Chicken parm meatballs

Ingredients
1 1/4 pounds ground chicken
1/2 cup breadcrumbs
2 tablespoons chopped onion
1 tablespoon chopped parsley

Directions
Preheat oven to 400°F, setting rack to upper third part of oven. In a large bowl, using your hands, gently mix together first 11 ingredients. Shape into lacrosse-ball size balls (that would be somewhere between golf and tennis) and place a few inches from each other on a foil-lined baking sheet. In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 15 minutes.
Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese. Broil another 3 to 5 minutes until cheese is bubbly and golden. Heat remaining sauce in a small saucepan. Serve meatballs with a dollop of sauce and a raw Tuscan kale salad that has been shredded and tossed with shallots, Pecornio, olive oil, salt, and pepper.

How yummy! I've only had 3 cheesesticks and 3 hard boiled eggs today and now cooking dinner, so just reading this recipe made my mouth water biiiiig time!

I have a question....If I skipped the breadcrumbs (for carb-reducing reasons) do you think the meatballs will fall apart or still hold together? I'm not going to grill them, probably roast in the oven.

Oh honey! No fun! No idea what this is but I would clean it with antiseptic like rubbing alcohol or hydrogen peroxide, then dry it out and keep it dry. I don't think it's internal, something may have gotten stuck on the outside and infected. But if it goes on for another day, I'd make an appointment to check it out.

how about rolling it in crushed pork rinds or in parmesan??

I would suggest almond flour, not great but better than wheat flour.

ugh Ohio state requested we link our tax return to the fasfa and for some stupid reason it will not let me all info matches as far as i can see except it won't let me see the first part of my social or change it so that is the only thing that could be different ugh i thought computers were supposed to make things easier

Eliza.. know what ?? so I talked to sonny boy he said that he didn't finish the guacamole, or the other container which held the fruit salad, that it was his dad... well sonny boy is off with his friends...so when dad came home for lunch I asked him and my hubs said I certainly did not do that.. I had no idea you made guacamole.. so again my boy has to lie all over a guacamole container....hubs copped to the fruit salad tupperware..It is so frustrating I swear..

I am listening to the news right now.. and they say that people from Texas are coming into California, trying to pluck our businesses.. that just stinks...there are people who live in this state and them coming in here, means they have no regard.. I hate Republicans so much grrrr
