Chewie, I feel for your son. You would not believe how many times I have done that to my ankles. It hurts!!!! kcmama, your Boston roast sounds yummy. I hope you find your recipe soon!! Melinda....Guess what! I just stole the coffee that you stole from kcmama!!!!LOL Lony....do you just mix a little powdered pudding mix in with the cr. cheese? I used to do that using diet cocoa mix and also added a little peanut butter and splenda. I never thought of using the pudding. I'll have to try that. Thanks! |

Sue.. I am in yuor office right now..!! I hear a loud buzzing in my living room.. like a fly buzz but more louder like a bee buzz.. so I ran in here like a big baby cause I don't want to know what it is.. at first I thought it was someone next door using a lawn mower...
Chewie.. I am stretching my leftovers for them tonight..I am making for Sonny, Korean rice and some boneless barbecue chicken nuggets or whatever from Tysons.. the Korean rice is what I made on Sunday...and so that's what my son is having and the rest I am going to pack from Sunday for hub's dinner tonight.... |

Hi gang.
![]() Home from work. Had to stop by the dentist for an 8am appoint to get my crown put on. That is the easy part, except the cement tastes horrible. The crown prep is the worst. It's very cold here. 27 degrees. Not much precipitation...just the dew is all frozen on everything so it looks really pretty. Lony would probably call it short sleeve weather. It's supposed to warm up in a few days and start raining again. I'm glad I don't have to do any cooking or chores today. I can just goof off until it's time for bed. |

It's 9 here and snowing like crazy. They weren't calling for snow until Thrusday. The other lady in my office keeps turning the heat down. It is 68 on my desk. I have on sweat pants, heavy socks, and 3 layers on top. I need gloves, but have several reports I need to type on Excel, so the gloves won't happen.

Sue.. I came out here only cause I had to pack hub's lunch and make a sandwich for my son for tomorrow and make my son's lunch.. I felt like a Ninja prowling around.. knock wood I don't hear it.. but I am not crazy I heard it loud and clear...!! I am such a big fat baby..

Wow, sure has been quiet around here today. Where's Lony? I know Melinda is hiding from the bee. Linda's had surgery, right? Did Deb take Ken to the V.A.?
I came home and had some chicken for lunch--again didn't sit right although at least I didn't throw up. I ended up taking a nap and slept really hard for 3 hours. Acckkk I hope I can sleep tonight. DS18 wants to do strict low carb. That's going to be hard. Protein is so expensive and there are no choices at his college for lunch. He doens't eat at the dorm cafs but at the pay food court called the "union." Anyone have any advice? I do have lc wraps so at least that's pretty easy----quesadillas and wraps.

Ingredients 4 Boneless skinless chicken breasts 2 Tablespoons Real bacon bits 1 Teaspoon Minced garlic 1 Package Ranch dressing mix 1 Can Cream of chicken soup 1 Cup Sour cream Cooked egg noodles Directions 1. Step One Combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well. 2. Step Two Pour over chicken in the slow cooker. 3. Step Three Cook on high 3-4 hours. 4. Step Four I then shred the chicken and put back in the pot and then add the egg noodles; mix together. |

Chewie...I bet Melinda can come up with some good LC ideas for lunches. I know her hubs used to do LC and take his lunch. It will be hard for your DS living in the dorm and doing LC. It's a mind set so if he sticks with it he can do it. Of course there is the old stand by of tuna! Do they have a micro wave? You can get the pre cooked bacon that you just warm up.

