Well, ready or not, I am back from my luncheon ladies. It went well. Great food as usual. Our guest speaker today was a nice Irish American woman who is a lawyer. She used to do Corporate law and then switched to Eldercare and Special Needs Law because she wanted to do something more meaningful with her life. She is 43! We learned a few things but she mostly had stories to tell. I did get to leave with a sheet with email addresses to look up additional info. It was good. I loved listening to her accent!

do you like panna cotta? I don't recall ever having it before myself. I will make it much more frequently now that I know how easy and good it is!

Do you like coconut? I think this coconut tart recipe I made is similar in texture to a chess pie, but I haven't had a chess pie in a long time either.

I say go for it! Then let us know. What kind of pressure cooker do you have? Is it one of those new fangled electric programmable things? I am sorely tempted to ask for one for Mother's Day. I do not have much experience with pressure cooker cooking. I think it is Melinda who used to do some. I like Ancho chili sauces..... that would be good on beef I would think, too.

would you mind posting your pork recipe some time when you find time? It sounds good.

I am sorry to hear that about your sister! I know, the shoe issue is tough. My poor mom has taken to wearing crocs. Her legs are so heavy she has trouble lifting them for walking, getting in the car, shower, etc. My mom won't do a cane or electric chair when we are out either. She shuffles alot. Does your sister find any relief with any thing? I wish my mom could do massage more frequently. When it got really bad at first she had to go for massages so they could get the fluid out and get stockings on her.

Per 1/6 recipe: 164 Calories; 15g Fat; 5g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

With liquid Splenda:
Per 1/4 recipe: 240 Calories; 22g Fat; 8g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
Per 1/6 recipe: 160 Calories; 15g Fat; 5g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs
OMG OMG!!!! I don't dare make it because it would be a 1 person serving when I finished it all!! I am not good at portion control with sweets. This looks so good. I've got to go to her site and see if she has a picture. That is what I really like about her site. On most of her recipes she has pictures! Actually as I look at it I don't see why if you follow LC that you couldn't make it a 2 serving dessert.

So glad to hear your Mom is ok. You said she didn't hit her head hard - falling is really bad for older folks. I know this is what started my Mom's decline. The doc said that hard hits can do damage to their brains. Out of curiousity you mentioned your mom has lymphedema. That's what they have said I have. Can you tell me how long - and what they have done for her? It's hard to find a doctor that even recognizes it - they want to shove it off as water retention. Linda, I would highly recommend seeing a specialist if they are thinking you might have it. It would be great to stay on top of it and not let it get out of control. I would ask about massage therapy but it would have to be someone familiar with lymphatic massage. I am so afraid I am going to end up with it like my mom! And yes I am somewhat worried about her hitting her head. She had a fall about 10 years ago in her kitchen where she slipped and fell backward hitting her head really hard. I think a lot of her memory issues seemed magnified after that.

Ok, gang, I have not even made it all the way through page 25 yet and now it is time for me to head out to get youngest from her Pizza Party to celebrate the success of their musical and get her over to dance. Got to collect her dancewear,shoes, and fix a quick dinner/snack for her. She is there tonight from 4:30-9:30. But fortunately I don't have to stay there the whole time.

I don't know anything about pressure cookers but I really want one. I ordered one of those fancy schmany ones--electric, etc and it came and did not even turn on. LOL I had to send it back and didn't dare get another one. Maybe someday. What kind do you have? Melinda uses one sometimes.

guys i am stunned just stunned SIGH
last night at 1AM!! eek Kenn texts and asks when his dad will be home?? and i tell him and keep asking what is wrong =etc nothing just tell dad to call when he gets home ugh soo i go to sleep Ken gets home about 4 am i say Kenny wants you to call Ken says get up they are downstairs soo they have been at her moms and then SITTIN G in my driveway i the freezing snow Kenny just has SHORTS and flip flops on! they think they are pregnant! ugh and could not wait to tell everyone OMG

i don't know what to say i have ALWAYS wanted grandbabies but i know with how things have been the last couple of years i know it will be like with Kenny like the inlaws have taken my son and now my grandbaby i WANT to be happy i just honestly feel it is just something else for me to cry over
and good grief their judgement seems not the best for prospective parents we were going to help them move Friday they could have stayed in safe last night and told us then

