hmm if i could find the flexible rods i bet Ken and i could make that cover there is a jo ans in cor=bin about 30 miles away wonder if they would have them?

I used to make a LC coconut pie that made its own crust it seems. It has been yrs. since I made it but I recall it being pretty tasty. I bet it is on Linda Sue's site maybe.

kcmama...is this the recipe?

Blender Coconut Pie
4 eggs

¼ cup butter

¼ t salt

2 t*coconut*extract (flavoring
)
2 t vanilla

½ t baking powder

1 cup unsweetened*coconut

2 cups heavy cream

½ cup*Splenda
Pre-heat oven to 350 degrees.*Butter a 9 inch*pie*pan. *Place all ingredients in a*blender*and blend until smooth. *Pour into prepared*pie*pan and bake for approximately 1 hour until top is golden brown and set. *Cool. *Store in refrigerator overnight to give the “crust” time to better set up. Top with whipped cream prior to serving.

Total net carbs are 31. Each 1/8th of the*pie*piece has 4 carbs.

Melt butter in large bowl in microwave. Let cool for 5-10 minutes. Add Sugar and stir. Add vanilla extract. Next add 4 eggs, lightly beaten. Add milk. Mix well with wire whisk. In a medium size bowl combine the dry ingredients and stir with clean whisk to combine. Add dry ingredients to liquid ingredients. Mix all the ingredients together and pour into a greased pie dish (I used 9x11” casserole pan). Bake for 45 - 50 minutes or until golden brown and done. Serve with coffee or tea and enjoy! from Marigoldsloft dot blogspot dot ch

Ds and I had to make a diorama about American Indians. We made a tiny one of these and even crafted a little pot hanging/cooking over the top. It had a teepee, a lake. It was so cute and fun to make too.

Good morning and TGIF. This has been a very long week for me. I guess it's getting used to not napping and yet being a bit too tired to really do anything productive. It's silly. I find it's better for me if I head out but I can't be shopping everyday.

Crystal, both my boys have ADD. It is awful getting them to focus and do things, even minor things. I'm sure you know what I mean. I'm working with my boys to do lc and lose weight too, especially my younger ds. He's a giant kid(6'2") and football lineman but he can lose some more weight. I think he's lost about 12 lbs so far. He eats so much, even if it's low carb. I need to reel him in a bit more and get him running more. He has lots of muscle---he can deadlift 355 pounds!!!! He just needs to tone up and lose the baby fat. I have no idea how tall he's going to be but he's only 14. Plus I told him to cut back on the milk. We were going through 4 gallons a week. Now it's maybe 2 to 3.

Good Lord I have been up since 3:30 am... due to it's raining and it's leaking in my bedroom talk about water torture...grrrr.. so what am I doing??? making a grocery list to go Walfarts after dropping sonny boy off at school...

I am just talking myself out of making those coconut pies.. I LOVE THEM!!!!

Man this was so funny, well to me anyway...the girl's soccer team, sonny boy's school...won their division championships.. so they too were invited to the state finals...the band teacher sent an email saying sign up we are allowed to bring 24 kids...and not one kid signed up...I guess the focus is really on the girl's and boy's basketball and their baseball team as well...the Los Angeles Times had them rated very high...I said jeese talk about the no team spirit for your girl's soccer team...

Anyway onward to the food list.. Good Morning Ladies...

By the way Chewie.. my sonny boy doesn't have ADD and if it's not for him, my son is hard to focus on things as well..and his is due to be lazy...Milk is getting so expensive out here...unreal..

Just chatted w/my bff on fb. Why do I cry when we talk? I'm glad to catch up with her but I guess, sad that I'm here, 2000 miles away. I still regret moving here. I'm glad for the boys---that was our main motivation but sad for me. All my friends are back east. I am so lonely here.

We could not afford it. Houses cost a lot more in the NE. Plus dh hates the cold.

Sue, this looks similar. The one I made has flour. I see that this one doesn't. What forms the crust in this one? Also. the one from Linda uses cream vs milk. I shall have to try this lc version. See if I can pass it by the family!

Hey, despite being the mathematically challenged individual that I am, I did fairly well converting the measurements. Although, I see your version has a loooooot more sugar. Did you use the dessicated and unsweetened coconut instead of the moist and sweetened package maybe? I think the way I made it it would be way too sweet with an additional cup of sugar, so wondering if the difference would be from the type of coconut.

I know exactly how you feel, Chewie. I am in the same boat...all my friends are back there too..(I lived in MA after I got married for 35 years)...and my kids...and my daughter in law's whom I am close to...very hard sometimes...perhaps you could plan a visit or meet halfway someplace just for an overnight or something. I do have one close friend out here and DBF of course...but, it's not quite the same. I am grateful for her though..she is always there for me.

When I do go home I try to see some of them...even that is difficult...I have to concentrate on seeing all the kids and they are a bit spread out...but, when I do get to see my friends..it's like no time has passed...well, except for the wrinkles..lol...

Thanks. My friends and I talk like no tme has passed also. This too shall pass. I will be looking for a new job soon and hopefully will not be so isolated. Maybe even find a job working with other people. LOL

Good morning.....
I slept in this morning which I NEVER do!!! Now I am running just that much more behind!
I have to go to the store at some point this morning but first I need to make a list of what I need so I won't spend so much money.
kcmama....yes the coconut should be the unsweetened. Its been yrs. since I have made it so I am thinking it is the coconut itself that makes the crust. Of course its not the crust like we think of....the good kind! LOL I'm thinking your recipe with the real deal...SUGAR would be wonderful of course.

I just made a quick run to Whole Foods. I picked up their special they have today only on Tulips. 3 bunches of 10 for 10$. I picked up 6 and am planning to spread some love and sunshine to some neighbors! So, if you live near a Whole Foods you might want to stop in, earlier than later so they don't run out. I also picked up some Coconut Oil, Capers, and Golden Flax Meal.
