That is a really good way to think about it. It's when we give up and say "well I ate this one bite of carbs, might as well go hog wild today and start over again tomorrow" that it becomes an issue.

there are capsules! benefit woithout the tase!
but honestly a spoonful in a tall glass of ice water with some splenda or stevia YUM and soo refreshing!

Hi Deb! I'm glad your wrist is feeling better.

ACV capsules is something I can probably do! Honestly, I tried a small spoonful in a huge glass of water and it literally almost activated my gag reflex. It was the opposite of refreshing for me. I must have the anti ACV gene. As well as the anti-Cilantro gene. Patooey!

Gotta go to my Doctor's appointment now. DH talked me into coming home instead of dorking around town for 3 hours after work. Sucks when I can't get an earlier appointment. But now I have to drive to town and back home again.

OMGosh! What a waste of time and gas. My doctor appointment was canceled and I didn't check my phone messages today. So now I've made another appointment for tomorrow and it's even later! 10:45. At least I don't have to work the next day so I can stay up a little later.....but gah, now I'm going to have to drive home after work and then drive back to town and back....unless I want to hang around town after work for 3.75 hours. I think I'm going to switch doctors. I've never been in love (or even in like) with my current doc, but I didn't want to go thru the hassle of switching docs, getting my records transfered, telling all the big, long health stories to someone new, etc. But I think it's time. I can never get an early morning appointment....they overbook so I have to wait upwards of an hour on top of that.....and my doctor is constantly canceling appointments for "medical emergencies" whatever that means. She's not taking appointments again for 2 weeks! So I had to make an appointment with another doctor from the medical group.

Well, time for me to take my "nighttime" pills and head to bed.

Evening All!

Just made myself one of the one minute muffins. I have not had one in a long while and was in a mood to eat something sweet and comforting. Was about to abandon lc when I remembered these muffins. I made a chocolate raspberry one. It is yummy!

I have been doing laundry all day and picking up a bit. I have only done one round of knitting on my scarf (185 stitches). Each round takes roughly 15 minutes in a 3x2 rib. In about 3 more rounds I will get to do knit and purl rounds so hopefully I will go a tad faster.

Lony, saw the dress. Amazing. I do not believe that I would have the patience for something so tiny!

Mona, I have done that before!!! Not listened to messages and gone and it had been rescheduled. Aaaaaarrrrgh. But I am sure that I did not have to drive as far as you.I wish you could have kept that appt today. I do not like the way your BP has been up and down. Hope you get a good night's rest and try to be stressfree at work so the BP doesn't shoot up. Let us know what the doc says tomorrow. Are there specialists to see for BP issues?

Deb, glad the wrist is better. Any new news on the College front?

Focus, good job on getting back on track. I weighed myself today after 2 days of lc and I have lost nothing.....

Ok, let's get a recipe round up going for some inspiration, motivation, and way to stay on track here.

What is your favorite low carb snack? How about a recipe to go with?

Hi. After lunch I went to Pennys to pick up my order and I couldn't find the order desk. I ended up asking someone and now you can pick up orders at any register. Maybe that could have been mentioned when they called to tell me it was in. Stupid people.

Afterwards, I went grocery shopping for some good sale items--like catfish fillets for only $2.99 a pound. Came home and took a little nap. Took ds driving again but it's raining now and getting colder. Yuck. Still predicting 1-3 inches of snow tonight.

my fav low carb desert is probaly the cream cheese muffins but i have to put half in the freezer immediately or i eat them all

Basic Recipe

2 8-oz. pks. cream cheese
1/2 cup sweetener (granular Splenda, OR 1/4 cup Splenda, 1/4 cup sugar-free Da Vinci syrup OR equivalent)
2 eggs
1/2 tsp. Vanilla extract (or lemon, or almond, etc.)
Optional: Cinnamon, pumpkin pie spice, or other low-carb topping, to taste. (Reserve.)

Soften cream cheese about 40 seconds in microwave. (Be sure there are no cold lumps.) Add other basic ingredients. Beat with mixer or whisk till smooth. (Do not overbeat.) Pour into non-stick muffin pan, and/or use non-stick spray. (If using cupcake/muffin papers, spray papers with non-stick spray.) Sprinkle with cinnamon or choice of topping, if desired.

