It will be 72 today. Yesterday, it was 81.7 outside my door. Summer is on its way.

Hello Ladies! Slow day at work so I was able to catch up on reading the posts (off and on). Sorry I've been MIA. I have a bit of a compulsive nature and I've been fiending on this new computer game of mine. It's all I want to do during my waking hours.

I can't believe it's already so hot for some of you.

DH and I have stumbled a bit with LC but I'm trying and hanging in there. Been having some emotional and motivational problems lately. I just don't do well off of my BC pills. I tried to quit them for over a month now, at the suggestion of my doctor, but I just don't like the results.

This is an excellent recipe. Dh said they are restaurant quality.

Chocolate Chip Coconut Bars
¾ cup almond flour
½ cup unsweetened shredded coconut
¼ cup coconut flour
1 teaspoon xanthan gum
½ teaspoon baking powder
½ cup butter, melted
½ cup granular erythritol
2 eggs, beaten
½ cup almond milk(I used coconut milk)
1 ½ teaspoons blackstrap molasses(I didn't use)
1 ½ teaspoons vanilla extract
¼ teaspoon stevia extract
½ cup sugar free chocolate chips
Combine almond meal, coconut flour, coconut, xanthan gum, and baking powder in medium bowl. In another bowl, whisk together butter, erythritol, eggs, almond milk, stevia, molasses, and vanilla extract. Pour butter mixture into dry mix and stir together until well combined. Mix in chocolate chips. Spread into a greased 8×8 baking pan. Bake at 350 degrees F for about 25-30 minutes.
Makes 16 squares Net carbs per square: about 2 g

I stepped on the scale today and SURPRISE! I am now down 63 pounds!!!!! Today is 15 weeks so a little over 4 pounds a week!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

So where is she heading to? Hawaii???? It's Spring break time
so maybe some place fun with the kids?

2nd day of Sue doing crazy things. Early morning....bathed, started putting clothes on. Went to put bra on and guess what. I found myself putting on one over another one I had already put on!!!! Geez!!!!!!!!

Sue, if you think you're having senior moments.........ummmm - well - when I saw 'muffin', my mind was on MickyD's..........I've just discovered Jimmy Dean's Delights made with turkey sausage and egg white - but has that good old english muffin. Didn't even give it a thought it was just eggs/meat/cheese. And I've made them sooooo many times.........think I had a major brain drain on that one. But thanks for the chili recipe..........

What a day - well -actually yesterday was kinda/sorta stressful. All of a sudden I had flashes in my right eye, then all kinds of crazy floater thingys........and I kid you not - this circle that looks like an eyeball with a black spot in it - that I can track back and forth as I move my eye.

My DH had his regular eye appt this morning, so I called first thing - told them what I was experiencing and they said to get there asap.........She does exam - says there are no holes, no tears in retina, all looks very good -but she can see what I'm talking about. She says the gel in the back of the retina sometimes breaks loose or softens up and this is what I'm experiencing. To be watchful for any other changes - especially any shadowing on either side or like a curtain coming down which would signal big problems. Will go back in 30 days for her to track it.

Now, I was planning on picking up my new glasses this morning after dh had his eye exam. Nothing is simple.............She told me to go ahead..........that I had 60 days to change them. On top of all of this..........the 20/20 eye was 20/40 today. What a let down. I was really eager to see the diff with my new glasses and cataracts gone. She feels it will settle down. I sure hope so.

We even had some snow flakes here today..........but they didn't stay and it has warmed up some even.

ALERT TO MELINDA - GARLIC STORY HEAD. Just made some garlic bread - sorry - I'm on a garlic kick lately - even tried them on tortillas that I cut up - ugh - not a good substitute at all. So I bought French Bread - and it was delicious. That's my dinner - with rot. chicken - got to get those proteins in there to kick the carbs to the curb.............That's my story and I'm sticking to it.

Linda, prayers for you and that pesky eye. It's scary isn't it? The doctor must not be too concerned if she is letting you wait 30 days.
