So I made an over easy egg and 3 tiny turkey sausages. I ate the whole egg and 2 sausages but gave the last one to Stoli. I am full!!!

I got the washer stuff in the dryer, made buffalo dip for tomorrow and did all the dishes that ds14 brought down from upstairs. GRRRR I also made him a bowl of white queso dip for his pork rinds.

Wow---just was checking on fb and saw my bff's ex just changed his status to "in a relationship" Really???? The divorce was only final on Thursday! What a jerk!

Tonight's dinner is: tequila lime wings, cream of spinach soup and cheese crackers. I was going to make a lc bread but dh requested crackers. Since I was planning on making the almond thins(adding cheddar) for the dips tomorrow, I said no problem I'll just make 1 1/2 x the recipe. He said I better make double. LOL I guess he's missing crackers.

Good job!

The worst part about LC for me is breakfast. I'm like...eggs again? Somehow I can't bring myself to eat roasted meat for breakfast so I keep going to eggs. Think I'm gonna make myself an almond pancake today.

My, he couldn't even wait till the ink dried on the divorce decree! Good riddance of him, I don't know him but this action alone tells a lot. He was most definitely cheating on his wife. Jerk!

Glad you found the source of your headaches.....Yeah, no wonder they call artificial sweeteners excitoTOXINS.......I stopped all diet drinks- sodas, crystal light, DaVinci's, etc. a while ago due to headaches and knowing artificial sweeteners are bad news. I'm crazy that way. Now, only 100% Stevia extract.

Who knew...lol I would have thought it might explode...I bought one at Sprouts the other day...I know they are really low in calories..so, I looked up roasting it...even though I almost never roast veggies for some reason...going to try this:

HOW TO ROAST A WHOLE BUTTERNUT SQUASH
Hands-on time: 5 minutes
Time to table: about 90 minutes

1 butternut squash, washed under running water

Turn the oven to 425F. There's no need to wait for the oven to preheat, put the squash on a baking sheet or in an oven-safe pan of some sort and put it straight in. Wait awhile, the house is going to start smelling really really good. (You might want to rustle up some snacks because the cowboy and cowkids are gonna be hungry.) A medium-size squash, less than two pounds, took an even 90 minutes, a larger one might take longer.

That's it. Really! That is IT! Well, okay, so you also need to slice it open and scoop out the seeds and peel off the skin. Then that's it!

YIELDS (MY OWN EXPERIENCE, YOURS MAY VARY)
18oz butternut squash yields 9oz roasted squash
34oz butternut squash yields 19oz
44oz butternut squash yields 24oz
7oz = 1 cup packed cooked squash

This means that, roughly, a two-pound squash will yield one pound of cooked squash. Good to know!

ALANNA's TIPS & KITCHEN NOTES
Do use a baking sheet or something to protect your oven, some times the squash oozes a bit of sugary juice.
Nope, I didn't prick the squash before roasting. And I've done it twice six times now, once in 2006 and again in 2011 and not a single squash blew up. So given that, I'm sticking with the no-prick roasting. Breaking the skin will let moisture out and some of the sugars will seep out and burn, like they often do when you roast the squash cut-side down.
While you're roasting one, roast two or three. The Recipe Box for winter squash recipes is filled with squash recipes that call for cooked squash. They're marked with this little icon, , cool, eh?
I haven't figured out why (and wonder if it's just the difference between one squash and another) but some times the squash comes out just like we want and think of as perfect: cooked through, smooth and sweet, meaty and moist. But some times the squash comes out almost wet and watery, some times it comes out dry and fibrous. I've had this happen with three different squash cooked the same length of time at the same time. Ideas, anyone?


NUTRITION ESTIMATE Per 1/4 pound (roughly a half cup): 45 Calories; 0g Tot Fat; 0g Sat Fat; 0mg Cholesterol; 4mg Sodium; 12g Carb; 0g Fiber; 2g Sugar; 1g Protein. WEIGHT WATCHERS Old Points 1, PointsPlus 2

Going to a bridal shower this afternoon. Hope it's fun.

My Kindle went crazy....green light but message battery is almost drained. Was it a battery or a software problem? Reset it 7 times. Same thing. DH tinkered over it, decided it was a battery issue. Replaced the battery, now it doesn't come on at all. Aaaaargh! Hate reading my books on the iPad. It's too heavy and makes my eyes hurt after a while unlike the Kindle. Plug seemed to suddenly not fit snugly, maybe that's the problem. Hope he can figure it out soon.....

My mother used to cut an acorn squash in half and roast it with butter...it was yummy...I haven't had an acorn squash in forever.

One not LC thing I love for breakfast is when you take those prefab hash brown rectangles, lay them on a cookie sheet, place 1/2 or 1 slice of bacon on each, and roast in the oven. Comes out crispy and full of fat. A true calorie bomb. And so delicious.

Don't ever make it anymore....

I am seriously going to make myself some roast chicken thighs... they are cooking as we speak.. my favorite way too.. seasoning salt and roast on a high temp.. that's my breakfast for today..

Acorn squash has become so expensive! We love it but just one small squash around here runs 5-6 bucks or more.

I never grew up with one.. so I never took to it.. but now that my drain is acting up..I don't use it for sure.. cause sometimes they do.....but now I take my biggest stainless steel bowl and wash out of there and then open the doggy run door and toss the water.. double duty cleaning the doggy run!!!
