Lony i made a cake similar to this before. It is yum. Do you guys not like soy? i attempted it with soy and almond flour and it has a slight sweet taste. Lovely for cakes

If you want it sweet----use if for French toast. YUM Or cinnamon bread.

Good morning. Can't believe I'm up so early on a Saturday morning. You all are too quiet lately. Today will be my catch up day. I want to purge my closet again and start working on the upstairs again. Younger ds and I are going to do 1 hour today and maybe 1 hour every day till it's done. Lesson learned: NEVER buy a house with a master bedroom on the first floor IF you have kids that will be on the second floor!!!!!!!

Thought I was sick yesterday because the kids are but now I believe it was just some low carb funk that my body was experiencing...or more appropriately called carb withdraw! Lol
But this is day three and after sleeping most of yesterday away the headache and queasy stomach are gone. Ready to start the rest of my life...one minute at a time.

I keep reminding myself that I am grateful for each step I can take and I WILL keep taking them!

Thank you for the welcome and the support. Someone asked my goal and it really doesn't have a concrete number. However, the Dr said I have to lose 100 pounds before the first knee surgery. I would like to do it as soon as possible but definitely within the year which is more than realistic if I can stick to eat. My plan is low carb, which to me is unlimited protein, unlimited veggies of the non starch kind and berries as the only fruit. I do limit nuts because I have control issues.

Enough rambling for now...look forward to getting to know people better!

Good Morning Ladies...

Hope everyone had a good week....I am not mad at anyone or planning to leave...unless I win the lottery.....I get into these deep funks and I need to stay away a bit.. because I am not very motivating when I am in them... it seems the more deep funks I get into the further I fall into them...anyway...Sue has been helping me pull out of it.. she listens to my ramble and sends me the best recipes!!!!!

I am running off to do some grocery shopping.. I am making Chicken Parm chicken meat balls...found that off of Lony's pin thingy...and my store has the ground chicken on sale for 1.99 a pound.. can't beat that...My diet went completely out of control and I was way back up to a number I hadn't seen in a couple of years, feeling totally ashamed of myself and hatred for my actions.....just threw me into a mental mess.. but I have been real good this week and may have dropped 14 pounds...anyway.. better get my fat behind walking...My goal is 20 minutes per day this week..and I have 10 done...all before 6 am.. not bad...

Focus.. you know what...I get Low Carb tortillas..I tried sugar free syrups and to me they taste like rubbing alcohol smells..and I get the no fructose ketchup.. that's all the low carb products I use... It just feels like now that he has been gone, the Atkins Corporation is pushing all those low carb products....I try to use real food when I am on a good roll....at one of my stores Almond Flour is 3.99 for a pound package.. I have that.. but I have liked nothing I ever made...Cleo has a recipe for Mascapone balls..I for some reason can't post a link...it's on her lighter side blog.. but here it is.. this is my favorite dessert.. cause it has my favorite Mascapone cheese of course!!!

Mini Mascarpone Choconutty Bites

The center:
1/3 cup mascarpone cheese
1/3 cup unsweetened coconut flakes
1/3 cup coarsely chopped walnuts and/or pecans (I used half of both)
3 Tbsp sugar equivalent (1 Tbsp Truvia)

The coating:
4 Tbsp butter
2 Tbsp heavy white cream
2 Tbsp unsweetened cocoa
1/4 cup sugar equivalent (2 Tbsp Truvia)

1. Combine filling ingredients in mixing bowl.
2. Form into walnut-sized balls (about 2″).
3. Chill in refrigerator for an hour on waxed paper.
4. To make the coating, melt butter in microwave with cream, about 30 seconds, stirring at 15 or 20 seconds (you don’t want to fry the cream and butter, but merely melt them).
5. Stir in cocoa and sweetener, working in all ingredients.
6. Roll cold mini cakes in chocolate, coating thoroughly (I use a spoon).
7. Chill on waxed paper until ready to serve.
8. Keep refrigerated.

Makes about 10 at about 1.5 net carbs each!

Just come back from shopping and have some dried shredded coconut, i know alot of sweet recipes use this so thought worth buying it and trying it out. Any good recipes suggestion for the coconut anyone?

Hey crazyone, only brought the da vinci as i have read so much about it, might not even like it but i would to try first before i can rule it out completely.

I love watching videos on youtube for ideas of new low carb dishes i can make going to look for coconut recipes tonight. Brought a frisbee and going out to the park now for a bit of exercise and fun. It isnt much but better than sat in front of the comp and end up eating way too many carbs.

Good Morning sunshines. It is cold this morning but the sun is out so it will be a wonderful day!

Melinda I am gald you are back!

Focus I have hashimodos disease, which is a thyroid disorder. Soy is not good for anyone with a thyroid disorder so I avoid it like the plague

Chewie have fun cleaning out your closet. I am sure there will be lots of clothes you have outgrown. I am going to try the recipe with different variations, but it will be a once in a great while thing for me. I got an upset tummy from the egg but it was very worth it!!!

Welcome Lola. Knee surgery is never fun. I have had four. I know you can lose the weight and get to feeling better.

Is that bowolf? i watch his videos alot. He is very good.

Found this coconut donut recipe on the site, thought i copy it here incase anyone else wants it:

Coconut Flour Donuts
1/4 cup Coconut Flour
1/8 tsp Sea Salt
1/8 tsp Pure Baking Soda
3 Large Egg
1/4 cup Unrefined Organic Coconut Oil warmed
May add sweetener to taste*(I added one packet erythritol/stevia combo)

1. Preheat oven to 350 degrees F.
2. Blend all the dry ingredients together in a bowl.
3. Blend in all the wet ingredients into the dry ingredients.
4. Mix until well-blended.
5. Fill donut pan circles about 2/3 of the way full with batter.
6. Bake for about 20 minutes, or until a toothpick comes out clean.

SUE!!! mascarpone cheese taste to me...like if you would solidify heavy whipping cream...into a cream cheese consistency...just give me a spoon..

So far I've folded laundry, did the dishes, cleaned the counters, micro and went through all the misc paperwork---paid bills and got my FSA stuff together to submit on Monday. 2013 is our year to pay off our debt and I'm using the FSA reimbursments for that---if anyone doesn't know what that is--it's pre tax money used for medical expenses. Unfortunately between both boys having ADHD and my dh taking tons of meds for his kidney and stuff, we spend a lot. Dh had kidney cancer in 2007 but has been clean since.

Wow that must be nice. With the DH's company we get a debit card with the FSA money on it and you can use it for qualified purchases.

My sister has found that out as well! She had to go upstairs to her son's room......I don't need to say anymore, do I?

I was awake earlier than I wanted to be because my son was planning on heading to the State Swim Meet today with an 18 year old driver. I was not ok with that especially as we had a little snow last night. There were several accidents this morning and parts of highways shut down. I told him I would drive him and even the friends which caused a massive argument around here. He took off with them when they arrived-- a VW Beetle with 3 girls inside. Uh-huh. I have spent the last hour praying let me tell you. He is an extremely difficult person to live with, my son. Anyhow, at least he sent me a text to let me know he had arrived safely, it is a bit over an hour away. He thinks of no one but himself which is why he cannot understand why I would worry or be concerned.....he talks of being a parent some day, I don't think he will be able to handle it!

Well if we don't spend the money by the end of the year you lose it. They won't let you use it to pay off bills other than medical stuff.
