Sunday Crockpot Meal Suggestions?

Hello Everyone,
I'm new to LCF and just started Atkins last week. I'm down 7.6lbs! I'm looking forward to all the support here!

I was wondering if anyone had any ideas for vlc crockpot meals? I like to do crockpot things on sunday so it is ready when we get home from church. The only thing I can think of is a roast so any suggestions would be fantastic. Thanks!!!

I got TWO!

Ok the first only requires a Chuck Roast and a decent sized jar of pepperoncinis with the juice. Make sure the roast is sugmerged, if not then add water or broth. Cook on low for 6-7 hours or whenever the meat is fully cooked and VOILA... delicioso

The 2nd recipe is something my polish grandmother used to make.. It's spare ribs, 1 package of polish sausage (cut into bite sized pieces), and a 32 oz. jar of Sauerkraut and again some water, broth or even white wine to make sure all the meat is submerged and cook on low for 6-7 hours.

Oooh, I'm exicted for recipes too! Trying to fit exercise in in the evenings and trying to cook for the family is becoming difficult. The crockpot sounds like a wonderful solution! Bring them on!

Thanks Mrs.Hyder! Those sound great!

I have a recipe for country ribs in the crock pot. Cover the meat with about 1/2 cup of apple cider vinegar (I usually eyeball it) and the rest with water. Add some garlic cloves, and pepper. Cook on low 6-8 hours. Cover with SF BBQ sauce and put them in the oven for about 10-15 minutes, or until the sauce is nice and bubbly.

I made a very good lowcarb chili last week. I got really lean hamburger, browned it with red onions and lots of the regular veggies, plus others I wouldn't typically add (celery, bell pepper), and black soybeans - not regular black beans, black soybeans which are very low in carbs, added it to the crock pot with some no sugar added fire roasted tomatoes and lots of fresh chilis (and reconstituted dried chilis), green chilis, lots of comino and other mexican spices, and 1 can of plain pumpkin. It was fantastic, and the pumpkin thickened it very nicely only adding in trace carbs when spread across the whole, large crockpot. It was better, I think, that my regular chili, and even the non-lowcarber family loved it. I put some cheese on top and was in heaven. You'll have to cook it extra long, cooking the black soybeans first with your onion mixture, then add it to the crockpot and give it probably a good 8 hours so soften the black soybeans and let them absorb the flavors, otherwise they taste a little different. Try it, you won't regret it!

Southern, there are a few crock pot threads on this site, and I'll try and remember to cut and paste the link(s) tomorrow.

My recipes:
Cook a whole chicken in the crock, use the meat for salads and main dishes, and make my own broth.

Mexican pot roast: pot roast w/ enchilada sauce.

Garbage crock pot: Beef or whatever type of sausage available, zucchini or yellow squash, canned tomatoes, etc.

Chicken wings w/ hot sauce.

I also like to make ribs.

Crockpot

I like to put a pork roast in and cover with chile verde sauce. Let that go for a long while then shred and put over a salad or over steamed cauliflower (tho I suppose you could add the cauliflower shortly before eating - it doesn't take too long to cook).

I also like corned beef with cabbage (and other veggies) - I also mix red and green and not all green cabbage.