Chewie.. my hubs is a diabetic #2... but even with that.. he ate tons of fruit.. and I packed him meat roll ups.. I packed him salads, veggies.. alot of people swear by hard boiled eggs...but here is a list I kept from a thread here.. and unfortunately I can't post the just the thingy cause I lost the bar....so I cut and pasted the entire thing...sorry it's so long... I copied this from this board quite a while ago...although the first part might not be all things you can do, I'll leave it in as it might help others with lunches as well. The second and third sections are all "brown bag-able". I make my husband's lunch every morning and put it in a large cooler with two blue ice pieces (he too works from his vehicle so it sits in the warm car all day. During the summer I add a third blue ice.) I take a lunch for myself and my girls when we'll be gone on errands at lunchtime. 1) Chicken thighs. I bake a whole pile of them every weekend and then just nuke a couple for lunch or eat them cold.<BR> 2) Ground lamb patties. I don't add anything to the lamb. Just bake it at 350 degrees for about 30-45 minutes or until it's done. Yum! 3) A BLT (with very little "T" - LOL!) wrapped up in one of Rani's low carb crepes. Works for ANY sandwich filling. 4) Cream cheese and thinly sliced roast beef on a WASA Fiber Rye cracker. 5) Anything left over from dinner the night before. 6) Chicken "pizza." Mix bite-sized pieces of cooked chicken, shredded mozzarella, quartered pepperoni, and a little pizza sauce in a bowl and nuke it until it's hot and bubbly. 7) Any LC soup. LC chili and clam chowder always hit the spot for me. 8) Scrambled eggs with steamed asparagus on the side. I always feel very "la-dee-da" when I fix this. 9) Scrambled eggs with sauteed hot dogs added. Not fancy, but yummy. 10) Reheated quiche of any kind, but spinach quiche is my favorite. 11) Lettuce wraps. Use large romaine lettuce leaves to wrap up your favorite sandwich fixings in. 12) Small steaks (beef) or shoulder steaks (veal or lamb) broiled up fresh. 13) Salad with sliced or shredded beef, pork, or chicken added. I particularly like chicken breasts that have been marinated in Italian salad dressing, broiled, and then sliced into bite-sized strips. I make up a whole bunch at once and then freeze them in Zip Lock bags in individual portions. 14) Cucumber bull's eyes. Use an apple corer to hollow out a cucumber. (It's easier of you slice the cucumber in half first so you don't have to dig so deeply. Stuff for the car (or packed lunches): 1) Always have bottled water. Sipping on it is great for keeping the sleepies away. 2) I portion out nuts in 1/4-cup servings in those snack- size Zip Lock bags and always have a few bags in the car. 3) Ham crisps or pepperoni crisps. I nuke smoked ham (gotta be smoked - boiled doesn't work) or pepperoni slices in paper towels in the microwave until they're crisp and put them in a zip lock bag. 4) I also nuke a whole pound of bacon at a time and package it in aluminum foil, 4 strips to the package. Easy to grab, and since I sort of like it cold, too, easy to eat in the car. 5) Protein bars. Not the best choice, but I always have a couple in the glove compartment for emergencies. You can also bring your own home made ones. 6) Deviled eggs. I put them in those new Glad plastic containers. If you smoosh the two halves back together after you've filled them with the yolk mixture, they travel pretty well. 7) Jerky, store bought or homemade. I like homemade better because I can control the amount of salt. All the commercial brands are too salty for me. 8) Baked chicken legs (for the car) or thighs (for the car or work) or broiled, boneless chicken breasts. 9) Plain hard-boiled eggs. 10) Premade tuna with mayo and a plastic fork or spoon or some WASA crackers to pile it on. 11) Lettuce wraps. Take some nice big lettuce leaves, spread them lightly with mayo, put some sliced deli meat on top, and roll them up. Voila! Lettucewiches! 12) Slices of leftover steak, meatloaf, pork roast, etc., in zip lock bags. 13) Low carb muffins. 14) Any low carb breakfast casserole baked in muffin cups or cut up into individual serving sizes and popped in a Zip Lock bag. 15) Slices of cheese. 16) Cooked and peeled shrimp sprinkled with a little lemon juice and salt. 17) Low carb cookies packed 3 or 4 to a Zip Lock bag. 18) Home made yogurt in a cup with a lid. Don't forget a plastic spoon! 19) Chipped beef spread, WASA crackers, and a plastic knife to spread it with. (Cream cheese, packed chipped beef like Buddig's, shredded, green onions, and a little Worcestershire sauce all mixed together.) 20) Cut up low carb veggies and your favorite dip. Put the dip in an old margarine tub. 21) Low carb cheesecake put in small plastic containers instead of made as a whole "pie." 22) Rumaki packaged 3-4 to a Zip Lock bag. 23) Some of Rani's low carb cheese straws in a Zip Lock bag. 24) Cheese crisps. 25) Sliced leftover quiche (only if you like it cold). 26) Celery stuffed with cream cheese or sugar free peanut butter. 27) Those pre-packaged sugar free Jell-O cups. 28) Chips Chips another low carb chip, pork rinds, psyllie snacks, Just The Cheese crisps and some dip. 29) Turkey (or other deli meat), chopped tomatoes, and cooked crumbled bacon rolled up on mayonnaise-smeared Romaine lettuce leaves. 30) Sugar free gum. 31) Deli ham, roast beef, or turkey rolled up with slices of cheese. 32) A salad in a plastic container. Put anything you like on it, but be sure to include meat! Bring a bottle of your favorite salad dressing. 33) Any LC soup in a thermos. LC chili and clam chowder always hit the spot for me. 34) Cucumber bull's eyes. Use an apple corer to hollow out a cucumber and fill it with your favorite cheese ball recipe. Wrap and refrigerate and then slice. (It's easier of you slice the cucumber in half first so you don't have to dig so deeply. 35) Any cold LC appetizer. Rani's 30 Ideas For LC Brownbaggers: 1. BLT ROLLED UP INSIDE A SLICE OF TURKEY BREAST 7. MEATBALLS (COLD) 8. COLD ROAST CHICKEN DRUMSTICKS OR WINGS 9. SLICED ROAST BEEF WRAPPED AROUND STRING CHEESE STICKS 10. BEEF JERKY, SLIM JIMS, OTHER CURED DRIED MEAT PRODUCTS (I MAKE MY OWN JERKY!) 11. SUGAR FREE JELLO (BUY IN 6-PACKS IN THE DAIRY SECTION OR MAKE YOURSELF) 12. CHEESE, CUT IN CUBES 13. CELERY STICKS, BROCCOLI AND CAULIFLOWER FLORETS, WITH DIP 14. SUGAR-FREE GUMMI WORMS 15. WASA CRACKERS SPREAD WITH SOFT CHEESES 16. WASA CRACKER SPREAD WITH CHEESE AND TOPPED WITH PEPPERONI SLICES (MAKE YOUR OWN PIZZA LUNCHABLES!) 17. PEPPERONI SPREAD WITH CREAM CHEESE AND ROLLED UP 18.DITTO TURKEY OR ROAST BEEF SLICES <BR> 19. Good morning. DS14 is back to school. That brace is amazing. He is much better just from having stayed off of the ankle yesterday.
So now besides the pay cut and giving me lots of extra work, they are now restricting my hours. I guess they just are forcing me out. I have always had flexible hours---whatever worked for me. Now I was told yesterday that I need to work 8-12 because it's too confusing for people. What people? No one even cares or comes in. I can not wait to get out of here. GRRRRRRRRR I've been praying about this and about not disliking the pastor and it's not helping. I wish I could just quit but I can't. Even with the pay cut, we need the money. Plus the new taxes cut into dh's pay so much, it's going to hurt even more. Sometimes life is just plain darn hard. |