sigh she thinks she is under 3 weeks UMM the new home tests are really reliable aren't they?? back in the day that would have been too early to test
and i really really am worried just at the beginning of Feb she was talking with me about not having had a TOM for about 7 MONTHS and goodness she is 22 but did not seem worried
and i am concerned about birth defects too SIGH her Mom had 4 pregnancies the first one miscarried at 4 months because of birth defects Ashley has no canine teeth or uvula, her next youngest sister has a severe cleft palate , and her youngest sister is 12 years old and weighs 40 pounds and umm if she did not shave her arms back and legs she really would be covered

gah i am just flabbergasted IDK how to react
no school today but Steven had midterms at college took him all of 20 minutes so i am worried about that

I have the Technique 6.5 qt Oval Voice Guided Pressure Cooker w/Recipe Book - I just hope it turns on since I bought it a few months ago (can you tell I'm a procrastinator ) - the "Recipe" book that came with it was pretty thin and sad. lol.... well guess I'll see how it goes might need to wait til tomorrow now

AND there were 2 packets from colleges waiting on us when we came home NEITHER ONE with scholarships on them UGH waiting Steve to take some much in loans and THEN ken and me to take out like 16 K in loans OMG soo not happening this was from UK and georgetown KY UK costs 23 thousand a year and gr=eorgetown is OMG 40 some thousand a year they are INSANE
UK is Steven's own fault though for not getting that common app all the way complete before the scholarship deadline

soo i guess it will be EKU for sure SIGH i would say Ohio State will say the same as UK

I like the Minute Maid Lemonade better than Sunkist I think it doesn't have the carbonation though. And I've heard too much aspertame can cause bad stuff like MS symtoms and like you neuropathy symptoms. I really need to slow down I think - only have been on diet soda's for a few years before that straight Coca cola.

You can buy Pumpkorn in a few places. I usually pickup when I'm at Whole Foods. I think Netrition has them and a few other online sources (like the big A). Although a lot of times they can be low or out of stock of the more popular ones. EarthHarvestFoods (the maker of Pumpkorn) has a site where you can see the flavors and find nutrition counts. Of course if you want to go to the trouble you can probably hull them, or buy hulled in bulk at Whole Foods, etc., then find a recipe and roast them in oven. I'm not that talented so I just buy them already done up .... although I'm thinking of trying it since I've just bought some bulk hulled seeds so I can make sunflower "flour" and make some cookies, etc. - I found this recipe blog site that does gf/lc and she has some awesome looking foods on there

Well she lives up in NE so I'm not all sure what she's had done or what all she uses. I do know the lymphatic massage help, and she had some veins laser treated whatever that means - hers are leaky and I think they closed some off. I think the vein laser helped her a lot with the heaviness, and now has some type of TED hose that were special ordered called JUZO. Also of course elevating the lower extremities while laying down or resting. Her lymph specialist said not to use the pump systems because they can blow the ports (used to move the fluid). Although I have heard some people use the pumps so not sure - could be due to the type, severity, cause as to whether pumps would be beneficial. Hopefully your Mom has a good Lymph specialist as they can be hard to find.

I do wish my sister would give up grains because although I don't have lymphedema I do tend to have some edema in my feet and ankles if I eat wheat. Also arthritis in my hands. When I give up grains and go low(er) carbs I hardly have ANY swelling and a lot less stiffness in my hands. I keep nagging her - even showed her pics of my feet (crazy how it works) but she just loves her wheat (and she doesn't have much money which makes it harder)... I have gotten her to try some alternatives like Tinkyada pasta (not low carb but very delicious if cooked right). Baby steps. I keep telling her gf/lc - gonna convert her

Here is the recipe for the Coconut Tart. I wrote what I did in the instructions below. It makes a thin crust, then there is a custardy type filling and the coconut rises to the top. The original blogger's recipe said a pie pan. I am glad I used an 11x7 pan as I think it would have overflowed when it rose. It rose high then sank back after it came out of the oven. Also, she didn't say what to do with the margarine--whether to cream it with sugar or melt it. I chose to melt it. You could do either and/or both (not in the same recipe of course!).


