents and dang nab my printer decided it couldn't find my wireless and of course i could not find the install disc for it been fighting with it for a couple HOURS and FINALLY thing=k i have it working but my computer just said scan to computer no longer activated soo i bet it lost it AGAIN! i uninstalled and reinstalled from the website IDK how many times and then it even told me it could not find it and it hooked up by USB geeze a loo! i wish things WORKED anymore seems like the newer stuff is the less time it WORKS

Ken did not sleep again last night he looks like a zombie the neighbor called and he went over there to hang around in the garage for a while i hope it helps him to be out of the house but i also hope that he does not try to DO much over there he was even dizzy putting on his shoes today

Good afternoon everyone....its been busy here with grand babies today!
Chris...hoping your back is better soon. There is nothing like back pain.
Chewie, your recipe looks really good!!
Michele, those 2 pounds should come right back off if you just jump right back on board!
Cloud 9, I really like the dark choc. Atkins drink. The Mocha is ok also. I do not care for the vanilla or strawberry at all. I leave the bars alone because they are just like real candy to me. I just can't handle them.
Deb, how are things going today with you today, besides going crazy with the computer!! Glad to hear Ken got out of the house for awhile.
Here is my menu for the day!!

B-Greek vanilla yogurt, home made Cliff bar
L-mixed raw veggies dipped in Blue Cheese dressing..a can of vienna sausages. I know....they are not real healthy. They were on sale cheap and they take me back to my childhood. Love them!
S-jello with whipped cream if needed and or pepperoni chips
D-Asian Meat Balls, baked veggies in olive oil and spices
S-Mixed berry no sugar dessert with coffee

1 tablespoon cayenne pepper
5 tablespoons paprika
3 tablespoons salt
DIRECTIONS:

I can drink coffee again.....This morning I took the plunge and had a cup of coffee with JUST heavy whipping cream and ONE tablespoon of sugar-free Carmel syrup - WOW, DELICIOUS!!!!!!!!! Thanks everyone for the suggestions - Never thought that I would be drinking coffee without 5 spoons of sugar - LOL - YEAH!!!!!!!

Thanks deb. That was very interesting. Taught school 19 years and never knew all this. ( If so, I forgot.) You're right about Stevia. Really grossed out first use. Put way too much!

wow taught 19 years! whew i subbed for about 11 that was enough for me! but i sure hope i get a few days of calls to sub this fall we will need the money bad this year
soo soo hot today Ken is soo weak and tired this afternoon going to turn his paperwork into his work wore him out he used to make that drive(an hour away) work 10 hours and drive back and still do stuff around here now me driving him there and back and him just going in for about 20 minutes WORE him out IDK what to do

Yes, 19 lovely years. I quit early after my mother had several strokes. I needed to help Daddy out, my health was failing and I had my own daughter to raise. I haven't mentioned it because there's never been a time that called for it but my daughter is in a motorized wheelchair. She has cerebral palsy from birth. The cord was around her neck and eyes. She is 33 now and lives in an apartment on her own with assistance from CNA's. We never got any help when she was growing up. People always think you get a check and medical services for free. Not true. She never got any money or us for her and she was on my insurance just like the rest of us. Trouble is, insurance will not pay for things needed. Jerry's Kids is a joke, so is Crippled Children and Cerebral Palsy Center. Only people that helped us pay for our copay on her first wheelchair was Shriners. So, I always give them something even if it's change.In 1989, she was 9 years old, and our part of wheelchair was close to 4000 dollars. She is paralized on right side and not strong on left so had to get motorized chair. They really cost more than many new cars! Crazy. OK, don't know how I got off on such a tangent. Just feel sorry for myself tonight. We went and bought groceries for her today and dh is trying to get the a/c fixed in her van. BTW, no insurance or medicare or medicaid, no one helps buy a lift That is considered a luxury. Really??!!

Good evening everyone!
cloud9....you have to be a really strong person to go through what you have been through with your daughter. What a blessing that she can live in an apartment with assistance. I would think it would give you comfort in knowing if something happened to you she will be ok. The Shriners are a good group of guys when it comes to helping kids. Hugs to you and your family. As they say....what doesn't kill you makes you stronger!!

I have been going through a bunch of my LC recipes. I am trying to make a menu out for next week. Trying a couple of new dishes each week has helped out the last couple of weeks.
This coming Tuesday it will be 1 month since I started back on an eating plan. I have cut out sugar and I am sticking with mostly LC items with the exception of some berries and an occasional apple. One thing I have noticed a BIG different in is my energy level. A month ago I would be counting the hours before it was time for the little ones to take a nap so I could take one also. Now it is seldom that I even take a nap. Sugar is such a drug!!!

sue- Yes, that was our main consideration in getting her into a place of her own. She pays her own bills by computer and has a full life. I do apologize for my rant last night. I never tell anyone about the background. I just tell how she is in her own apartment now and doing great. BTW- I was hungry! I feel more comfortable here. No judgement on weight and WOE so I guess I hope that carries over into other areas of our lives.

Down a lb. today. Happy, but in one of those, "What's a pound to an elephant" moods. I'll get over it.

B- 2 eggs/cheese, ham, coffee
L- Atkins Shake, Dobie Muffin/cream cheese
D- not sure yet
S- Atkins Bar