I hear you Melinda. I, too, shop discounts and as cheaply as possible. The only substantial cut we can make is our directv. We pay way too much for that--and maybe our internet which costs $50 a month but the kids use netflix and I don't know if we could go cheaper/slower. Sigh. Hard, hard, hard.

Howdy gang! Home from work and now my 3 days off can start!
I hear you gals, on how money is tight. I was pretty down in the dumps when a new prescription came in the mail and my payment is now double! And that was only 1 script. I have about 5 or 6 and DH has 3. My company really boned us on our insurance for 2013. Everyone is complaining about it....we pay more from our paychecks for it and we pay more on the back-end too. But what can you do? And also they are taking more taxes....but can't blame my company on that one. I got a modest raise about a month ago...like 0.50/hr. So that money is like....gone plus some. So yea, it's depressing. |

Hello everyone!
The morning sure has gone by quickly. It is another gorgeous and sunny day here. Had the usual morning routine--fixing lunches and breakfast, kitchen cleanup, making beds, laundry, etc. Also decided to clean my bathroom when I noticed dust on the vanity. Ooops! How is it that I have so much dust in my house? Perhaps I should consider having the ducts cleaned? I have been online reading blogs and forums and forcing myself to get up every little bit to do some work. I also went through a stack of mail on my bedside chair and some spirals I had been using for note taking for myself. So all of that has gone to shredder or recycle bin.Melinda, the white chocolate chex mix is all gone. I think I gained a couple of pounds. Be forewarned, it is really addicting!!!! I took a color personality test online. I couldn't believe the colors it came up with for me. But, there are two on there that I am seriously considering using! One to paint my cabinets and one for the walls, so, some good came out of that I guess!
