Time to weigh in and start my cooking... fruit salad is up first!!!! and then marinated salad and then some ham salad....

Good Morning! I didn't get up until 10:00! I woke up though around 3:30 and couldn't really fall back to sleep so I got up a bit before 5:00 and brought my pillow downstairs with me and laid down on the sofa. I did manage to fall back to sleep so got some extra zzzzzs. I am going to have to cook some boneless, skinless chicken breasts I have in the fridge for dinner tonight. Got to figure out what recipe I may be in the mood for!

Sue, the potatoes I used were not the usual baking potato. These were Green Giant Golden Potatoes. They are softer and creamier inside (and yellowish). Says they can be baked, boiled, roasted, etc. So I baked them. They were really good with butter, salt, pepper, and lots of dill!!!!! Very much like a Yukon Gold. Not as dry and fluffy as typical Russets I guess.

Mona, where are you? We are worried about you. You tell us you are feeling the effects of high BP and then we don't hear from you again. Praying you are feeling ok but just busy at work.

Chickens are in the oven. I made the kids a frittata cause dh is cranky and decided not to make it. DS1 came down and asked about it cause he was looking forward to it so I ended up making one. It came out great and we all had some.

I also had some eggplant slices left that stupid dog didn't eat so I took some creamed spinach, mozzarella and made stuffed eggplant stacks. I will put some marinara sauce on top and more mozz right before I bake them. I bet they'll be good.

Next I have to make bread dough for crusty bread. Normally I make it and put in the frig outside but I need it for today so I found a 5 hour recipe. I hope it's good. First time I'm making it and dh is a real bread critic. Luckily my boys and parents will eat any bread.

I still need to make dessert and stuff the mushrooms. We ended up having leftover last night so I have a giant box of baby bella mushrooms to stuff for the appetizer.

Chewie..I am eying a bag of Sour cream and ranch Doritos I bought my son...and I also bought a can of chili.. I guess it's popular in Texas and it has come here...I thought that's what the commercial said.. thinking about making some nachos for my kid...

Bread dough is done. Apple cake is in the oven, dishes are all done, 2nd load of laundry is in the dryer. Phew. I'm starting to get tired and I still have to clean and do my dreadmill.

Melinda---this is from a blog I read, it was one of her favorite recipes for 2011. I know you like to make salads.

Mozzarella, Tomato and Avocado Salad
1 container cherry tomatoes, cut in half
1 carton fresh mozzarella cheese pearls, drained
1 avocado, peeled and diced
1/3 cup basil, julienned
2 tablespoons fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
salt and pepper
baguette-optional
1) In a large bowl, combine the tomatoes, mozzarella, basil and parsley, Set aside.
2) In a small bowl, whisk the lemon juice, oil, salt and pepper. Pour over tomato
mixture. Toss to coat. Cover and refrigerate for 1 hour before serving.
3) Just before serving the salad, stir in the chopped avocados. Serve salad with
slotted spoon and toasty bread.

I have not done a whole heck of a lot today. I have done the kitchen, gone through the mail, took oldest to work, and just finished making a Crescent Roll Pizza Ring. Hope it tastes good. I am letting it cool for 5 minutes. I need to go put in a load of laundry and plan to do some knitting on the ole infinity/mobius scarf.

I taught my adult Sunday School class, played the organ for church, made Deb's BBQ crescents for lunch and need to get started on balancing check book for my aunt and paying bills. I also need to do a lot of filing which I hate. I bought a new phone last night and need to transfer all contacts to new phone. I hope I am smart enough to operate it. My son and family are at Disney World so I want to check out the phone by sending my granddaughter a text.

Melinda, I just made a white chocolate chex snack mix. This was a hit over the holidays here so I made up another batch and thought of you since you are on a white chocolate kick!
