Melinda I just bought an oscillating space heater for the bedroom. It looks just like a fan except it blows hot air. It was about $50 but they had cheaper ones too. It really warms up the room! It must be really dire if you are wearing pants. Try to stay warm.

I've had a bad headache for most of the day. I took a nap. Feels better but I can still feel it lurking in my head, waiting to come out again. I'm thawing some chicken breasts to make us a chicken sandwich. DH is tired of nachos and hot dogs.

I will definitely look at Walfarts when I go tomorrow morning.. knowing my practical mind though I probably would be checking out a fan for the summer....

I have a feeling this meal is going to be making a lot of appearances in my house from now on. Not only is it delicious, it takes absolutely no time to put together, and tastes like real take-out sesame chicken. It can also be served in a million different ways – as a rice bowl with veggies, over Asian inspired greens as a salad, as an Asian burrito with Sriracha as the hot sauce, with the chicken cut into longer strips and served as chicken fingers – you get the idea. Not only that, I am pretty sure the base of this recipe could be used with lots of different flavor combinations. For example – what if we added dijon mustard, rosemary, garlic, and lemon juice to the chicken stock?

Points: 5 Weight Watchers Points plus
Servings: 5
Serving Size: 1/5 recipe (about 6 oz chicken)
Nutritional Info: 180.1 calories, 6.5g of fat, 2.1g carbohydrates, .4g dietary fiber, 28.2g of protein

Ingredients

1.5 pounds boneless, skinless chicken breasts, cut into pieces
1/4 tsp salt
1/4 tsp pepper
1 tbsp whole wheat flour flour
1 tbsp toasted sesame oil
.5 tablespoon olive oil
2 garlic cloves, minced
1 tbsp low-sodium soy sauce
1 tbsp brown sugar
1 tbsp white vinegar
1/2 cup low-sodium chicken stock
1 tbsp sesame seeds
1 tbsp black sesame seeds

Instructions

Preheat the oven to 400 degrees.
In a small bowl, whisk the chicken stock, brown sugar, sesame oil, garlic, soy sauce, and white vinegar together. Set aside.
In another bowl, toss the chicken with salt, pepper, and flour.
In a large pan (make sure it’s oven safe) heat the olive oil over medium heat. Once hot, add the chicken in one layer. Cook for three minutes on one side until seared and then flip and cook for another three minutes on the other side.
Turn off the heat and pour the chicken stock mixture over the chicken, stirring to combine.
Place the entire pan in the oven and cook for 20 minutes. Then toss the chicken with sesame seeds and serve.


Mona's Notes: I've never purchased black sesame seeds, but I know the white ones can get kinda pricey. If you have a store that sells spices in a bulk bin that is the way to go! You can get a little baggie of sesame seeds for like 30 cents or something. If you buy in a jar from the spice isle it can be mucho dinero!

My husband just said he really likes the chicken I used because it's nice and juicy. I told him they were the B/S breasts that I pan fried instead of whole chicken breasts with skin on that I roast in the oven. He says "you never have to make those dry breasts again". hahah. I probably will at some point because I like crispy chicken skin. But yea, the meat near the bone can get sort of plain and dry tasting. I like to turn that meat into chicken salad. Which he won't eat b/c he doesn't eat mayo. More for me.

I did not make the recipe yet. It just looked really good, and I have 2 bags of B/S chicken breasts to use. I would guess the flour just helps thicken the sauce? I would probably take it or leave it. And I wouldn't use whole wheat flour unless I had some on hand.

So I went to Aldis and bank. Came ome, did laundry, cleaned te kitcen and ad lunc. SOrry te letter after "g" is not working again. GRRRR

Chewie, have you tried turning your keyboard over and gently tapping it on your desk? You would be suprised at the junk that comes out. I get a lot of fingernail chips and they sometimes intefere with a key.

So I am so annoyed.. so my son's report card was just posted OMG..wonder how he is going to explain these grades.. they may be good for other people but I told him you need to work double hard, because scholarships and stuff is less and less, which means more competition.....anyway he ended up getting 3 A's and 4 B's and the only silver lining in this cloud is that 3 of those B's are AP classes....however I think it brought down my son's Cumulative GPA, well he went from 3.86 to 3.85.. and he wanted to go these colleges and applied where the ACT SCORE NEEDED TO BE HIGHER to begin with.. except for Syracuse!! Well that's his life...not mine.. told him to work harder...not that he didn't but I told him to really give it 300 percent...

well I actually just called him and he said his Cumulative which is guess is the one that is important.. hasn't changed..it's still 3.86...oh whatever...the problem is I got an email from the counselor saying that I have to spend another 21 dollars to send these transcripts of the fall grades to the 7 schools he applied to....and I told him to really go in and have a fantastic semester..grrrrrr.....

And there you see Melinda why some of us wear sweat pants, velour track pants, corduroy pants, fleece/flannel lined jeans, Cuddleduds, etc. My legs do not like 60 degree weather and below so I wear pants! I abandon the jeans though for the warmer clothing styles mentioned above because when it is cold denim gets really cold! When you walk/move and cold denim brushes against your leg BRRRRRRRRR!

When I was a young, sexy (I say that totally in jest, as I do not believe anyone has ever thought of me and sexy together!! I don't have the sexy going on like you!!), skinny thing I loved to wear those thick tights with dresses/tunics.
