Sue, I would recommend reading Why We Get Fat first. GCBC is a lot more boring and a tome of scientific research. I've read both and WWGF is like the Cliff notes for GCBC.

Either way, no matter which one you pick, very eye opening.

I made catfish with ground pork rinds. I did not care for it much but my boys loved it. They like pork rinds and I don't. I found it heavy and greasy although it did crisp up a lot in the oven.

I forgot to say good morning. The winter stuff isn't coming till mid morning and tonight, I guess. It'll probably be just a huge mess and inconvenience. Of course, the one day this winter we are supposed to get ice/snow, dh is working OT tomorrow. GRRRRR

Chewie.,,,I am not a fan of pork rinds either....but it makes my chicken so crispy....but I can't eat them out of a bag like a snack...

I could have skep for forever this morning.....its rainy and cold and hub's snoring is so soothing to me...I know weird....

1 tablespoon of chia seeds mixed with 3 tablespoons of water is equal to one egg. You need to let it sit for a few minutes to thicken.

Buffalo chicken cream cheese muffins
16 oz cream cheese
2 eggs
2.5 oz red hot sauce
1/4 cup shredded sharp cheddar
1 cup cooked shredded chicken

Right now on my side of the world.. it is 40 degrees going up to 57.. and the rain has passed me....tonight it's supposed to be 33.. that is pretty cold for us and I love it.. better get my pants on...

Hummm He should be home around 3 I am so excited!!!

Chewie those muffins look great.

I found a recipe that is the ham and cream cheese roll ups only it is a spread.

Chop up the ham super fine, add cream cheese and chopped pickles. I am drooling just thinking about it!

I really really really really really really really love roast beef...smear of mustard, with a piece of pickle rolled like a taquito...OMG.. and a good deli pickle.. not the jar stuff...I could eat a pound of that....my mouth is now watering.. however I am going to make my big fat steak.. LOL!!

I think i ate too much pork rinds last night which might mean i had too much salt as the scales are showing a 1lb gain. I really need to cut back on my weighing but its addicitive. I worry i will go off track if i dont. x

I'm getting a lot of "grats" for my weight but I don't know if you guys realize I had to adjust my weight UP by 16 pounds. Gained some weight over the holidays and it's high time to get back on the band wagon....which it seems a lot of us are doing!
