PIGS IN THE MUD CAKE

You will need:
- A biscuit/cake of 20 cm (self-baking cake and some stores sell them plain)
- 2 x large bar of milk chocolate 200 gram
- 1 Cup (250 ml) whipped cream
- Filling for the cake of your choice ( a layer of jam / tart fruit and a layer of pastry cream, whipped cream or butter cream.
- 3 x a five-pack KitKat
- 1 packet (250 gram) light pink marzipan
- Cake saw or large knife
- Skewer (for the pig eyes)
- Ribbon
- Flat board or plank to the cake to set

In advance you already prepare the pigs, there’s no real method … just a bit like sculpting in elementary school once

Pour the cream into a saucepan and place over low heat.
Continue stirring until almost boiling.
Meanwhile, the bar of chocolate into cubes break.
If the cream almost boiling turn off the heat and stir in chocolate the cubes
Stir until you have a smooth mixture.
Let this cool and thicken and occasionally stirring (takes a while).

In the meantime you take your already baked biscuit and cut it in 2 layers and fill with your filling of choice.
Keep your cake on a bread board or other surface so you can easily rotate because smear the sides, is a nice mess
Break the kitkats already in 2 and put them ready.
Look how thick the chocolate mixture is, when he is about as thick as custard you can smear the sides of the biscuits/cake
Use a spatula or just the back side of a knife.

If you have the whole cake smeared around you can stick the kitkats.
This is a difficult job, the kitkats sometime will not stick and fall occasionally.
Put them a little slanted so they lean against your cake.
If they were all sitting around you quickly do a ribbon around it and put them all pretty straight.

The rest of the chocolate mixture, you just pour this on top of the cake.
Please note, when it is too thin it goes through the kitkats wall!!!!

Then you put the pigs in the still soft chocolate and put in the fridge.

After an hour
you can put cake on a beautiful plate and serve, enjoy!

Oh girl I remember your power is so expensive. Ours during the summer (read May through mid-October) runs in the $400s monthly for 24/7 operation for cooling of 3,100 sq. ft. But we just can't survive without AC around here, it's above 100 degrees for months on end.....

And heat's been getting worse each year, it seems.

They look like they are made from Fondant.
Search edible farm animal cake toppers how to and you can probably find some tutorials.

Another thing you might be able to use would be an almond paste / Marzipan .. that'd probably be lower in carbs (but not sure).

added edit:
(sorry saw someone posted the recipe above - but you could probably use fondant as well as Marzipan).

Why is your electrical so expensive!!! What are those power companies doing and who is allowing it?

Melindochka, the heat here is like a furnace......unrelenting for months and months and months......and an obese person like me doesn't do well in such heat.

Cookie Bars

Also re: cookie bars.

You could make like a lemon bar, or maybe make like a nutbutter cookie by splitting the crust, thinly spread with nutbutter, top with crust, cut in squares/oblong then either dip in melted chocolate or just spread on melted chocolate. or even after putting on the nutbutter top with some of that marshmallow stuff and then top with the crust and chocolate. or you could just use nutella between the crusts.

I've also seen like samoa cookie bars or some type of chocolate coconut bars.

(sorry no recipe just some ideas).

I need to do exercise but can't do the walking I tore the meniscus on both sides of my knee, had surgery twice. Now the surgeon says I need a knee replacement due to arthritis. --- of course I don't know how the arthritis became an issue when it wasn't before the surgery. sigh. anyway I can't walk too far without a cane. that coupled with like 5 herniated discs along my spine. After 48 it's all downhill. ugh.

(hence why I'm back on the lc bandwagon )

Hope it all works out. Must be tough to deal with all these issues. I'm 46 and refuse to accept it's all downhill from here. We will be fine. It's never too late to start and turn one's life and health around.

Have you tried exercise biking? Not weight bearing on the knees. Or water exercise?

P.S. as someone with back problems, can I recommend the MELT method? Involves a foam roller. Free videos are available on YouTube. Has really helped me as of late. Sometimes discs are pulled out of place by tense muscles or dry, unyielding connective tissue and will improve when the aforementioned are improved.

GOOD MORNING Sunshines!!!!!

Yes I am alive and well and still breathing

Sue, I didn't join the gym yet.

As for your piggies, I would make them out of gum paste. It is very easy to work with and you can buy it premade at walmart. Tint it with the paste frosting colors and just work it like clay. Just make sure you make the piggy parts three or four days in advance so they can dry. You could use fondant but to get all the detail I vote for gum paste. Marzipan is a good idea as well.

Thanks. I globbed on the hydrocortizone last night and today it feels better. It doesn't look much better---I didn't use anything on my face even though it's dry as the desert. I was afraid to aggravate it. I just put on some lipstick and that's it.

Same here. Last year was the worst as I was the heaviest I've been in years. This year should be better for me, especially since I am cold quite frequently now.
