Sunday is St Patty's Day. Anyone making corned beef? I am, we love it. Here's a recipe for leftovers.

Reuben Casserole
SF Thousand Island Dressing:
In a bowl mix...
1/2 cup mayo
2 tbls Heinz reduced sugar ketchup
1 tbls sugar free sweet pickle relish (i.e. Vlassic)
1/4 tsp white vinegar
Dash onion powder, salt, pepper

Reuben Casserole
1 lb leftover corned beef, diced into 1/2 inch cubes
1 pint (16 oz) jar sauerkraut, rinsed and drained
6 oz shredded Swiss cheese
1 recipe of above Thousand Island dressing (or about 2/3 cup dressing if using jarred or a different recipe)
Mix all together in a big bowl. Transfer to a 2 quart baking dish. Bake at 350 for 25 minutes. For the rye flavor, a few caraway seeds could be added, or some might opt for a few rye bread croutons if it fits in your WOE.Next time, I think I will layer it: kraut, 1/2 the dressing, beef, 1/2 the dressing, cheese.

Ok, the dryer just buzzed. Gotta go fold the sheets. Gonna have to head to JoAnnes or Michaels or Hobby Lobby or all three. I need double fold bias tape for these little dresses I am trying to make and I bought single fold! Naturally. Oh, well, hopefully I will get better, faster, more efficient after getting a few under my belt. This dress is looking so stinking cute though! It is a hot pink with butterflies all over it and the butterflies have bright yellow, neon green, bright blue, bright orange all over them. But if I don't hurry up and finish it no one is ever going to get to wear it!

Do you have any cooking wine? You could always sub in chicken broth and a splash of vinegar.

Depending on what you are fixing, most recipes I have seen suggest using chicken or beef broth as an alternative.

I don't think we have ever had leftover corn beef. We love it at our house. That casserole sounds great.

You know in the past years you could grab a corned beef here for the most awesomest lowest price...now it's still sky high and limit one.. however I am going to buy one.. I will see the ad papers tomorrow..and I am going to make that Reuben Dip, I cannot wait.. and then I think I am going to make those almond flour and cheese crackers for the dip.. but that's only if the corned beef is on sale for a good price...

I found this recipe for chicken, a packet of that lawry's spaghetti sauce packet, wine, chopped tomatoes and mushroom.. I don't like wine..but I bet the chicken or beef broth would be just fine...it goes into the crockpot....I am trying to decide on boneless or thighs.. depending what's on sale around here..I found the recipe on this site.. on the slower cooker thread

Unfortunately my hubs is not a huge fan of corned beef.. OMG that is my favorite!!! yummmmo

We went for a walk in the snow. Got a mile and a half in and I broke through some ice that was hiding over a pot hole. Now I have a pretty purple ankle. Yeah me. LOL

Elizakins hold your chair for this one.. these Tv's one has been sitting in my son's closet for 5 years.. and all I hear is that we have to take that to dumpster and the other 2 for 2 years...they have a huge dumpster at my hub's work, that you can throw anything in there I guess..and so it's all hubs says, to my son when you have a day off of work let's take it.. well I am thinking you have a badge that opens the gate at night.. can't you take it then??? GRRR..

My son just told me he has a huge day tomorrow... he is off today for some kind of the teacher needs a rest day or something.. then he has tomorrow his classes...his new job LOL...and then the girl's basketball game..after this game, they are away...anyway so that means I have to go and pick him up after 9pm.. heatwave equals crickets...............OMGGGGGGGGGGGGGGGGGGGGGG

My son is going to give drumming lessons to one of the teacher's daughters....who is in middle school.. and the teacher asked the band idiot teacher if it was ok.. and he said yes... go figure, she probably has more seniority over him...and this guy is such a bad teacher, my son told me last night.. that there is this rally or something off campus that they usually play every single year.. but they canceled them because the guy said they are so bad... except the drumline....and he is busy being rude and nasty to my son.. my son plays quads on that drumline.. anyway..

This is just my opinion, but the parents should not buy the car for kids. My parents didn't. It taught me to work hard and appreciate what I have. I didn't have the fanciest car in school but I paid for it and it was all mine.

i ended up taking Steven lunch like normal and we went to the next town over to the new joanns there for the 2 hours we normaly would have been at college i am glad i got to spend the time with him but i told him i ain't doing it wed LOL for some reason they are off school friday
whew when the washer is ready to put in the dryer i think i am going to go to bed for some reason i suddenly got sick to m y stomach and really do NOT feel good IDK why you ladies inspired me though i think i will get Steven to help me change the bedding on my and Ken's bed and hit the hay
NOTHING from AShley yet IDK what time it was today but i am sure if things werent ok i would have heard something WHEW my stomach is really burning UGh