IMPOSSIBLE TART
Ingredients
4 Eggs
50g (3 ˝ tbsp) Margarine or butter, melted & cooled
200g (3/4 cup) sugar
60g (1/2 cup)Flour
2ml (1/2 tsp) Salt
3ml (3/4 tsp) Baking Powder
500ml (1/2 litre=2 cups)Milk
80g (half pkg) Coconut (mine was pretty dry not moist)
5ml (1 tsp) Vanilla Essence
Preheat oven to 180 Degrees Celsius/350 F.

Melt butter in large bowl in microwave. Let cool for 5-10 minutes. Add Sugar and stir. Add vanilla extract. Next add 4 eggs, lightly beaten. Add milk. Mix well with wire whisk. In a medium size bowl combine the dry ingredients and stir with clean whisk to combine. Add dry ingredients to liquid ingredients. Mix all the ingredients together and pour into a greased pie dish (I used 9x11” casserole pan). Bake for 45 - 50 minutes or until golden brown and done. KC - yes - they are recommending the decompression and massage - to get into the TED hose things. Why do you worry that you might get lymphedema? How long has she been diagnosed with it? It's a jungle out there - lymphedema specialists and how do you know a good one. The more I read the more confused it can get. But, yes - I do need to address it sooner rather than later.

That's exactly what my mom did - she had 2 bad falls hitting the back of her head really hard. We noticed very quickly that it had affected her thinking and actions.

Awwwww, Deb, I am sorry, but at least that helps in the decision process. Still, he should keep looking for other scholarships and applying for them not just those through the Univ. My oldest has an appt with an Admissions Officer at UMKC School of Law on Monday.........I am not even going to try to guess how much that tuition will be.

and i am concerned about birth defects too SIGH her Mom had 4 pregnancies the first one miscarried at 4 months because of birth defects Ashley has no canine teeth or uvula, her next youngest sister has a severe cleft palate , and her youngest sister is 12 years old and weighs 40 pounds and umm if she did not shave her arms back and legs she really would be covered

gah i am just flabbergasted IDK how to react
no school today but Steven had midterms at college took him all of 20 minutes so i am worried about that
'then going to wal mart to pick up my meds someone about head on hits my van OMG wwe were inches away scared me to death
IDK march 6th is shaping up to be a heck of a day

Aw Deb - that's a lot to take in. First of all - congratulations to Kenny and Ashley and you and Ken. I know you are conflicted - but - it is their life - all we can do as parents is be there for them. Just have to keep the faith that all will be ok. Was really happy to hear though that they wanted to share it with you like they did - it was kinda cute and sweet of them. It is a special time for them - their first child. You are a strong lady - I know you love your family more than anything in this world - you will do just fine.

Well, I have lots of vein issues in my legs as did my mom. Then, and I don't really know how to describe this, but my legs hurt when say I bump one of them, like taking off a shoe and that foot slips and lightly taps my other leg--it hurts. My mom was always like this as well. I don't have to hit hard it hard at all, it just will hurt out of proportion to the pressure applied. I think you might find you feel much better after massage treatments to help get the extra fluid out of there. I think they wrap my mom's legs now as neither she nor my dad have strength to put on those compression stockings.

Deb - I was so hoping that a scholarship would be in there. The prices are so awful - how can they strap a kid with that kind of debt - sigh - and i know they do. It is just so wrong - and then to want the parents to take on that kind of debt, how do you pay back such a huge debt in our later years. How many more do you have to hear from? Keeping him in my thoughts and prayers - and you too.

Big sigh of relief here...........ds is a cop in D.C. They had closed the bay bridge because of an accident and high winds. Thought he was going to have to stay over and work a double shift............but - they opened it to cars only and he just walked in the door......boy - a mother's job is never done..........worry, worry, worry. And then turn around and worry some more tomorrow. I'm a thankful mama.

We never got any snow - thankfully...........but the winds are picking up and the rain - ugh - so much rain.........

Just Ohio State but i bet it is the same he is accepted just havent gotten the finacial package yet
he does have a full scholarship to Eastern kentucky it is just thazt i was really hoping he could go a bit further to get away from the type of people that have caused him soo much trouble these last few years

i am glad he is home safe!

that is how it started here yesterday TERRRIBLE WINDS and RAIN all day at the rivers are all flooded today then we got snow