Bake at 350 for 18-20 min. if using standard muffin tin. (Reduce to 10 - 12 minutes if using mini-muffin tin.) Will not brown. Should be mostly set up, but somewhat soft in middle

To reduce sinking centers, bake only 18 minutes. Cool in oven with oven door open for 1/2 - 1 hour, then cover and cool on counter for 1/2 - 1 hour, then refrigerate. (Can use water bath; place shallow pan of water on lower shelf while preheating oven.)

Taste best chilled. Keeps well in refrigerator. Can be frozen.

(Note: can be nuked for approx 2 min if made in a silicone pan.)

Full Basic Recipe as written, with Splenda:
43 carbs, 2398 calories, 210 fat grams, 96 protein grams.
If making regular-sized muffin cups, each one has: 3.6 carbs, 200 calories, 17.5 fat grams, and 8 protein grams.
If using half Splenda, half zero-carb liquid sweetener: 31 carbs, 2374 calories, 17.5 fat grams, and 8 protein grams, so 1 (of 12) has: 2.6 carbs, 200 calories, 17.5 fat grams, and 8 protein grams.

Variations: (NOTE: Adjust carb counts accordingly!)

Use 1/3 cup - 1/2 cup da Vinci’s syrup of choice; omit Splenda and maybe extract.

Add vanilla protein powder for more protein, or to thicken if using all liquid sweetener.

Reduce egg to only 1 egg.

Add 1/4 cup sour cream to basic recipe.

Add nuts or coconut, or cocoa powder, or peanut butter.

Add crust:
Peanut Butter Cookie Crust:
1 c Splenda
1 c peanut butter
1 egg

Mix. Press into muffin cups. Bake 350 for 10 min. Add cream cheese mixture and bake as usual.

Nut Crust:
6 Tablespoons almond meal
6 Tablespoons chopped Nuts ( almonds, pecans, walnuts, etc.)
1 Tablespoon butter -- melted
Combine almond meal, chopped nuts and butter, toss thoroughly and divide into muffin cups. Tamp nuts down firmly, into bottoms of muffin cups. Bake for 8 minutes; remove from oven to cool slightly while preparing filling.

Brownie Crust:
Use low-carb brownie mix. Place some in each muffin cup, then top with cream cheese mixture. Bake as per brownie directions.

After baking, top with:
Low-carb sugar-free fruit topping
Low-carb sugar-free preserves

Chocolate Ganache:
1/2 cup (4 ounces) semisweet chocolate chips
1/4 cup heavy cream
Put the chocolate chips and cream into a microwave safe bowl. Microwave on high for 1 minute. Remove the bowl and stir with a whisk or fork until well mixed. Use immediately.

Chocolate (or other) Frosting:
Blend 1/4 packet sugar free chocolate pudding with 1 cup heavy whipping cream and 1/8 cup of granular Splenda. Whip until very thick. (Can use other flavors of sugar-free pudding.)

Lemon Whipped Cream:
Add about one-fourth tub of Crystal Light Lemonade drink mix to cup of whipping cream before whipping.

Make them savory instead of sweet:
Omit sweetener and extract. Add herbs, spices, grated cheese, minced onion and/or other vegetables, cooked and crumbled bacon, etc. to your liking. Or, add a tub of TGIFriday’s Spinach/Artichoke Dip.

Linda Sue's panna cotta is good too

1 envelope unflavored gelatin *
2 cups heavy cream
1/3 cup granulated Splenda or equivalent liquid Splenda
1/2 teaspoon almond extract or 1 teaspoon vanilla

Spray six 6-ounce custard dishes with non-stick spray. In a small bowl, sprinkle the gelatin over 3 tablespoons cold water; let stand 5 minutes to soften. Bring the cream, 1/2 cup water, Splenda and extract to a boil on medium heat (I used the microwave on HIGH for about 6 minutes or so, watching closely). Remove from the heat; add the gelatin mixture; stir until the gelatin is completely melted. Pour into custard cups. Cover the surface with plastic wrap to prevent skin from forming, if desired. Chill at least 3 hours.

Makes 6 servings
Do not freeze
